Meal Prep for the Week of 8.18.2019

In order to beat the heat and 8000% humidity, I met up with friends to run at 6:30 on Saturday morning. It was still stinking hot at that hour. We followed Leg 4 of the Blue Ridge Marathon Relay as a training run. It’s a route we’ll repeat again and again between now and April. We had a great run in spite of the heat. In a few months, I’ll miss this weather.

We had friends over for dinner that night and had a blast playing Telestrations with them afterward. The rest of the weekend was fairly routine.

Now on to this week’s menu:

Breakfast:
Almond Flour Pancakes – Make a batch on the weekend, freeze individually, and pull out just what you need each morning.

Chicken Pineapple Curry – This dish deserves a post of its own! It’s a favorite dish when we’re craving comfort food. As a bonus for Mark, while I’m doing keto, he gets my pineapple.

Cucumber and Strawberry Salad with Poppyseed Dressing – A new favorite! I thought the dressing was slightly too sour by itself, but when tossed with the salad, it’s perfect.

Keto Meatballs and Sauce with Zoodles – This one is so tasty! The cream in the sauce cuts the acidity of the tomatoes. I’m loving the wide zoodles, To make them, just slice a little off the side of the zucchini so that it lays flat on the cutting board. Use a vegetable peeler to slice thin, wide noodles. I saute them in coconut oil for a few minutes, just until tender. Very few things in life are worse than a mushy zoodle.

Lemony Avocado and Tomato Tuna Salad – Hello, old friend! We usually fix this with cucumber instead of avocado because Mark hasn’t yet embraced that little wonder berry.

Basil Tomato Cauliflower Rice Salad – I first made this salad 22 years ago, after attending the Southern Living Cooking School. It became my summer potluck go-to. I recently adapted it for cauliflower rice instead of the original Minute rice. You can certainly prepare it using rice; we like brown rice because it holds up well to the dressing even if it’s prepared a day ahead of serving.

Basil Tomato Cauliflower Rice Salad
Adapted from Southern Living Cooking School – Fall 1997
To cool cauliflower rice quickly, spread on a jelly roll pan and place in freezer for 10 minutes.
2 T. coconut oil (or ghee)
2 (12 oz.) bags frozen cauliflower rice
6 plum tomatoes, seeded and diced – bonus points for using juliets from Pa Kettle’s garden
1/2 cup chopped red onion
1/2 cup sliced fresh basil – I used purple basil
1/3 cup favorite Italian dressing – My recipe below
shaved Parmesan cheese or crumbled feta cheese
In a large skillet on the stove top, saute the cauliflower rice in coconut oil just until tender. Set aside to cool.
Toss the cooled cauliflower rice with tomato, onion, basil and dressing. Top with cheese.

Homemade Italian Dressing
3/4 c. olive oil – Should I tell you to use “good” olive oil like Ina does?
Nah. Use whatever you have/like.
1/4 c. red wine vinegar
1 T. dried Italian seasoning
1/2 t. garlic powder
1 T. Swerve or other sweetener of choice
1 dash of paprika – for color
1 smidgen of nutmeg – because I put it in everrrrryyyythang
Salt and pepper to taste
Whisk all ingredients together to emulsify. Shake before serving.

Snacks:
Mine – Same ol’, same ol’…celery and peanut butter, gouda snacking cheese. Maybe I’ll make pimento cheese next week?
Mark’s – Tiny but Mighty Popcorn, Watermelon, Bananas

Treat: Strawberries and Fresh Whipped Cream

True to form, I started a painting project yesterday and well, I’m in a little over my head. This one has been in the works for awhile and I’m starting to see that it will either be a glorious success or a spectacular failure. There is no in-between, I’m afraid. I’ll let you know either way. Here’s a sneak preview:

Cinnamon Roll Noatmeal – This variation is so good! I added 3/4 tsp. of cinnamon and a smidgen of nutmeg (’cause it’s my favorite spice and I add it to nearly everything!) to the dry noatmeal mix from here…

This was just too sweet for our tastes as written. I didn’t bother to make the whipped cream for the two of us because, dang, that’s a lot of cream! I’m keeping this in the freezer, because it stays a little soft in the fridge. If you like strawberry cheesecake, you’ll like this pie. This would make a nice dessert for guests, and I bet they’d never guess it is keto!

Happiness is cooking with herbs that you planted, tended and harvested! I’m not sure why the idea of cauliflower rice tabbouleh never occurred to me before, but I’m glad to finally try it! Pa Kettle’s garden provided the cukes and Juliet tomatoes, and the herbs are fresh from our garden.

Cousin Ruby’s Dilled Tuna Stuffed Tomatoes

Cauliflower Rice Tabbouleh – Keto twist on a classic, summer dish! I modified Ina’s recipe to exclude the bulghur, water and greatly reduce the salt. This recipe is from the Barefoot Contessa Parties cookbook, and IMHO 3 1/2 teaspoons of salt is way too much! (Even when I made this with bulghur, I never used that much salt.) I used about 1 teaspoon of salt for this salad. Adjust to taste. Don’t skimp on the parsley and mint. In this dish, more is indeed more!

Step One of the recipe becomes: Rice a small head of cauliflower in a food processor, and add the raw cauliflower to a large bowl. Add the lemon juice, olive oil, salt and pepper.
Step Two: Add the scallions, mint, parsley, cucumber, tomatoes; mix well. Season, to taste, and serve or cover and refrigerate. The flavor will improve if the tabbouleh sits for a few hours.

When I say that I had a busy weekend, what I mean by that is that I met some friends to run Saturday morning, and then spent the rest of the day with my nose in a book! I haven’t done that in forever, but it was a much needed break. A friend called us late Saturday evening and asked if we wanted to go pick her friend’s garden, so we said “Sure!” I’ve never picked veggies at twilight before, but it was a fun outing and great to spend time with her. Meal Prep for Week of 7.22.2019

This weekend has been all about catching up on home and garden tasks. I’m behind on weeding the herb garden, so it’s gotten a little out of hand. Even the cilantro got tired of waiting on me to clip it, and bolted instead. Oops!

While I was busy processing an enormous batch of basil, Mr. ArthurizedHome sat down and developed this week’s menu. I think he did a nice job of planning meals around what is fresh in the garden, and on sale at the grocery store. Let’s dig in!

Breakfast:
Noatmeal with Strawberries – What could be easier than heating up water and stirring this mix into it? One day we’ll tire of it, but today is not that day!

Garden Salad with Grilled Chicken – No recipe, just throw whatever is fresh at it! We’ll have Pioneer Woman’s dill dressing on our salads.

Dinner:

Summer Squash Oregano – This old Southern Living magazine recipe is a favorite. It’s so old that I can’t find the recipe online! I’ve searched. We’ve got oregano growing like crazy this year, and fresh summer squash from Pa Kettle’s garden.

Summer Squash Oregano
3 T. butter
1 onion, minced
1 garlic clove, minced
1 small, green bell pepper, chopped
1 T. chopped fresh oregano
3/4 lb. yellow squash, sliced
3/4 lb. zucchini, sliced
4 tomatoes, chopped
1/2 tsp. salt
1 tsp. pepper
1 cup grated Parmesan cheese

Melt butter in a large skillet; add onion, garlic and bell pepper and saute until tender. Stir in oregano, yellow squash and zucchini. Cover, and cook, stirring occasionally for 15 minutes. Stir in tomato, salt and pepper; cook, uncovered, until squash is tender. Spoon into a serving dish, sprinkle with cheese.

Southwestern Squash Casserole – Yum! To make this gluten free and lower in carbs, I’m substituting gluten-free baking mix, coconut flour, arrowroot powder for the wheat flour.

Tomato and Cheese Pie – We didn’t get to this one last week! We had too many leftovers and other produce we were trying to use before it spoiled, so this one is back on the menu.

Tomato and Cheese Pie
adapted from The Supermarket Diet Cookbook
Prep: 20 Minutes
Bake: 30 Minutes
Makes: 4 Servings
1 container (15 ounces) ricotta cheese 
4 large eggs
1/4 cup freshly grated Parmesan cheese
1/2 tsp. salt, plus additional for sprinkling
1/8 tsp. coarsely ground black pepper, plus additional for sprinkling
1/4 cup milk
1 T. cornstarch – I use arrowroot powder 
1 cup packed fresh basil leaves, chopped
1 pound ripe tomatoes (three medium), thinly sliced

1) Preheat oven to 375°F. In a large bowl, with whisk or fork, beat ricotta, eggs, Parmesan, salt and pepper until blended. 
2) In cup, with fork, stir milk and cornstarch (arrowroot) until blended; whisk into cheese mixture. Stir in basil. Pour mixture into 9 inch glass or ceramic pie plate. Arrange tomatoes on top, overlapping if necessary. Sprinkle tomatoes with salt and pepper. 
3) Bake pie until lightly browned around edge and center is puffed, 30 to 35 minutes.

Mozzarella Parmesan Chicken Casserole – New Recipe!

Garlic Butter Sauteed Spinach with Salmon – This spinach is so bright and flavorful. Even better, you can have dinner on the table in 20 minutes, start to finish. Salt and pepper a salmon filet, squeeze some lemon juice over and pop it in the oven skin side down (450° for 15 minutes or until it flakes easily) and saute the spinach while it bakes. So good!

Snacks:
Keto cucumber slices, celery sticks or boiled eggs for me. I know I’m making this sound like prison rations, but I’m generally not hungry between meals on keto.

Hubby will nosh on his glorious, carb-laden watermelon, cherries, peaches and popcorn.

Treat:
Coconut Milk Panna Cotta – This recipe is tried and true, but I’ve never made it without the honey. I’m going to give it a whirl with Whole Earth sweetener to bring those carbs down.

Happy Monday to you! If you are new to Arthurized Home, you may wonder why I only plan 5 dinners each week. That’s done in order to leave room in the schedule for eating out or having a leftovers night. Throwing away food that’s expired is a huge pet peeve of mine!

The produce is rolling in from Pa Kettle’s and Wanda and Ed’s gardens (thank you!), so we’re eating all the veg this week!

I couldn’t find a green enchilada sauce that did not have canola oil, so I reduced a mild salsa verde on the stove and used that instead. This chicken bakes up moist, tender and delicious!

Mousies! – My grandma referred to these little ham, cream cheese and dill pickle appetizers as “mousies” because they look like little mice when they’re wrapped inside the ham! She certainly wasn’t afraid to be a little wacky; and we loved her for it!

Raspberry Cheesecake Fat Bombs – I’m still loving fresh berries as a treat, but I’m going to keep a batch of these in the freezer. I used one stick of butter, one 8 oz. package of cream cheese, 6 oz. of fresh raspberries and 8 packets of green stuff to make approximately 2.5 batches of this recipe. I refrigerated the mixture until it was firm enough to scoop onto a Silpat using a 1″ cookie scoop. My batch yielded 28 bombs.

Y’all. It’s hot in Virginia.
Like, surface of the sun, hot. Gimmie all the salads, hot. Too hot for cooking, hot. Maybe we should grill a burger or piece of chicken? Keep that heat outside of the house.

Dilled Tuna-Stuffed Tomatoes – New Recipe! My cousin made this delicious tuna salad and shared the recipe with me. Thanks, Ruby! I’ve made it twice three times in the last week. I might be just a little obsessed.

Dilled Tuna-Stuffed Tomatoes
adapted from The Supermarket Diet Cookbook
Prep: 25 minutes
Makes: 4 servings
2 cans (6 ounces each) solid white tuna in water, drained and flaked
5 T. mayonnaise – I like Sir Kensington‘s
2 medium cucumbers, unpeeled, cut into 1/4 inch pieces – or one English cucumber
1/4 cup loosely packed fresh dill, finely chopped
2 T. capers, drained and finely chopped
2 T. fresh lemon juice
1 T. Dijon mustard
1/4 tsp. freshly ground black pepper
4 large, ripe tomatoes (12 ounces each)

1) In medium bowl combine tuna, mayonnaise, cucumbers, dill, capers, lemon juice, mustard and pepper.
2) Cut each tomato, from blossom end, into 6 attached wedges, being careful not to cut all the way through. Spoon one-fourth of tuna mixture into center of each tomato.

Snacks:
I’ve found that I’m not really hungry between meals on keto.

Meal Prep for Week of 6.9.2019

Welcome to another week of clean eating! We’re trying out loads of new recipes this week and we’ve already found a couple of keepers! Noatmeal is a nice change to our usual egg-based breakfasts and fun to come up with new topping combinations. Strawberry/Peanut Butter is my favorite combination so far.

I’ll let the pictures of the Chicken Pot Pie and Philly Cheesesteak Skillet speak for themselves.

Breakfast:

I mixed up double batches in sandwich bags. Because these have flax seed meal in them, they need to be stored in the fridge. When I empty a bag each morning, I fold it up and put it back into the storage bag; that way we’re not using as many plastic bags from week to week.

Meal Prep for Week of 6.2.2019

This past weekend was a blink-and-you-miss-it blur. We did loads of adulting and gardening. Hubby had a 16 mile trail race, and we spent some time catching up with friends we hadn’t seen in awhile.

Last night we watched a couple of deer work their way through, sampling from the delicious buffet that is our side yard. They completely ignored the herb garden, which made us wonder if they had bumped into the new fence and were spooked by it. Time will tell.

Breakfast:

Mason Jar Spinach Salad – New Recipe! I made four of these salads. I substituted stevia sweetener for the sugar in the dressing. Instead of spooning the dressing into the bottom of the jar, I stored each portion in a tiny container.

Cauliflower Pizza – This is as satisfying as “real” pizza; and has become a default when we need some dinner inspiration. I use ground flax seed (from Aldi) instead of the psyllium husk.

Southwestern Squash Casserole – To make this gluten free and lower in carbs, I’m substituting coconut flour for the wheat flour. UPDATE: Do not do this! The coconut flour did not incorporate well and the casserole was gritty as a result. It didn’t affect the flavor, just the texture. I’ll try arrowroot powder next.

Snacks:
I’m finding that I need fewer snacks on keto.
Pimento cheese and celery, cucumber slices, pickles, walnuts, green pepper strips
Beautiful carbs for hubby: Pineapple, grapes, bananas, watermelon, Tiny but Mighty popcorn

Treat:
Fresh Strawberries and Homemade Whipped Cream with Lily’s Chocolate Chips on top – If it ain’t broke, don’t fix it! I sweeten the cream with a packet or two of Whole Earth. This tasty keto treat is a good substitute for my nightly watermelon.

Real Food Meal Prep for Week of 5.26.2019

My husband started creating a grocery list, so I asked him to pull together a menu as well. I think he did a great job of it! He pinned several new recipes to try this week. I found out after he made the menu that he Googled “inexpensive keto meals”! He’s so sweet. I don’t have anything to report about my keto experience except that I avoided the keto flu, and I’m solidly in ketosis.

Breakfast:
Almond Flour Pancakes with Chocolate Chips – I’m adding cocoa powder to some of my batter for a double chocolate variation and sweetening with Whole Earth powder.
