Real Food Menu for Week of 3.22.2021

Hooray for warmer weather and a pretty weekend! The past few days, I was finally able to spend a good bit of time outdoors. I trimmed up the rosemary shrub which was massively overgrown and replaced the fishing line around the herb garden. Pa Kettle told me which seeds I need to plant this week (beets, radishes and lettuces). I’m a little behind the game where the garden is concerned.

Here’s what’s happening in the kitchen:

Mark’s Breakfast:
A few weeks ago, Mark baked a double batch of breakfast cookies and packed the freezer with them. To make these gluten-free, substitute almond flour for the oat or wheat flour. We add a little extra cinnamon to the dry mix. These are great for breakfast on the go.

Mark’s Lunch:
Weeknight Taco Soup – This one just never gets old. We lighten up this recipe by substituting ground turkey for the beef. Another good keeper, this stores well in the fridge for a few days, or in the freezer for several weeks.

Dinners:

Copycat Alice Springs Chicken – New Recipe! Sometimes you want restaurant chicken, but you’re too lazy to put on pants and leave the house. We think this copycat is pretty darn close to Outback’s original. If you’ve got leftover honey mustard sauce, it’s delicious as a dip as well.

Carb Buster Breakfast – We {heart} breakfast for dinner. This savory, satisfying and simple (say that three times fast!) dinner comes together quickly on busy week nights.

Thai Veggie Noodle Salad – This fresh, crunchy salad is a good use for those veggies available this time of year. Don’t save this one for leftovers, it’s best eaten fresh.

Keto Meatballs and Sauce with Zoodles – This one is so tasty! The cream in the sauce cuts the acidity of the tomatoes. To make wide zoodles, slice a little off the side of the zucchini so that it lays flat on the cutting board. Use a vegetable peeler to slice thin, wide noodles. Saute them in coconut oil for a few minutes, just until tender. Very few things in life are worse than a mushy zoodle.

Snack:
Loaded Roasted Garlic Hummus – Greek Style – New Recipe! I used the linked recipe as a starting point and took some help from the grocery store in the form of premade garlic hummus. Top with your favorite toppers, give it a zhush of olive oil and your appetizer is ready!

Real Food Menu for Week of 9.28.2020

This week’s chocolate chip cookie dough dip might be one of my shining moments in real food trickery. You see, Mr. Arthur doesn’t care for chickpeas. Or so he thought. As it turns out, if you whirl them up in the food processor with a few accompaniments and a zhoosh of stevia sweetened chocolate chips, they become his new favorite food group!

Slow Cooker Apple Pie Oatmeal – Few things are more comforting than the flavor combo of apples and cinnamon. If you’re in the ‘Noke and looking for star anise, Fresh Market has it.

Mediterranean Green Lentil Soup – My late mother-in-law was one heck of a cook. Everything that came out of her kitchen was amazing, not the least of which was her lentil soup. This veggie-packed version comes close. We love a warm bowl of this nourishing goodness.

We’re bidding a fond farewell to our nightly slice of watermelon, and welcoming other seasonal offerings. I’m excited to see dragon fruit back on the shelves in the grocery store! It tastes somewhat like a cross between a pear and an apple. Slice it, peel back the magenta skin and eat the white flesh.

No Sugar Chocolate Chip Cookie Dough Dip – This is a favorite recipe and very kid friendly! Take this to your next party, but don’t tell your friends it’s good for them. They’ll think it’s conventional cookie dough dip. Your secret is safe with me!

Real Food Menu for Week of 9.29.2019

Happiness is getting to visit with your Tennessee sister twice in four days. She spent the night Thursday night on her way to Massanutten Resort for the Xtreme Hike for Cystic Fibrosis, and then we met for lunch out by the interstate on her way back home. We met at Angelle’s Diner, and sat outside on the patio in 94° heat listening the roar of tractor-trailer engines off in the distance. We really know how to show our guests a good time! It was too brief a visit, but we’ll take what we can get.

This is shaping up to be a busy week, so we’re sticking with mostly tried and true recipes. Except that keto lava cake. We’ll need to perfect that recipe just a little more.

Breakfast:
Cinnamon Roll Noatmeal – There’s nothing like starting the day with a warm bowl of noatmeal. I double the recipe, add 3/4 tsp. of cinnamon and a smidgen of nutmeg (’cause it’s my favorite!) to the dry noatmeal mix from here…

Keto Meatballs and Sauce – I like to make the meatballs using ground turkey. We’ll serve over zoodles to amp up the veggies. The cream in this tasty sauce cuts some of the acidity of the tomatoes.

Carb-loading Hubby will enjoy bananas, grapes and Tiny but Mighty Popcorn. When Mark was a kid, his family had Friday movie nights and his Mom made popcorn on the stove by shaking the kernels in a covered sauce pan. He makes his popcorn on the stove top just like his Mama did.

Treat:
Keto Lava Cakes – We may or may not have had to bake these several nights last week. For purposes of recipe testing, of course. *ahem* These are topped with fresh raspberries and powdered Swerve. Who says you can’t eat low-carb and enjoy it, too?

Meal Prep for the Week of 8.18.2019

In order to beat the heat and 8000% humidity, I met up with friends to run at 6:30 on Saturday morning. It was still stinking hot at that hour. We followed Leg 4 of the Blue Ridge Marathon Relay as a training run. It’s a route we’ll repeat again and again between now and April. We had a great run in spite of the heat. In a few months, I’ll miss this weather.

We had friends over for dinner that night and had a blast playing Telestrations with them afterward. The rest of the weekend was fairly routine.

Now on to this week’s menu:

Breakfast:
Almond Flour Pancakes – Make a batch on the weekend, freeze individually, and pull out just what you need each morning.

Cucumber and Strawberry Salad with Poppyseed Dressing – A new favorite! I thought the dressing was slightly too sour by itself, but when tossed with the salad, it’s perfect.

Lemony Avocado and Tomato Tuna Salad – Hello, old friend! We usually fix this with cucumber instead of avocado because Mark hasn’t yet embraced that little wonder berry.

Basil Tomato Cauliflower Rice Salad – I first made this salad 22 years ago, after attending the Southern Living Cooking School. It became my summer potluck go-to. I recently adapted it for cauliflower rice instead of the original Minute rice. You can certainly prepare it using rice; we like brown rice because it holds up well to the dressing even if it’s prepared a day ahead of serving.

Basil Tomato Cauliflower Rice Salad
Adapted from Southern Living Cooking School – Fall 1997
To cool cauliflower rice quickly, spread on a jelly roll pan and place in freezer for 10 minutes.
2 T. coconut oil (or ghee)
2 (12 oz.) bags frozen cauliflower rice
6 plum tomatoes, seeded and diced – bonus points for using juliets from Pa Kettle’s garden
1/2 cup chopped red onion
1/2 cup sliced fresh basil – I used purple basil
1/3 cup favorite Italian dressing – My recipe below
shaved Parmesan cheese or crumbled feta cheese
In a large skillet on the stove top, saute the cauliflower rice in coconut oil just until tender. Set aside to cool.
Toss the cooled cauliflower rice with tomato, onion, basil and dressing. Top with cheese.

Homemade Italian Dressing
3/4 c. olive oil – Should I tell you to use “good” olive oil like Ina does?
Nah. Use whatever you have/like.
1/4 c. red wine vinegar
1 T. dried Italian seasoning
1/2 t. garlic powder
1 T. Swerve or other sweetener of choice
1 dash of paprika – for color
1 smidgen of nutmeg – because I put it in everrrrryyyythang
Salt and pepper to taste
Whisk all ingredients together to emulsify. Shake before serving.

Snacks:
Mine – Same ol’, same ol’…celery and peanut butter, gouda snacking cheese. Maybe I’ll make pimento cheese next week?

True to form, I started a painting project yesterday and well, I’m in a little over my head. This one has been in the works for awhile and I’m starting to see that it will either be a glorious success or a spectacular failure. There is no in-between, I’m afraid. I’ll let you know either way. Keto Strawberry Icebox Pie – New Recipe! Honestly, this one was a mixed bag. A delicious, mixed bag that I would make again, but decrease the sweetener by half. This was just too sweet for our tastes as written. I didn’t bother to make the whipped cream for the two of us because, dang, that’s a lot of cream! I’m keeping this in the freezer, because it stays a little soft in the fridge. If you like strawberry cheesecake, you’ll like this pie. This would make a nice dessert for guests, and I bet they’d never guess it is keto!
