Real Food Menu for Week of 6.8.2020

Have you ever upended your entire house for no good reason? We did just that this weekend in a fit of decluttering. We moved furniture around in every room of our home except for the kitchen and bath. It’s well worth it, in the extra space and functionality that we gained, but man, I’m whooped.

Here is this week’s menu:

Breakfast:
Apple Pie Overnight Oats – Mark is loving the breakfast oats. We use Aldi’s unsweetened natural applesauce in this recipe.
https://cleanfoodcrush.com/apple-pie-overnight-oats-jar/

Lunch:
Paleo Broccoli Salad with Bacon – New! Love that this one has *just enough* mayo without being gloppy. The apple cider vinegar adds a little tang to that dressing.
https://cookeatpaleo.com/broccoli-salad-with-bacon/

Dinner:

Chicken Sausage, Kale and Red Potato Soup – Big ol’ bowl of comfort food for a cool evening later in the week.
https://cleanfoodcrush.com/kale-potato-soup/

Baked Garlic Parmesan Salmon
https://healthstartsinthekitchen.com/baked-garlic-parmesan-salmon-primal-low-carb-keto/

Pizza Baked Chicken – Add whatever pizza toppings you like to this dish. Mr. Arthur is a pepperoni guy, so that’s what we make.
https://cleanfoodcrush.com/clean-eating-pizza-baked-chicken/

Cauliflower Rice Tabbouleh – One dish I really miss since going gluten-free is tabbouleh. This recipe scratches that g-free itch. If I’m pressed for time, I use frozen, riced cauliflower. Since we don’t have a microwave, I saute it on the stove top for a few minutes, ’til softened.
https://www.epicurious.com/recipes/food/views/cauliflower-rice-tabbouleh

Snacks: Watermelon, bananas, apples and peanut butter, popcorn.

Treat:
Ripe Strawberries and Freshly Whipped Cream – Sometimes simple is best! A sprinkle of Lily’s chocolate chips doesn’t hurt anything.

Have a fantastic week, everyone!

Meal Prep for the Week of 8.18.2019

In order to beat the heat and 8000% humidity, I met up with friends to run at 6:30 on Saturday morning. It was still stinking hot at that hour. We followed Leg 4 of the Blue Ridge Marathon Relay as a training run. It’s a route we’ll repeat again and again between now and April. We had a great run in spite of the heat. In a few months, I’ll miss this weather.

We had friends over for dinner that night and had a blast playing Telestrations with them afterward. The rest of the weekend was fairly routine.

Now on to this week’s menu:

Breakfast:
Almond Flour Pancakes – Make a batch on the weekend, freeze individually, and pull out just what you need each morning.
https://joyfilledeats.com/almond-flour-pancakes/

Lunch:
Mustard Glazed Baked Chicken Thighs with Green Beans – So simple, but flavorful!
https://unsophisticook.com/baked-chicken-thighs/

Dinner:

Chicken Pineapple Curry – This dish deserves a post of its own! It’s a favorite dish when we’re craving comfort food. As a bonus for Mark, while I’m doing keto, he gets my pineapple.
https://www.5dollardinners.com/chicken-pineapple-curry/

Cucumber and Strawberry Salad with Poppyseed Dressing – A new favorite! I thought the dressing was slightly too sour by itself, but when tossed with the salad, it’s perfect.
https://cleanfoodcrush.com/cucumber-strawberry-salad/

Keto Meatballs and Sauce with Zoodles – This one is so tasty! The cream in the sauce cuts the acidity of the tomatoes. I’m loving the wide zoodles, To make them, just slice a little off the side of the zucchini so that it lays flat on the cutting board. Use a vegetable peeler to slice thin, wide noodles. I saute them in coconut oil for a few minutes, just until tender. Very few things in life are worse than a mushy zoodle.

Lemony Avocado and Tomato Tuna Salad – Hello, old friend! We usually fix this with cucumber instead of avocado because Mark hasn’t yet embraced that little wonder berry.
https://cleanfoodcrush.com/eat-clean-lemony-avocado-tuna-salad/

Basil Tomato Cauliflower Rice Salad – I first made this salad 22 years ago, after attending the Southern Living Cooking School. It became my summer potluck go-to. I recently adapted it for cauliflower rice instead of the original Minute rice. You can certainly prepare it using rice; we like brown rice because it holds up well to the dressing even if it’s prepared a day ahead of serving.

Basil Tomato Cauliflower Rice Salad
Adapted from Southern Living Cooking School – Fall 1997
To cool cauliflower rice quickly, spread on a jelly roll pan and place in freezer for 10 minutes.
2 T. coconut oil (or ghee)
2 (12 oz.) bags frozen cauliflower rice
6 plum tomatoes, seeded and diced – bonus points for using juliets from Pa Kettle’s garden
1/2 cup chopped red onion
1/2 cup sliced fresh basil – I used purple basil
1/3 cup favorite Italian dressing – My recipe below
shaved Parmesan cheese or crumbled feta cheese
In a large skillet on the stove top, saute the cauliflower rice in coconut oil just until tender. Set aside to cool.
Toss the cooled cauliflower rice with tomato, onion, basil and dressing. Top with cheese.

Homemade Italian Dressing
3/4 c. olive oil – Should I tell you to use “good” olive oil like Ina does?
Nah. Use whatever you have/like.
1/4 c. red wine vinegar
1 T. dried Italian seasoning
1/2 t. garlic powder
1 T. Swerve or other sweetener of choice
1 dash of paprika – for color
1 smidgen of nutmeg – because I put it in everrrrryyyythang
Salt and pepper to taste
Whisk all ingredients together to emulsify. Shake before serving.

Snacks:
Mine – Same ol’, same ol’…celery and peanut butter, gouda snacking cheese. Maybe I’ll make pimento cheese next week?
Mark’s – Tiny but Mighty Popcorn, Watermelon, Bananas

Treat: Strawberries and Fresh Whipped Cream

What’s going on in your kitchen this week? Have a great week, everyone!

Meal Prep for Week of 7.7.2019

Y’all. It’s hot in Virginia.
Like, surface of the sun, hot. Gimmie all the salads, hot. Too hot for cooking, hot. Maybe we should grill a burger or piece of chicken? Keep that heat outside of the house.

Breakfast:
Noatmeal – I make two-serving packets and store them in the fridge. Add hot water and whatever toppings you like! Toppings: Strawberries, Walnuts, Unsweetened Coconut, Lily’s Chocolate Chips, Peanut Butter
https://www.healthysweeteats.com/my-favorite-noatmeal-aka-low-carb-oat-free-porridge-the-basic-recipe-and-6-variations/?cn-reloaded=1

Lunch:
Keto Cobb Salad
https://www.ketoconnect.net/keto-salad/
We make Pioneer Woman’s dill dressing and substitute 1 T. Honey for the sugar. This adds a few more carbs than using stevia, but it’s worth it!
https://thepioneerwoman.com/cooking/layered-salad/

Greek Salad – We never tire of this one!
https://www.spendwithpennies.com/greek-salad/

Dinner:

Grilled Burgers on Lettuce Buns – We stopped at Five Guys on the way back from the beach and had their cheeseburger in a lettuce wrap. So good! I’m trying to recreate that at home.

Skinny BLT Avocado Wraps – New Recipe! I meant to sub in cucumber slices because hubby doesn’t care for avocado, but I forgot. Oops. These were delicious. And messy to eat!
https://cleanfoodcrush.com/clean-eating-skinny-blt-avocado-wrap/

Cheeseburger Salad Bowls – Tried and true!
https://cleanfoodcrush.com/cheeseburger-salad-bowls-healthy-recipe/

Strawberry Chicken Salad – New Recipe! Don’t let the garlic in the dressing scare you away; you won’t get dragon breath. My avocado was a little green, and I think the dressing would have been creamier with a ripe avocado. Maybe you can catch your avocado during the fifteen minute window of time between unripe and rotten?!
https://cleanfoodcrush.com/clean-eating-strawberry-chicken-salad/

Dilled Tuna-Stuffed Tomatoes – New Recipe! My cousin made this delicious tuna salad and shared the recipe with me. Thanks, Ruby! I’ve made it twice three times in the last week. I might be just a little obsessed.

Dilled Tuna-Stuffed Tomatoes
adapted from The Supermarket Diet Cookbook
Prep: 25 minutes
Makes: 4 servings
2 cans (6 ounces each) solid white tuna in water, drained and flaked
5 T. mayonnaise – I like Sir Kensington‘s
2 medium cucumbers, unpeeled, cut into 1/4 inch pieces – or one English cucumber
1/4 cup loosely packed fresh dill, finely chopped
2 T. capers, drained and finely chopped
2 T. fresh lemon juice
1 T. Dijon mustard
1/4 tsp. freshly ground black pepper
4 large, ripe tomatoes (12 ounces each)

1) In medium bowl combine tuna, mayonnaise, cucumbers, dill, capers, lemon juice, mustard and pepper.
2) Cut each tomato, from blossom end, into 6 attached wedges, being careful not to cut all the way through. Spoon one-fourth of tuna mixture into center of each tomato.

Snacks:
I’ve found that I’m not really hungry between meals on keto.
See also: too hot to cook.
Delicious carb snacks for hubby: Watermelon, Cherries (Oh my gosh, the cherries are beautiful this year), Tiny But Mighty Popcorn

Treat:
Strawberries and Fresh Whipped Cream

Happy Salad Week! Stay cool, everyone!

Meal Prep for Week of 6.2.2019

This past weekend was a blink-and-you-miss-it blur. We did loads of adulting and gardening. Hubby had a 16 mile trail race, and we spent some time catching up with friends we hadn’t seen in awhile.

Last night we watched a couple of deer work their way through, sampling from the delicious buffet that is our side yard. They completely ignored the herb garden, which made us wonder if they had bumped into the new fence and were spooked by it. Time will tell.

Diving into this week’s menu:

Breakfast:
Cloud Bread – New Recipe! I made two flavors; Parmesan and Everything Bagel. Will serve these with a schmear.
https://www.delish.com/cooking/recipe-ideas/a24749186/cloud-oopsie-bread-recipe/

Lunch:
We’re having a mixture of cold salads for lunch this week.
Mason Jar Spinach Salad – New Recipe! I made four of these salads. I substituted stevia sweetener for the sugar in the dressing. Instead of spooning the dressing into the bottom of the jar, I stored each portion in a tiny container.
https://www.theseasonedmom.com/wprm_print/57058

Zucchini Salad – New Recipe! I’m intrigued by the prospect of a low-carb imitation potato salad. UPDATE: We like this! I added a little extra mustard and three boiled eggs.
https://www.dietdoctor.com/recipes/zucchini-salad

Greek Salad – An old favorite
https://www.spendwithpennies.com/greek-salad/

Greek Salad

Dinner:
Meatloaf, Green Beans and Mashed Cauliflower – New recipe! I substituted almond flour for the oatmeal in the meatloaf, and used prepared mashed cauliflower.
https://cleanfoodcrush.com/meatloaf-dinner/

Keto Western Omelettes – New Recipe! We love breakfast for dinner.
https://www.dietdoctor.com/recipes/keto-western-omelet

Cauliflower Pizza – This is as satisfying as “real” pizza; and has become a default when we need some dinner inspiration. I use ground flax seed (from Aldi) instead of the psyllium husk.
https://thestonesoup.com/blog/2016/09/27/cauliflower-pizza/

Southwestern Squash Casserole – To make this gluten free and lower in carbs, I’m substituting coconut flour for the wheat flour. UPDATE: Do not do this! The coconut flour did not incorporate well and the casserole was gritty as a result. It didn’t affect the flavor, just the texture. I’ll try arrowroot powder next.
https://12tomatoes.com/southwestern-squash-casserole/

Lemony Avocado Tuna Salad – We’re slightly obsessed.
https://cleanfoodcrush.com/eat-clean-lemony-avocado-tuna-salad/

Snacks:
I’m finding that I need fewer snacks on keto.
Pimento cheese and celery, cucumber slices, pickles, walnuts, green pepper strips
Beautiful carbs for hubby: Pineapple, grapes, bananas, watermelon, Tiny but Mighty popcorn

Treat:
Fresh Strawberries and Homemade Whipped Cream with Lily’s Chocolate Chips on top – If it ain’t broke, don’t fix it! I sweeten the cream with a packet or two of Whole Earth. This tasty keto treat is a good substitute for my nightly watermelon.

I hope that you will give some of these recipes a try. If you like them, let me know in the comments or via email at arthurized dot home at gmail dot com.

Real Food Meal Prep for Week of 5.26.2019

My husband started creating a grocery list, so I asked him to pull together a menu as well. I think he did a great job of it! He pinned several new recipes to try this week. I found out after he made the menu that he Googled “inexpensive keto meals”! He’s so sweet. I don’t have anything to report about my keto experience except that I avoided the keto flu, and I’m solidly in ketosis.

Breakfast:
Almond Flour Pancakes with Chocolate Chips – I’m adding cocoa powder to some of my batter for a double chocolate variation and sweetening with Whole Earth powder.
https://joyfilledeats.com/almond-flour-pancakes/

Our nephew painted this plate for us when he was four.
He’s 25 now, so yeah, it’s been a few years.

Lunch:
Keto Stuffed Bell Peppers – I’m making a jelly roll pan full of these goodies.
https://www.dietdoctor.com/recipes/stuffed-peppers-with-ground-beef-and-cheese

Dinner:
Lemony Avocado and Tomato Tuna Salad – So good! I sub in cucumber for the avocado, and use tuna packed in olive oil, omitting the 2 T. of olive oil in the recipe.
https://cleanfoodcrush.com/eat-clean-lemony-avocado-tuna-salad/

Easy Garlic Butter Chicken Thighs with Green Beans – New Recipe!
https://www.ieatketo.com/easy-garlic-butter-keto-chicken-thighs/

Best Ever Broccoli Salad – We’re slightly obsessed with this salad. Pa Kettle gave us some home grown broccoli this week.
https://thestonesoup.com/blog/2018/11/20/best-ever-broccoli-salad/

Crack Slaw –
New Recipe! Can’t wait to try this one. I hope it lives up to its name!
https://www.tasteaholics.com/recipes/video/easy-crack-slaw-video/
UPDATE: This was tasty, but I wouldn’t quite call it ‘crack’. Maybe ‘Gateway Drug Slaw’? Anyway, it was good.

Zucchini Noodle Carbonara – New Recipe!
https://skinnyms.com/zucchini-noodle-carbonara-recipe/

Snacks:
Deviled Eggs, Pimento Cheese, Celery Sticks and Peanut Butter, Cucumber Slices, Walnuts – I’ve been on keto for two weeks and I’ve noticed that celery tastes ‘sweet’ now. Weird, huh?

Delicious Carb Snacks for Hubby: Watermelon, Oranges, Bananas, Tiny but Mighty Popcorn

Treat:
Fresh Strawberries with Homemade Whipped Cream

Have a safe and happy Memorial Day!
