Real Food Menu for Week of 12.7.2020

We’re still limping along over here. Mark’s broken foot is recovering steadily. He’s walking a little more each day and can go up and down stairs now. Hooray for healing!

Slowly, slowly the house is coming together for Christmas, starting with the nativity and front porch. Annnnnddd sometimes the decorating goes a little sideways. Or upside down.

Oh well.

I’ve got three new recipes for you in this week’s menu. With two “best ever” dishes, I sure hope they live up to the hype! 🙂

Mark’s Breakfast:
Cheesy Potato Frittata – New Recipe! You just can’t go wrong with eggs, potatoes and cheese for breakfast. I don’t normally have safflower oil on hand, so I use olive oil. This frittata is very mild in flavor; punch it up with a sprinkle of crushed red pepper flakes or a drizzle of hot sauce if you like.

Mark’s Lunch:
Harvest Minestrone Soup – This makes a LARGE pot of soup and is a good recipe to prep ahead and freeze. Freeze in individual lunch portions, or in larger containers for quick, evening dinners.

Dinners:

Fiesta Honey and Lime Kale Salad – Here’s another meal prep dish. I like to prep it one day ahead to give the dressing time to soften the kale. This keeps for a few days in the fridge. Save some jalapeno slices to top the black bean soup below.

Vegetarian Hash – New Recipe! – Mark rated this one a 9, which is quite an endorsement coming from our Carnivore in Residence. This makes four hearty dinner portions.

Best Ever Broccoli Salad – This salad is served warm and is a nice alternative to the classic broccoli salads with mayonnaise based dressing. Three tablespoons of vinegar is a little too tangy for our tastes, so we use two.

Best Ever Black Bean Soup – Top with your favorite flavors; avocado, cilantro, jalapeno or hot sauce. The possibilities are endless. We like this with a dollop of natural sour cream.

Snacks:
Honey Mustard Dip with fresh veggies for me, gluten free pretzels for hubs. And popcorn. Always popcorn.

Treat:
Cinnamon and Raisin Brown Rice Pudding – New Recipe! Mmmm, a warm comforting bowl of cinnamon and rice goodness! This processed sugar free version is so satisfying. An added pinch of nutmeg and zhush of extra cinnamon never hurt anything.

Real Food Menu for Week of 2.10.2020

We had a busy little weekend with Night to Shine on Friday, followed by a six mile jaunt to the star on Mill Mountain Saturday morning. Saturday afternoon found us puttering around the house, and we wrapped up Arthur Birthday Season on Sunday with a nice lunch for our nephew.

Have you been to a Weaver Street Market? My boss recently discovered this gem in his travels and has been raving about their food bar. He’s now planning his trips so he can eat there. I’ve not visited one yet, but the recipes on their blog caught my eye, so we’re sampling a couple of them this week.

Breakfast:
BLT Breakfast Bake – While we’re not doing Paleo or Whole 30, this protein-packed dish is a great way to start the day! We’ll use half a pack of bacon in this recipe and the rest in the broccoli salad. We buy Hormel Natural or the Never Any uncured hickory bacon from Aldi.

Lunch:
Paleo Egg Roll In A Bowl – Nope, still not Paleo, but we love this real food twist on an egg roll. Prepare as is for vegetarian, or add a protein. We like the chicken option. Fresh dianthus blooms are optional!

Dinner:

Apple Cider Glazed Salmon – New! I don’t have Lusty Monk mustard on hand (although that name is hilarious!) so I’m using another spicy, stone ground mustard.

Creamy Coconut Lentil Curry – Yum! We add 1/2 tsp. of garam masala and 1/2 tsp. of curry powder, for a little extra flavor.

Lean Bean Meatballs with Greens n’ Rice – New! This dinner was a pleasant surprise. We made it using ground turkey instead of ground chicken thighs. I thought Mark wouldn’t care for it because he’s not a fan of spice, and the stone ground mustard is pretty hot. He loved it, and rated it a “10”! This meal is going into the regular dinner rotation.

Best Ever Broccoli Salad – I wasn’t sure how I would feel about a warm broccoli salad, but this recipe has become a cool weather favorite.

We’re having carrots and cukes with hummus (Aldi’s organic red pepper hummus is a fav), popcorn, grapes, and bananas.

Treat:
Chocolate Dipped Strawberries – We’ll have them on Valentine’s Day with our heart pizza. I like to decorate these using unsweetened, shredded coconut.

Real Food Meal Prep for Week of 5.26.2019

My husband started creating a grocery list, so I asked him to pull together a menu as well. I think he did a great job of it! He pinned several new recipes to try this week. I found out after he made the menu that he Googled “inexpensive keto meals”! He’s so sweet. I don’t have anything to report about my keto experience except that I avoided the keto flu, and I’m solidly in ketosis.

Breakfast:
Almond Flour Pancakes with Chocolate Chips – I’m adding cocoa powder to some of my batter for a double chocolate variation and sweetening with Whole Earth powder.

Real Food Meal Prep for Week of 5.19.2019

This week’s menu has several recipes with the flavors of restaurant meals, plus the added benefit of knowing (and controlling) what’s in our food.

Breakfast:
Keto Sausage, Egg and Cheese Biscuits – Prep these on Sunday and you won’t need the drive-thru for breakfast. These are nutrient dense and very filling.

I baked the sausage patties in the oven and used this genius method for the eggs. While slicing the biscuits with a bread knife, use a sawing motion without applying pressure. Let the knife do the work, so the biscuits don’t crumble.

Paleo Egg Roll in a Bowl – Edible dianthus is entirely optional, but it’s pretty!

Dinner:
Cheeseburger Salad – I know this sounds weird, but we eat warm meat over lettuce and call it taco salad, right? This is the same idea, just with the flavors of a cheeseburger. And guess what? We like it!

Peppermint Fat Bombs – I made a double batch using 1 tsp. of peppermint extract and 1 tsp. of honey for the sweetener. Divided by 30, the honey adds less than 1 gram of carbs per fat bomb. Adjust to your tastes.

We’re eating Easter leftovers for the next few days, so meal prep this week is super easy. I don’t think we will need five dinners, but two are simple salads that we can eat along side our leftovers. Here is this week’s plan:

Breakfast:
PB&J Overnight Oats – Yes, we’re a one-trick pony! But it’s a tasty trick.

Greek Salad – I left the black olives and feta out because Mr. Arthurized Home doesn’t care for them. This salad is just as tasty without them. We leave the pinch of sugar out as well. This recipe has been a favorite for several years and will be in regular rotation all summer long.

Balsamic Chicken with Onions – We made this last week using chicken thighs and it was so good that my husband suggested we meal prep it for lunches this week with brown rice and broccoli on the side. I caramelized the onions well before baking.
I didn’t feel comfortable keeping chicken in the fridge for five days, so we kept Monday and Tuesday’s lunches in the refrigerator and put the rest in the freezer.

It’s nice to have a healthy treat available throughout the week so that we don’t feel deprived or tempted by junk food. This banana bread is very nutrient dense, egg free, dairy free and of course, gluten free.

Maple Cream Cheese Spread
I added about a teaspoon of cinnamon and a pinch of nutmeg to the maple cream cheese frosting recipe linked below. You could whip chilled coconut cream for a dairy-free version. If your mixture is too thick to spread easily, mix in a tablespoon or two of milk or coconut milk.
