Real Food Menu for Week of 8.17.2020

Having to stay mostly indoors this cool and rainy weekend, gave me time to work on sorting supplies, packing shoe boxes and making a shopping list for filler items. I’m excited to share that with you over the next few weeks.

If you’re a new reader, welcome and thank you for taking time out of your day to read here! My menus are always gluten-free, mostly real food. We define that as ‘food made in nature and not in a factory’. We’re not perfectionists, so we shoot for an average of at least 90% real food with a few 10% foods thrown in there.

We’re still pounding through all the veggies from Pa Kettle’s garden, and I couldn’t be happier about that! Here is this week’s menu:

Mark’s Breakfast:
Chocolate Pecan Sweet Potato Breakfast Cookies – Yum! These little fiber-packed goodies make the easiest grab-and-go breakfast.

Mark’s Lunch:
Mason Jar Spinach Salad – Even though he’s a fun guy (heh), Mark doesn’t love ‘shrooms. We’ll just leave those out. We use Sir Kensington’s mayo and substitute stevia sweetener for the sugar in the dressing. Instead of spooning the dressing into the bottom of the jar, I store each portion in a tiny container.

Dinner:
Garlic Butter Pasta – New! We’re loving lentil and chickpea pastas. They seem to hold their shape well, and don’t get gummy like brown rice pastas. Sprinkle a little nutritional yeast on top of this hearty dish, if you like.

Layered Salad – Here’s a throwback salad for you. This is a once in a while dish due to that mayonnaise based dressing. For the dressing, we like Kroger natural sour cream with just three ingredients: cultured cream, skim milk and enzymes. When it’s just the two of us, we divide this recipe in half. Add the dressing just before serving.

Broccoli and Red Cabbage Salad with Tangy Peanut Butter Dressing – This salad is crunchy and flavorful, with just a bit of tartness from the cranberries. Dress this salad just before serving. Leftover dressing is delicious served over plain, shredded cabbage.

Kale Salad with Blueberry Vinaigrette – New! Mark went just a little crazy for this blueberry dressing! The recipe does not specify what to massage into the kale. Do you just massage it dry? I drizzled a little olive oil, and then massaged the kale. Just before serving, I tossed the salad with half the dressing. Then I topped it with the pecans and feta along with the rest of the dressing.

Snacks:
Hummus and cucumber slices, watermelon, popcorn, dried fruit and nuts. Rinse, repeat.

Treat:
Vanilla Coconut Flour Paleo Cupcakes – A sweet treat for Mark; these are surprisingly light and fluffy! I use Simple Mills frosting to minimize sugar. The recipe says it yields eight cupcakes, but I get nine standard size cakes out of a single batch. I decrease the coconut oil to 1/4 cup as well. Store these in the fridge, because they contain no preservatives.

Real Food Menu for Week of 4.20.2020

I feel like we’re living the Groundhog Day life up in here. Get up, go to work, come home, sleep, do it all over again. The odd excitement is getting to go for a long run, which we did on Saturday morning. We ran the virtual Blue Ridge 10k and had a wee sliver of race day fun. Even though the race was cancelled, Roanoke still came out to support the runners. There were shouts of encouragement from strangers driving by, signs to distract and entertain, and even a stash of water on the way up to the Star on Mill Mountain.

Crossing back over the Walnut Avenue bridge, we heard a band playing below us at Dr. Pepper Park. I later learned they were filming Rock to the Rescue, an ongoing benefit for Downtown businesses who’ve been impacted by the COVID-19 closures. As we approached Elmwood Park, we were surprised by a small group of people waiting to cheer us across the virtual finish line. I love the spirit and tenacity of our little city! We’ll be back next year, Blue Ridge!

I’m diving headlong into another work week, filled with delicious, home-cooked meals:

Breakfast:
Healthy Carrot Cake Baked Oatmeal – One 8×8 pan will be enough for Mark’s breakfast. If you’re meal prepping for two, double the batch and bake it in a 9×13 pan. I like to add a little extra cinnamon and a pinch of nutmeg for good measure.

Lunch:
Lunch will be a bowl of soup and a small side salad. I’m making both of the salads below.

Green Curry of Broccoli Soup – So good!

Zucchini Salad – Like potato salad, only made using zukes. As with all Diet Doctor recipes, scale it for your crowd. I use half of the mayo the recipe calls for, and sub in Greek yogurt for the other half.

Dinner:
Oven Roasted Brussels Sprouts and Bacon – New! Serve with a piece of grilled chicken or fish – I subbed Canadian Bacon for *actual* bacon, because that’s what I had on hand, and I was too lazy/tired/sorry to visit another store.

Teriyaki Salmon – Scale the recipe for your crowd, as written it serves one. If you’re gluten free, substitute tamari or coconut aminos for the soy sauce.

Supreme Pizza Inspired Salad – New Recipe! – Because of the pepperoni, this is a once in a while recipe. We like Hormel Natural pepperoni. This salad is best prepared just before serving so the pepperoni and tomatoes stay as fresh as possible.

Snacks:
Watermelon season is finally upon us and I could not be happier about that. Kroger has seedless watermelons on sale and the one we brought home is delish! Wanna know how to select the perfect watermelon? Thump them hard with your fingertips and listen for the one that sounds the most hollow. I usually thump six or seven of them just to be sure. Give it a try!

Treat:
Keto Key Lime Pie Jars – These are a tasty way to sneak a little healthy fat into your dessert. For maximum creaminess, make sure the avocado is guac-ready before you make these babies.

Real Food Menu for Week of 12.01.2019

We kicked off our Thanksgiving Day by participating in one of Roanoke’s most loved and best supported races, the Drumstick Dash. This 5k brings in a significant amount of the Roanoke Rescue Mission’s annual food budget. Mother Nature contributed a side dish of cold weather and gusty winds for race morning; but we Roanokers are a hardy lot and were (mostly) undeterred. Over 10,000 of us got our dash on before partaking in our Thanksgiving meals. What a fun way to start the day!

We’ve had our fill of turkey, football, online shopping, reading and napping, and are ready to get back to our workaday routine, starting with the weekly menu. And, it appears we’re on a bit of a soup kick!

Breakfast:
Blueberry and Raspberry Baked Oatmeal – An old favorite. We make this in the winter using frozen berries.

Dinner:

French Onion Soup

  • Servings: 4-6
  • Difficulty: Easy

I’ve had this recipe for so long, that I can’t remember where I found it! I substitute gluten-free all-purpose flour for the wheat flour. The key to this rich soup is in caramelizing the onions until they are a deep, golden color. It’s worth every minute in flavor. Serve with crusty bread or sandwiches on the side. We like Brazilian cheese bread or gluten free baguette.

Ingredients

  • 8 brown onions, sliced
  • 1 oz. butter
  • 1 T. olive oil
  • 2 T. thyme leaves
  • 2 T. plain, all-purpose flour (I use gluten free)
  • 2 T. brandy
  • 2 T. dijon mustard
  • 8 cups beef stock
  • 2 cups water

Directions

  1. Place the onions, butter, oil and thyme in a large saucepan over medium heat, cover and cook for 35 minutes, stirring occasionally, until soft and golden.
  2. Add the flour and cook, stirring for 3 minutes.
  3. Add the brandy and cook, stirring for 1 minute. Add the mustard, stock and water and allow to simmer for 15 minutes. Ladle the soup into bowls and serve.

Meal Prep for Week of 6.2.2019

This past weekend was a blink-and-you-miss-it blur. We did loads of adulting and gardening. Hubby had a 16 mile trail race, and we spent some time catching up with friends we hadn’t seen in awhile.

Last night we watched a couple of deer work their way through, sampling from the delicious buffet that is our side yard. They completely ignored the herb garden, which made us wonder if they had bumped into the new fence and were spooked by it. Time will tell.

Diving into this week’s menu:

Breakfast:
Cloud Bread – New Recipe! I made two flavors; Parmesan and Everything Bagel. Will serve these with a schmear.

Cauliflower Pizza – This is as satisfying as “real” pizza; and has become a default when we need some dinner inspiration. I use ground flax seed (from Aldi) instead of the psyllium husk.

Southwestern Squash Casserole – To make this gluten free and lower in carbs, I’m substituting coconut flour for the wheat flour. UPDATE: Do not do this! The coconut flour did not incorporate well and the casserole was gritty as a result. It didn’t affect the flavor, just the texture. I’ll try arrowroot powder next.

I’m finding that I need fewer snacks on keto.
Pimento cheese and celery, cucumber slices, pickles, walnuts, green pepper strips
Beautiful carbs for hubby: Pineapple, grapes, bananas, watermelon, Tiny but Mighty popcorn

Treat:
Fresh Strawberries and Homemade Whipped Cream with Lily’s Chocolate Chips on top – If it ain’t broke, don’t fix it! I sweeten the cream with a packet or two of Whole Earth. This tasty keto treat is a good substitute for my nightly watermelon.
