Real Food Menu for Week of 8.3.2020

Is there some sort of turkey shortage going on? We’ve been looking for turkey cutlets for weeks with no luck. The meat department manager at one of our Kroger stores told us they “discontinued” them. What? So strange. Anyway, I’ve been wanting to try the new turkey dish below, so in the absence of turkey cutlets, we used chicken breasts.

Mark’s Breakfast:
Cinnamon Roll Noatmeal – Here’s an old friend! Back when I was doing keto (hello, 2019!) we had this for breakfast quite regularly. I add 3/4 tsp. of cinnamon and a smidgen of nutmeg (’cause it’s my favorite spice and I add it to nearly everything!) to the dry noatmeal mix from here…

Make it a little extra special with this cinnamon roll drizzle:

Mark’s Lunch:
Keto Cobb Salad – We like to grill a few chicken breasts on Sunday evening to have on hand for quick lunch prep.
https://www.ketoconnect.net/keto-salad/
Mark likes this with Pioneer Woman’s dressing from the layered salad.

Dinner:

Garlic and Herb Turkey Cutlets – New! Savory and delicious! Perfect for using those fresh garden herbs. If you can’t find turkey cutlets, butterflied chicken breasts work just as well. Give this one a little time to marinate before cooking.

Greek Salad – We never tire of this refreshing salad, especially when the tomatoes and cukes are rolling in from the garden.

Baked Salmon with Lemon Butter – The fastest entree you’ll ever throw together. You can have this in the oven in five minutes, tops! I didn’t bother to make the side of lemon butter. Serve with a nice salad or veggie.

Strawberry Chicken Salad – Don’t let the garlic in the dressing scare you away; you won’t get dragon breath. For the creamiest dressing, try to use your avocado during the fifteen minute sweet spot between unripe and rotten! 🙂

Snack:
Avocado, Raspberry and Crumbled Cheese Toast – New! I love a good avocado toast, and this one makes a perfect breakfast, snack or light lunch.

A lil’ sweet treat for Mark:
Keto Lava Cakes – Yep. It is a theme. Top these babies with fresh raspberries leftover from the avocado toast above, and sprinkle with a zhoosh of powdered Swerve.

I hope your week goes smoothly and you’re able to find (or order) everything you need from the store!

Real Food Menu for Week of 9.29.2019

Happiness is getting to visit with your Tennessee sister twice in four days. She spent the night Thursday night on her way to Massanutten Resort for the Xtreme Hike for Cystic Fibrosis, and then we met for lunch out by the interstate on her way back home. We met at Angelle’s Diner, and sat outside on the patio in 94° heat listening the roar of tractor-trailer engines off in the distance. We really know how to show our guests a good time! It was too brief a visit, but we’ll take what we can get.

This is shaping up to be a busy week, so we’re sticking with mostly tried and true recipes. Except that keto lava cake. We’ll need to perfect that recipe just a little more.

Breakfast:
Cinnamon Roll Noatmeal – There’s nothing like starting the day with a warm bowl of noatmeal. I double the recipe, add 3/4 tsp. of cinnamon and a smidgen of nutmeg (’cause it’s my favorite!) to the dry noatmeal mix from here…
https://www.healthysweeteats.com/my-favorite-noatmeal-aka-low-carb-oat-free-porridge-the-basic-recipe-and-6-variations/
…and made the cinnamon roll drizzle from here:
https://www.wholesomeyum.com/easy-low-carb-keto-oatmeal-recipe/

Lunch:
Cauliflower Pizza – I’m making two of these pizzas, pepperoni for Mark and cheese pizza for me. This crust holds up well to reheating in the toaster oven at work.
https://thestonesoup.com/blog/2016/09/27/cauliflower-pizza/

Dinner:
I only plan five dinners each week to leave room in the schedule for dining out, or having a leftovers night.

Keto Meatballs and Sauce – I like to make the meatballs using ground turkey. We’ll serve over zoodles to amp up the veggies. The cream in this tasty sauce cuts some of the acidity of the tomatoes.
https://www.tasteofhome.com/recipes/keto-meatballs-and-sauce/

Salmon in Roasted Pepper Sauce – This sauce is creamy and delicious! I’m doubling the sauce so there is plenty to mix into the cauliflower rice.
https://cooktoria.com/salmon-in-roasted-pepper-sauce/

Keto Stuffed Peppers – Earth Fare had green peppers 3/$1 and Mark really loves these, so…
https://www.dietdoctor.com/recipes/stuffed-peppers-with-ground-beef-and-cheese

Perfect Roast Chicken – Ina’s classic roast chicken. This recipe is an oldie, but a goodie. We’ll do carrots and potatoes for Mark, brussels sprouts for me.
https://barefootcontessa.com/recipes/perfect-roast-chicken

Keto White Chicken Chili – We made this for the first time last week and it was so good we’re bringing it back again! We’ll use the leftover roast chicken in this creamy soup.
https://www.heyketomama.com/keto-white-chicken-chili/

Snacks:
Parmesan chips, if I have a hankerin’. I’m not really snacking on keto.
Carb-loading Hubby will enjoy bananas, grapes and Tiny but Mighty Popcorn. When Mark was a kid, his family had Friday movie nights and his Mom made popcorn on the stove by shaking the kernels in a covered sauce pan. He makes his popcorn on the stove top just like his Mama did.

Treat:
Keto Lava Cakes – We may or may not have had to bake these several nights last week. For purposes of recipe testing, of course. *ahem* These are topped with fresh raspberries and powdered Swerve. Who says you can’t eat low-carb and enjoy it, too?
https://kirbiecravings.com/keto-lava-cake/

Have a great week, everybody!

Meal Prep for the Week of 8.11.2019

True to form, I started a painting project yesterday and well, I’m in a little over my head. This one has been in the works for awhile and I’m starting to see that it will either be a glorious success or a spectacular failure. There is no in-between, I’m afraid. I’ll let you know either way. Here’s a sneak preview:

I haven’t had much time for cooking this weekend, so I have just a few pictures for you. I’ll update them going forward. Hope you don’t mind. Let’s dive into this week’s menu:

Breakfast:
Cinnamon Roll Noatmeal – This variation is so good! I added 3/4 tsp. of cinnamon and a smidgen of nutmeg (’cause it’s my favorite spice and I add it to nearly everything!) to the dry noatmeal mix from here…
https://www.healthysweeteats.com/my-favorite-noatmeal-aka-low-carb-oat-free-porridge-the-basic-recipe-and-6-variations/
…and made the cinnamon roll drizzle from here:
https://www.wholesomeyum.com/easy-low-carb-keto-oatmeal-recipe/

Lunch:
Chicken and Garlic with Fresh Herbs – We’ll have this with a side of fresh green beans from Pa Kettle’s garden. The chives, rosemary and thyme are all from our garden. We grilled the chicken and then finished it on the stove.
https://www.tasteofhome.com/recipes/chicken-garlic-with-fresh-herbs/

Dinner:

Keto Waffles – Breakfast for Dinner!
https://www.eatingonadime.com/keto-waffles-recipe/

Cucumber and Strawberry Salad with Poppyseed Dressing – New Recipe! Because sometimes you just want a light, refreshing salad for dinner. I was skeptical about the amount of vinegar in the dressing, but it’s just right. I left the honey out and used monkfruit sweetener instead. We both really enjoy this salad. Hope they don’t do random drug testing at work!
https://cleanfoodcrush.com/cucumber-strawberry-salad/

Perfect Roast Chicken – Ina’s classic roast chicken. This recipe is an oldie, but a goodie.
https://barefootcontessa.com/recipes/perfect-roast-chicken

Turkey, Bacon and Swiss on a Lettuce Bun – No recipe, just cut “cheeks” from a head of iceburg lettuce, fill with turkey slices, a slice of bacon, tomato, cheese and your favorite condiments. I like spicy brown mustard. Fast, easy, keto!

Keto Meatballs and Sauce – New Recipe! We’ll serve over zoodles to amp up the veggies.
https://www.tasteofhome.com/recipes/keto-meatballs-and-sauce/

Snacks:
Keto – Gouda Snacking Cheese, Cucumber slices, Celery and Peanut Butter
Delightful, Carb-Filled Snacks for Hubby – Watermelon, Grapes, Bananas, Tiny but Mighty Popcorn

Treat:
Keto Strawberry Icebox Pie – New Recipe! Honestly, this one was a mixed bag. A delicious, mixed bag that I would make again, but decrease the sweetener by half. This was just too sweet for our tastes as written. I didn’t bother to make the whipped cream for the two of us because, dang, that’s a lot of cream! I’m keeping this in the freezer, because it stays a little soft in the fridge. If you like strawberry cheesecake, you’ll like this pie. This would make a nice dessert for guests, and I bet they’d never guess it is keto!

Have a great week, everyone! I’ll just be over here, with paint in my hair and stain under my fingernails.
