Real Food Menu for Week of 3.2.2020

Are you better at eating real food when you keep healthy snacks on hand? For us, the key to cutting down on junk food has been simply this: Don’t have it in the house. Revolutionary, I know. There are very few cravings worth changing out of pajamas and leaving the house for. Thank God we don’t have grocery (or pizza!) delivery service out here in the country.

Having said that, sometimes you just get a hankerin’ for something a little sweet or a salty, crunchy snack. That’s why we add snacks and treats to our menus. I’m more than happy to munch on fresh veggies, hummus and parmesan chips if we have them ready to go when a craving hits.

Breakfast:
Homemade Granola – New Recipe! We doubled the cinnamon because we’re maniacs that way and added a sprinkle of nutmeg. Mark likes his granola with coconut milk and banana slices, I like mine with Greek yogurt and fresh berries.

Lunch:
Weeknight Taco Soup – An old favorite, lightened up by substituting ground turkey for the beef. This tasty soup is great for meal prep because it keeps well in the fridge for a few days, or in the freezer for several weeks.

Cherry Tomato White Bean Salad – New Recipe! Can you say sensational, savory, and satisfying salad three times fast? You’re gonna need to. This one’s a dandy!

Creamy Roasted Cauliflower Soup – What she lacks in visual appeal, she makes up for in flavor. Hubs loves this one.

Stuffed Peppers with Ground Beef and Cheese – As per the Mediterranean Diet, we’re using ground turkey instead of ground beef. And since I’m not doing keto, I add a little cooked brown rice to the mixture. I bake these on a Silpat and don’t bother with the butter. These little crowd-pleasers freeze well.

Pickety Bits – This is the easiest dinner ever, and a great opportunity to clean out the fridge. There are no rules here. You know that half-eaten jar of pickles languishing in the fridge door? Use it up! Include a selection of fruits, fresh and pickled veggies, olives, meats, cheeses, nuts, crackers, dips and spreads. Dinner is served!

Snack:
Parmesan Chips – Crunchy, salty and delicious! I scale this recipe to make 6 servings, scoop with a cookie scoop and bake on a silpat. These pair well with soups and/or Netflix binges.

Chocolate Almond Coconut Bites – New Recipe! This recipe made 18 bites. I added 1/4 tsp of salt to my batch. I’m going to experiment with using these as running fuel.

Real Food Menu for Week of 9.29.2019

Happiness is getting to visit with your Tennessee sister twice in four days. She spent the night Thursday night on her way to Massanutten Resort for the Xtreme Hike for Cystic Fibrosis, and then we met for lunch out by the interstate on her way back home. We met at Angelle’s Diner, and sat outside on the patio in 94° heat listening the roar of tractor-trailer engines off in the distance. We really know how to show our guests a good time! It was too brief a visit, but we’ll take what we can get.

This is shaping up to be a busy week, so we’re sticking with mostly tried and true recipes. Except that keto lava cake. We’ll need to perfect that recipe just a little more.

Breakfast:
Cinnamon Roll Noatmeal – There’s nothing like starting the day with a warm bowl of noatmeal. I double the recipe, add 3/4 tsp. of cinnamon and a smidgen of nutmeg (’cause it’s my favorite!) to the dry noatmeal mix from here…

Cauliflower Pizza – I’m making two of these pizzas, pepperoni for Mark and cheese pizza for me. This crust holds up well to reheating in the toaster oven at work.

I only plan five dinners each week to leave room in the schedule for dining out, or having a leftovers night.

Keto Meatballs and Sauce – I like to make the meatballs using ground turkey. We’ll serve over zoodles to amp up the veggies. The cream in this tasty sauce cuts some of the acidity of the tomatoes.

Carb-loading Hubby will enjoy bananas, grapes and Tiny but Mighty Popcorn. When Mark was a kid, his family had Friday movie nights and his Mom made popcorn on the stove by shaking the kernels in a covered sauce pan. He makes his popcorn on the stove top just like his Mama did.

Treat:
Keto Lava Cakes – We may or may not have had to bake these several nights last week. For purposes of recipe testing, of course. *ahem* These are topped with fresh raspberries and powdered Swerve. Who says you can’t eat low-carb and enjoy it, too?

Meal Prep for Week of 6.9.2019

Welcome to another week of clean eating! We’re trying out loads of new recipes this week and we’ve already found a couple of keepers! Noatmeal is a nice change to our usual egg-based breakfasts and fun to come up with new topping combinations. Strawberry/Peanut Butter is my favorite combination so far.

I’ll let the pictures of the Chicken Pot Pie and Philly Cheesesteak Skillet speak for themselves.

I mixed up double batches in sandwich bags. Because these have flax seed meal in them, they need to be stored in the fridge. When I empty a bag each morning, I fold it up and put it back into the storage bag; that way we’re not using as many plastic bags from week to week.

Real Food Meal Prep for Week of 5.26.2019

My husband started creating a grocery list, so I asked him to pull together a menu as well. I think he did a great job of it! He pinned several new recipes to try this week. I found out after he made the menu that he Googled “inexpensive keto meals”! He’s so sweet. I don’t have anything to report about my keto experience except that I avoided the keto flu, and I’m solidly in ketosis.

Almond Flour Pancakes with Chocolate Chips – I’m adding cocoa powder to some of my batter for a double chocolate variation and sweetening with Whole Earth powder.

Real Food Meal Prep for Week of 5.12.2019

We’re up to our eyeballs in home and garden projects this week, so we’re keeping meal prep easy. I’m commiting to keto for two months and I’ll reassess after that. I’m still not comfortable with copious amounts of dairy and sweeteners ending in “itol”, so I’ve decided to go light on the dairy and use maple syrup sparingly as long as I can achieve and maintain ketosis. Fingers crossed for no keto flu!

Breakfast:
Almond Flour Pancakes with Chocolate Chips – I left out the stevia, but added one tsp. each of vanilla and maple syrup. The maple syrup adds about .5 g of carbs to each pancake. These would be amazing with homemade whipped cream and fresh strawberries on top. I’d also like to try mixing cocoa powder into the batter for a double chocolate variation. Maybe next time? These freeze well with a piece of parchment paper between them.

Mocha Ice Bombs – New Recipe!
My ice bombs are based off of the linked recipe, ’cause I can’t metric! Makes approximately 18, one inch bombs.
8 oz. softened, full fat cream cheese
1 tsp. maple syrup
3 T. cocoa powder
2 1/2 T. strong coffee, chilled
Chocolate coating:
1/2 c. Lily’s chocolate chips
1 T. coconut oil
Using a hand mixer, mix the above ingredients until smooth. Freeze in the mixing bowl for 10-15 minutes or until firm enough to scoop. Scoop the bombs onto a cookie sheet lined with parchment paper, using a 1″ cookie scoop. Freeze the ice bombs for 20-30 minutes or until they release from the parchment easily. While the ice bombs are still in the freezer, melt the chocolate chips and coconut oil in a double boiler. Working quickly, drop the ice bombs one by one into the melted chocolate and transfer them back to the paper lined cookie sheet. Freeze until the chocolate is set. Store in an air-tight container in the freezer. These are about 3.5 grams of net carbs each with the chocolate coating. Let these sit at room temperature for a few minutes before serving.

Real Food Meal Prep for Week of 5.5.2019

I’m inching closer to keto this week and sharing some family favorite recipes with you!

Ropa Vieja is a delicious, Cuban, shredded beef dish that I’ve made frequently over the past 18 years. My version is Americanized; I take some help from the store and use jarred salsa. If you serve it over cauliflower rice instead of white or brown rice, it’s very low carb. I love the richness of flavor that slow-roasting gives, so I use the Dutch oven. As a bonus, the house smell amazing while it cooks!

Breakfast:
Blueberry Smoothie – New Recipe!
“Looks so bad, but it tastes so good.” – My husband
Y’all. I have laughed so hard over these smoothies which look NOTHING like the beautiful purple in the recipe photo. These look more like something you would serve at a Grinch party! Trust me, they are tasty, and you know you’re getting your daily dose of green goodness from the spinach. If the kids are constantly drinking your smoothie, offer them this and watch them recoil in horror! Looks can be deceiving.

Lunch: Ropa Vieja
My husband will have his over brown rice, I’ll have cauliflower rice.

Ropa Vieja
325° for 2 1/2 to 3 hours
3 lbs beef chuck roast
1 package (1 oz.) dry onion soup mix – or make your own like this:

1 onion, chopped
1 c. red wine
3 T. coconut oil
1/2 c. salsa – look for salsa with no added sugar
1/2 c. water – optional (I almost never add this)
Garnishes: sour cream, cilantro, lime wedges and avocado

Heat oil in dutch oven, over med-high. Add beef and brown on all sides . Reduce heat, add onion and cook until soft but not browned. Add onion soup mix, wine, salsa and water (if using). Bring to a boil. Cover and place in preheated oven for 2 1/2 to 3 hours. Check occasionally to make sure there is sufficient liquid in the pan, add more wine if necessary. Shred beef before serving. Serve over rice, or cauliflower rice for low carb. Garnish as desired.

Guacamole Bacon Burgers on a lettuce bun – we make lettuce buns two ways:

  • Slice large rounds from the sides of a head of iceberg lettuce.
  • Stack several large leaves of romaine lettuce to make each half of a bun.

Summer Squash Oregano – I found this recipe in Southern Living magazine years ago; and we make this all summer long. Well, as long as the squash from Pa Kettle’s garden are rolling in! Add some rolls or cloud bread, and you’ve got a nice vegetarian dinner.

Summer Squash Oregano – Serves 6 as a side dish
From Southern Living magazine
3 T. butter
1 medium yellow onion, minced
1 garlic clove, minced
1 small, green bell pepper, chopped
1 T. chopped, fresh oregano
3/4 lb. yellow squash, sliced
3/4 lb. zucchini, sliced
4 tomatoes, chopped
1/2 t. salt
1 tsp. pepper
1 c. grated parmesan
Melt butter in a large skillet; add onion, garlic and bell pepper, and saute until tender. Stir in oregano, yellow squash and zucchini; cover and cook, stirring occasionally for 15 minutes. Stir in tomato, salt and pepper; cook uncovered until squash is tender. Spoon into a serving dish and sprinkle with cheese.
