Real Food Menu for Week of 8.3.2020

Is there some sort of turkey shortage going on? We’ve been looking for turkey cutlets for weeks with no luck. The meat department manager at one of our Kroger stores told us they “discontinued” them. What? So strange. Anyway, I’ve been wanting to try the new turkey dish below, so in the absence of turkey cutlets, we used chicken breasts.

Mark’s Breakfast:
Cinnamon Roll Noatmeal – Here’s an old friend! Back when I was doing keto (hello, 2019!) we had this for breakfast quite regularly. I add 3/4 tsp. of cinnamon and a smidgen of nutmeg (’cause it’s my favorite spice and I add it to nearly everything!) to the dry noatmeal mix from here…

Real Food Menu for Week of 5.4.2020

Do you ever feel like you worked all day long and at the end of the day can’t name one project you fully completed? That’s what is happening at our house right now. We’ve got a lot going on but nothing much to show for it. One project depends on another and it’s snowballing out of control.

The herb garden is one bright spot. It has overwintered beautifully and the plants seem to be healthy and happy. The other night when I was coming home I startled a wascally wabbit in the garden. I’m pretty sure he was fixin’ to chow down on my lily plants. Again. The onions and garlic planted around the lilies are not deterrent enough, so I’ve got a little cayenne surprise for him. I’ll share the recipe and report back if you’re interested.

Anywhooo, it’s back to work today and we’re diving head-first into this busy week. Here’s what we’ll nosh on as we go:

Breakfast:
Blueberry & Raspberry Baked Oatmeal – This one is a perennial favorite and a real crowd-pleaser. We prepare this bake when we have overnight guests.

Lunch:

Breakfast Scramble Meal Prep Bowls – We love breakfast for dinner, or anytime, really! I add extra bell peppers to this recipe and use two tablespoons taco seasoning mix.

Layered Salad – We divide this recipe in half for the two of us. Add the dressing just before serving. Also, I love ya, Pioneer Woman, but you’re layering this all wrong. Everyone knows the cheese goes on top of the salad. But, we’ll play it your way for now.

Strawberry Chicken Salad with Avocado Dressing – You want an avocado that is guac-ready for this dressing. If not, the dressing could be bitter, instead of creamy.

Snacks:
Along with our usual popcorn and go-to warm weather snack of fresh watermelon, I’m making these real food cookie dough balls.

Chocolate Chip Cookie Dough Balls – New Recipe! Pre-exercise fuel, or post-exercise treat? That’s your call. I used a 1″ cookie scoop and this recipe yielded 30 balls. As with most real food treats, store these preservative-free babies in the fridge or freezer.

Treat:
Grilled Pineapple with Ricotta and Honey – Yum! Grilled fruit is amazing. The pineapple is so sweet, I don’t think this needs the drizzle of honey.

Real Food Menu for Week of 10.13.2019

Well, if this isn’t the most autumnal menu, I don’t know what is! I think we’ve covered all of the bases with apples, pears, nuts, seeds, pumpkin and even a touch of pumpkin pie spice.

Breakfast:
Pumpkin Seed Granola – New Recipe! This is scrummy! (I feel like I don’t use that word enough in casual conversation.) I sweetened with monk fruit instead of maple syrup. Without the syrup to bind it, my granola didn’t form clusters when baked, but that doesn’t affect the flavor one bit. I added lots of cinnamon (3 tablespoons or so) and a dash of vanilla. Bonus points for making your house smell like pumpkin pie while it’s baking. This would be delicious with diced apples on top.

Bake until it’s golden brown.

Lunch:
Greek Chicken and Rice Bowls – New Recipe! We’ll leave the olives and feta out of Mark’s. The dressing is red, because I used the last of the purple basil from the herb garden. This recipe is a winner!

Spicy Pumpkin Chili – New Recipe! So good. I used 1/4 tsp. crushed red pepper flakes and one can of kidney beans and black beans. I omitted the chickpeas. We’re not anti-chickpea, I just didn’t have any on hand.

Autumn Pear and Goat Cheese Chicken Salad – New Recipe! Do yourself a favor, and make this salad. It’s amazing. I ran out of goat cheese, so I used parmesan. Delicious!

Meal Prep for Week of 7.7.2019

Y’all. It’s hot in Virginia.
Like, surface of the sun, hot. Gimmie all the salads, hot. Too hot for cooking, hot. Maybe we should grill a burger or piece of chicken? Keep that heat outside of the house.

Breakfast:

Grilled Burgers on Lettuce Buns – We stopped at Five Guys on the way back from the beach and had their cheeseburger in a lettuce wrap. So good! I’m trying to recreate that at home.

Dilled Tuna-Stuffed Tomatoes – New Recipe! My cousin made this delicious tuna salad and shared the recipe with me. Thanks, Ruby! I’ve made it twice three times in the last week. I might be just a little obsessed.

Dilled Tuna-Stuffed Tomatoes
adapted from The Supermarket Diet Cookbook
Prep: 25 minutes
Makes: 4 servings
2 cans (6 ounces each) solid white tuna in water, drained and flaked
5 T. mayonnaise – I like Sir Kensington‘s
2 medium cucumbers, unpeeled, cut into 1/4 inch pieces – or one English cucumber
1/4 cup loosely packed fresh dill, finely chopped
2 T. capers, drained and finely chopped
2 T. fresh lemon juice
1 T. Dijon mustard
1/4 tsp. freshly ground black pepper
4 large, ripe tomatoes (12 ounces each)

1) In medium bowl combine tuna, mayonnaise, cucumbers, dill, capers, lemon juice, mustard and pepper.
2) Cut each tomato, from blossom end, into 6 attached wedges, being careful not to cut all the way through. Spoon one-fourth of tuna mixture into center of each tomato.

Snacks:
I’ve found that I’m not really hungry between meals on keto.
