Rainbow Fruit with 3 Healthy Dips

You won’t miss the sugary cereal or rainbow colored candies this St. Patrick’s Day; these tasty treats will satisfy your sweet tooth and that of any visiting leprechauns! The fruit dips are all gluten free and two of them are nut free.

Rainbow Fruit Tray:
Choose any fruit that you enjoy in the colors of the rainbow. Cut into similar size pieces and arrange in ROYGBIV order.

Rainbow Skewers:
Starting with the purple fruit, guide it onto the pointed end of a 6″ wooden skewer. Slide the fruit toward the flat end, leaving about 1″ of skewer exposed. This will function as a handle. Work in rainbow order to the red fruit. If you’re using strawberries for ‘red’, be sure to leave enough space on the pointed end of the skewer to hold it securely.

Now on to the dips!

Peanut Butter Dip: I made this dip without any modifications. Try dipping red grapes in this one. It has all the flavor of a peanut butter and jelly sandwich!

Skinny Chocolate Fruit Dip: I doubled the batch to make one cup. Instead of coconut sugar, I used honey. I left out the almond extract and added one teaspoon of Godiva chocolate liqueur. I sprinkled a few Lily’s chocolate chips for garnish. This dip is amazing with strawberries and orange slices.

We try to eat 90/10. 90% foods made in nature and 10% or less of foods made in a factory. These chocolate chips are part of that 10% and we enjoy them as an occasional treat.

Creamy Lemon Fruit Dip: I made this according to the recipe. It’s light, refreshing and just sweet enough. The recipe lists “lemon peel” under toppings where it should say “lemon zest”. I don’t think lemon peel would be very tasty mixed into this dip. Because this dip is not as thick as the others, it would be fantastic drizzled over a fruit salad or mixed berries.

Luck of the Irish Mini Bunting

Here’s a fun project for your St. Patrick’s celebration. This craft is simple, low-cost and adaptable to the materials you have on hand.

Kiss Me and Lucky Bunting Directions

Kiss Me: Green patterned cardstock, gold letter stickers, paper cutter (or ruler, pencil and scissors), glue, 20” of baker’s twine, 12” wooden skewers

I used scrapbooking cardstock from American Crafts.

Lucky: Gold metallic card stock, gold glitter letter stickers, paper cutter or ruler, pencil and scissors, glue, thin, 20” gold yarn or string, 12” wooden skewers

I used Aleene’s Clear Gel Tacky Glue for both of these buntings.

Cutting the cardstock background flags:
Determine the size you will need by measuring the largest letter sticker you will use. The Kiss Me and Lucky letter flags are approximately 2” x 1 1/8”.  To make the notch in the bottom of the flag, measure ¼” from the bottom and mark it. Now find the center and mark it. With a ruler or straight edge, draw a line from the center point to the corner of the flag. Cut along the lines.

Apply the stickers to the front of the flags, taking care to line them up neatly. I did not have a shamrock sticker for the “kiss me” banner, so I cut teardrop shapes out of another sticker to form the leaves and cut a thin curved stem. Now we’ve found a use for all those “Q” stickers! Place a thin line of glue across the top of each letter flag and adhere to the string. Let dry, tie the string to skewers and you’re done!

Rainbow Bunting Directions

Materials: White cardstock, washi tape in rainbow colors (alt: cardstock in rainbow colors), micro pom-poms, (these are 3/8”) paper cutter (or ruler, pencil and scissors), glue, 20” baker’s twine, 12” wooden skewers

If you are using paper for the rainbow bunting, Aleene’s Clear Gel Tacky Glue will work just fine to glue the micro pom-poms. If you’re using washi tape, I recommend Beacon Gem-Tac. It bonds well to slick surfaces.

Neatly apply washi tape to white cardstock. If your washi tape has a repeating pattern, make sure to line it up carefully. Next, cut out the flags. The rainbow flags are 1 5/8” x 1 5/8”. To make the inverted triangle, find the center of the bottom edge and mark it with a pencil. Draw a line from that mark to the top left corner. Repeat on the right side and cut along the lines. Now that the individual flags are cut, place a thin line of glue across the top and apply the micro pom-poms. Let dry. Once dry, turn them over and apply a thin line of glue across the top of each flag and adhere to the string in rainbow order. Let dry, tie the string to skewers and you are done!

Don’t have a cake plate? Here’s an easy way to create one: Use a coordinating dinner plate and bowl, turn the bowl over and place the plate on top. Super simple. You can use a dab of hot glue to hold them together temporarily. I don’t recommend hot gluing Grandma’s china, but sturdy dishes will be fine. The glue peels right off when you are done with your “cake stand”.

If you don’t have wooden skewers, use fun paper straws instead!

Rainbow Cobb Salad: This one is more assembly than a recipe. Layer your favorite lettuce in the bottom of a large serving dish and then working in rows, place your other ingredients in rainbow order like the photo below. We served this salad when we had family visiting and it is great for parties because your guests can pick and choose what they want.

Lettuce layer: Use any lettuce that you enjoy. We like romaine and baby spinach.
Red (and pink): Do you like how I’ve added pink to the rainbow?
Beets, Cubed Ham, Bacon crumbles, Tomatoes, Sweet Bell Peppers
Orange: Carrots, Sweet Bell Peppers
Yellow: Sweet Bell Peppers, Quartered Hard Boiled Eggs, Corn
Green: Cucumbers, Broccoli, Bell Peppers
Blue: Hmm. There aren’t too many blue veggies out there, so let’s skip right to purple. We layered in pepper jack cheese. Use any cheese you like.
Purple: Red Onions, Purple Broccoli (if you can find it), Shredded Red Cabbage
Serve with your favorite dressing.

Snacks:

Style Your Books for St. Paddy’s

March means rainbows and shamrocks at Arthurized Home and while we don’t go all out with an Irish theme, we add a few touches here and there. Here are some ways to bring the St. Paddy’s love with your books.

Rainbows: Gather up books with attractive spines and arrange them in rainbow order. The subjects don’t matter, you’re just looking for bright, eye-catching color.

Neutral with a touch of green: Maybe bright colors are not your thing. Grab a stack of books with a neutral look, stack them and add a nod to the holiday. I found these tea cups years ago at a thrift shop. These well-loved books belonged to my Hoosier Grandma, the Grand Dame of Irishwomen.

If you don’t have something similar, you could use a green tea cup or a small, potted shamrock. Shamrocks (oxalis) are cheap as chips in the grocery stores right now. Maybe tie a pale green ribbon around the books, or place a small bowl of gold foil-wrapped chocolates on top?

All green: This couldn’t be more simple. Stack books with green spines in an ombre gradient. Add a decorative item on top. Try a small gold candle, an air plant or a bowl of brightly colored candies.

This decor idea can be used with any holiday, red and green books at Christmas, Fall colors for September through November, etc. Have fun playing with it!

7 Great Ways To Get Plants For Free

Don’t you just love getting something for free? What better way to improve your garden than to add some green without spending any green?

Self Seeding and Spreading Plants: These beauties will do the work for you! Plunk them in the ground and let them do their thing. Water them well for a few weeks until they are established and walk away. Seriously. Plants to try: Sedum, Vinca Major, Vinca Minor, Solomon’s Seal

When we moved houses we brought along a few Solomon’s Seal plants. They’ve since spread to fill in this bed.

Sweat Equity – Trade a little Work: Last Spring I spotted daffodils growing in the woods behind the building where I work. I struck a deal with the property owner to transplant half of them into a landscaping bed in front of the building in exchange for the other half of the bulbs. I brought about 7 large clusters of bulbs home.

Dividing: Dig the plant up by the roots and slice it in half if it’s small or into more sections if it is a large plant. Be sure to leave plenty of healthy roots on each section. Hosta, Liriope and Scented Geraniums all take this well.

Layering: This technique works well for one of my favorite plants, the hydrangea. With an investment of a little work and some patience, you can have a sweep of hydrangeas for free. Here’s how: In the Fall, find a healthy lower branch of the plant without flowers. Without disturbing the leaves at the tip, break off the next lower set of leaves down to the branch. The place where you removed the leaves is the node. Gently lower the node to the ground, loosen the soil under the node, then pile about an inch of soil over the node and place a rock or brick over to hold it in place. Water occasionally if needed. Wait until Spring and check on your plants. New growth at the tip of the branch indicates that your baby plant has taken root. Leaving the rock or brick in place, snip the branch between the weight and the mother plant and wait a few more weeks before transplanting the baby. Try this with Forsythia too.

Propagate in Water: My brother and sister-in-law had beautiful purple sedum in their wedding centerpieces. Afterwards, I took several of the cuttings and placed them in clear glasses of water on my kitchen window sill. Topping off the water occasionally, in a few weeks they had formed nice long roots. I then transplanted them into pots and eventually into a garden bed.

Municipal Swaps and Give Away: A neighboring town hosts a plant/bulb/seed swap at their library. Bring a plant, take a plant. At the end of the growing season, our city offers a plant give-away. They remove flowers and grasses from municipal planting beds and heap them up in a parking lot. There is usually a mix of annuals and perennials, so it helps to know which plants you want and what type of care they will need.

Pass Along: These may be the best plants yet; plants with a story. I love to walk around my yard looking at plants that came from my Grandma’s garden in the Midwest. I have pink peonies from plants that my Mom recalls watching my Grandpa dig up from his mother’s yard nearly 60 years ago. I have Lily of the Valley from my in-law’s garden and loads of pass-alongs from my sister-in-law.
