Real Food Menu for Week of 3.15.2021

I’ve recently learned about colcannon for St. Patrick’s day and I’ve gotta say, I’m intrigued, but skeptical. My concerns are threefold. Will the combination of cabbage and potatoes ruin perfectly good potatoes? Will the potatoes ruin perfectly good cabbage? If I fry up the leftovers, have I actually made Bubble & Squeak? So many questions.

On my friend Sue’s suggestion, we’ll try this little Irish goodie for dinner on St. Pat’s with that steak tagliata. Here’s what we’re eating the rest of the week:

Mark’s Breakfast:

Pumpkin Spice Overnight Oats – When berries aren’t in season, these oats are a nice breakfast option. They’re great eaten cold with a dollop of Greek yogurt and a sprinkle of cinnamon, or heat and eat minus the toppings.

Mark’s Lunch:
Slow Cooker Cabbage Roll Soup – While we’re on a cabbage roll….(heh. see what I did there?)

All the flavors, none of that pesky stuffing and rolling cabbage leaves. This soup stores and reheats well. The recipe says it yields 12 servings. Maybe if you’re feeding tiny people? This makes 8 hearty bowls of soup.

We like a ‘lil parm on top.

Dinners:

Curry Roasted Carrots (new Recipe!) Here’s a flavor combo we haven’t tried before. Why not give it a whirl? We love curry and we love roasted veggies. Turns out, it’s delicious!

We’ll serve it with this salmon:

Chop Chop Fresh Veggie Salad – So crunchy and fresh! I love that these veggies are available year round, so we don’t have to wait for garden produce to enjoy this salad.

Sliced Steak Tagliata – This delicious steak dinner is super simple to prepare and would make a nice meal for foodie guests. It looks fancier than it is. Instead of sweet potato fries, we’re giving a side of colcannon a try.

Veggie Packed Fried Rice – New Recipe! Coconut aminos or gluten-free tamari are good substitutes for soy sauce. Whatever sauce you use, reserve a little to drizzle on top when serving.

Snack:
Popcorn, bananas, apples, grapes and cucumber slices with hummus.

Treat:
Chocolate Chip Chickpea Blondies – I was recently chatting with a friend about how I sneak chickpeas by Mr. Arthur’s discerning palate. This treat is one of those ways. We like these blondies with Lily’s chocolate chips.

I hope your week is a happy one, filled with only pleasant shenanigans!

Meal Prep for the week of 3.10.2019

We’re sticking to a mostly Irish/St. Paddy’s theme with our menu planning this week. I’m also trying something new. I’m posting the recipe link in the menu so that you don’t wear out your scrolling finger! Here’s the menu:

Breakfast:
PBJ Overnight Oats – we tried these for the first time a few weeks back and they were a hit! https://cleanfoodcrush.com/clean-eating-pb-j-overnight-oats/

Lunch:
Stuffed Bell Pepper Soup https://cleanfoodcrush.com/clean-eating-stuffed-bell-pepper-soup/
Cheesy Cauliflower Muffins https://kirbiecravings.com/cheesy-cauliflower-muffins/

Dinner:
Teriyaki Salmon with Broccoli and Carrots – I use gluten free tamari instead of the soy sauce. https://cleanfoodcrush.com/homemade-teriyaki-salmon-meal-prep/

Balsamic Beef Roast – I’m making enough of this roast to use the beef in Shepherd’s Pie the following day. https://www.5dollardinners.com/balsamic-beef-roast/

Gluten Free Shepherd’s Pie – https://www.noshtastic.com/easy-shepherds-pie/
Take a little help from the grocery store if you don’t want to make mashed potatoes. Bob Evans All Natural Homestyle Classic Mashed Potatoes are made with the same ingredients you would use at home.

Shepherd’s Pie won’t win any beauty contests, but it’s so tasty!

Clean convenience food. This is the package you are looking for.
Make sure that it says All Natural, not Original.
Made with: Potatoes, Milk, Butter and Salt.

Sliced Steak Tagliata with Sweet Potato Wedges and Warm Tomatoes in Vinaigrette – This dish sounds fancier than it is and comes together very quickly.

Steak Tagliata

Rainbow Cobb Salad: This one is more assembly than a recipe. Layer your favorite lettuce in the bottom of a large serving dish and then working in rows, place your other ingredients in rainbow order like the photo below. We served this salad when we had family visiting and it is great for parties because your guests can pick and choose what they want.

Lettuce layer: Use any lettuce that you enjoy. We like romaine and baby spinach.
Red (and pink): Do you like how I’ve added pink to the rainbow?
Beets, Cubed Ham, Bacon crumbles, Tomatoes, Sweet Bell Peppers
Orange: Carrots, Sweet Bell Peppers
Yellow: Sweet Bell Peppers, Quartered Hard Boiled Eggs, Corn
Green: Cucumbers, Broccoli, Bell Peppers
Blue: Hmm. There aren’t too many blue veggies out there, so let’s skip right to purple. We layered in pepper jack cheese. Use any cheese you like.
Purple: Red Onions, Purple Broccoli (if you can find it), Shredded Red Cabbage
Serve with your favorite dressing.

Snacks:
Apples and peanut butter, Veggies and homemade dill dip, Bananas, Oranges, Pineapple and Cantaloupe

Treat:
Chocolate Chip Chickpea Blondies https://cleanfoodcrush.com/chocolate-chickpea-blondies/

Let me know if you try these recipes. I hope your week is filled with St. Paddy’s fun and shenanigans!
