Real Food Menu for Week of 10.12.2020

This rainy, but busy weekend was filled with last minute plans. On Friday, a friend and I hatched a plan to walk the Salem Half Marathon on Saturday morning. We chatted and strolled that hilly(!) course in light drizzle. The remnants of hurricane Delta. While in Salem I discovered a new gardening project that consumed the second half of the day. I kind of {heart} emergency gardening! More on that later if all goes well.

This week’s menu is chock full of some of our very favorite meals! If it ain’t broke, don’t fix it:

Mark’s Breakfast:
PBJ Overnight Oats – All the flavors of the sandwich for breakfast! None of that unnecessary bread.

Mark’s Lunch:
Spicy Pumpkin Chili – So good. I used 1/4 tsp. crushed red pepper flakes and one can each of kidney beans and black beans. This keeps for several days in the fridge, tastes even better reheated and freezes well. That’s a cooking win in my book!

Dinners:

Autumn Pear and Goat Cheese Chicken Salad – Tried and true! Very customizable. Add what you like, leave out the rest. We sub parmesan for the goat cheese.

Eggs in Tomato Sauce with Chickpeas and Spinach – New Recipe! Here’s a satisfying meatless meal. It won’t win any beauty contests, but it’s tasty nonetheless. The touch of cream cuts the acidity of the tomatoes.

Crock-Pot Italian Chicken Soup – Creamy (dairy-free!) and packed with flavor, this recipe is a favorite! It’s very forgiving; use whatever veggies you most enjoy. If including broccoli, add it during the last hour of cooking so it doesn’t get mushy. Top with chopped parsley and a little parmesan cheese if you like.

Turkey Stuffed Bell Peppers – Because I’m no longer doing keto, I use ground turkey and add a little pre-cooked brown rice to the filling. These freeze well; make a few extra to keep on hand for one of those too-busy-to-cook evenings.

Snack:
No Bake Energy Balls – New Recipe! Okay, so these are dangerous! We rated these little goodies a 10. Use them for a snack, treat, pre or post work-out. Go ahead and make a double batch and stash some in the freezer…if they make it that far.

Treat:
Skinny Chocolate Fruit Dip for One – Or double the batch and make enough for two! We like a sprinkle of Lily’s chocolate chips. This dip is delicious with strawberries or orange slices. For the other fruit dips pictured here, see this post.

Real Food Menu for Week of 12.15.2019

Slowly but surely, we’re decorating the house for Christmas. We’ve never been early decorators, although I admire those who are. I just can’t get it together. We buy our tree later in the season, so it is fresh for our family visiting between Christmas and New Year’s Day. Don’t want the tree to be the first to leave the party!

Some years we’ve had to buy the Charlie Brown trees due to our tardiness, but we love the scraggly ones just the same. Amid all the last-minute preparations, here’s what we’re eating this week:

Breakfast:
Healthy Carrot Cake Baked Oatmeal – Smells and tastes amazing! Bake once, and eat breakfast all week long. We doubled the cinnamon and cut the carbs by using monk fruit maple flavored syrup. Serve with a dollop of Greek yogurt for a protein boost.

Snacks:
Bananas, Apples, Grapes, Avocados, Oranges. Almost daily, Mark makes popcorn in his Whirley-Pop. Who needs potato chips when you’ve got a fresh bowl of hot popcorn? A sprinkling of Lily’s chocolate chips makes it a decadent treat.
We’re also having roasted red pepper hummus with cucumber slices, and an antipasto snack of olives, grape tomatoes and mozzarella pearls. And by *we* I mean *me*; Mark doesn’t do hummus, or olives.

Treat: With all the Christmassing going on, we really don’t need a treat this week. See also, sprinkling chocolate chips on popcorn, above.

Real Food Menu for Week of 11.10.2019

I’m diving into crazy-busy season at work, so we’re giving the Crock-Pot a workout this week. I love coming home at night to a ready-made dinner.

Breakfast:
Slow Cooker Apple Pie Oatmeal – New Recipe! I’d never tried oats in the crock-pot before, but this recipe intrigued me. These took five hours to cook perfectly; an extra sprinkle of cinnamon on top, a drizzle of monk fruit syrup, because, why not?

Lunch:
Crock-pot Italian Chicken Soup – This recipe is an oldie but a goodie! Use whatever veggies you have on hand. This keeps well in the fridge for a few days. There’s no dairy in the soup, so it freezes well…if you have leftovers enough to freeze.

Jicama Sticks with Chili-Lime Dip – We’re serving cucumber slices with this as well. If you like a little extra kick, add a touch of cayenne or a few dashes of hot sauce.

Treat:
Vanilla Coconut Flour Paleo Cupcakes – New Recipe! Not Mediterranean Diet approved, but Mr. Arthur has been jonesing for a sweet treat. I used this frosting to minimize the carbs. The recipe says it yields eight cupcakes, but mine overflowed; next time I’ll make nine. We felt that these cupcakes were slightly too oily, so I’ll decrease the coconut oil to 1/4 cup as well. These cupcakes were surprisingly light and fluffy! Store these in the fridge, because they contain no preservatives.

Meal Prep for the Week of 3.3.2019

Here’s what we prepped on Sunday:

Breakfast:
Strawberries and Cream Overnight Oats (my husband can’t get enough of these!) We add blueberries when we have them on hand.

Lunch: Crockpot Italian Chicken Soup and Superhero Muffin, Convert Kale Salad or Cheesy Cauliflower Muffin

Crockpot Italian Chicken Soup – this is a favorite soup and very versatile. Use whatever frozen veggies you have on hand.

Dinners:
Chicken Sausage, Kale and Red Potato Soup
SW Chicken and Rice Bowls – like Chipotle, only you don’t have to stand in that line!

Roast Chicken with Carrots and Bacon – can you tell that chicken was on sale last week?! We’re practically clucking!
