Real Food Menu for Week of 10.12.2020

This rainy, but busy weekend was filled with last minute plans. On Friday, a friend and I hatched a plan to walk the Salem Half Marathon on Saturday morning. We chatted and strolled that hilly(!) course in light drizzle. The remnants of hurricane Delta. While in Salem I discovered a new gardening project that consumed the second half of the day. I kind of {heart} emergency gardening! More on that later if all goes well.

This week’s menu is chock full of some of our very favorite meals! If it ain’t broke, don’t fix it:

Mark’s Breakfast:
PBJ Overnight Oats – All the flavors of the sandwich for breakfast! None of that unnecessary bread.

Mark’s Lunch:
Spicy Pumpkin Chili – So good. I used 1/4 tsp. crushed red pepper flakes and one can each of kidney beans and black beans. This keeps for several days in the fridge, tastes even better reheated and freezes well. That’s a cooking win in my book!

Dinners:

Autumn Pear and Goat Cheese Chicken Salad – Tried and true! Very customizable. Add what you like, leave out the rest. We sub parmesan for the goat cheese.

Eggs in Tomato Sauce with Chickpeas and Spinach – New Recipe! Here’s a satisfying meatless meal. It won’t win any beauty contests, but it’s tasty nonetheless. The touch of cream cuts the acidity of the tomatoes.

Crock-Pot Italian Chicken Soup – Creamy (dairy-free!) and packed with flavor, this recipe is a favorite! It’s very forgiving; use whatever veggies you most enjoy. If including broccoli, add it during the last hour of cooking so it doesn’t get mushy. Top with chopped parsley and a little parmesan cheese if you like.

Turkey Stuffed Bell Peppers – Because I’m no longer doing keto, I use ground turkey and add a little pre-cooked brown rice to the filling. These freeze well; make a few extra to keep on hand for one of those too-busy-to-cook evenings.

Snack:
No Bake Energy Balls – New Recipe! Okay, so these are dangerous! We rated these little goodies a 10. Use them for a snack, treat, pre or post work-out. Go ahead and make a double batch and stash some in the freezer…if they make it that far.

Treat:

Real Food Menu for Week of 7.13.2020

Since I’ve been on the Mediterranean diet, I’ve been in a bit of a fruit and nuts rut where snacks are concerned. I’ve recently found za’atar spice, and this one is a game-changer! I want to sprinkle this Middle Eastern seasoning onto nearly everything. Delicious on fish and chicken, it would be equally at home in place of Italian seasoning in salads and savory side dishes. (Say that three times fast!) I found za’atar locally at Kroger. See how we’re seasoning and snacking with it below.

Breakfast:
PBJ Overnight Oats – An old standby, and perfect for hot (already!) summer mornings.

Lunch:
Convert Kale Salad – We mixed up a double batch of this favorite salad for Mark to enjoy at lunch. It’s been so hot here that a cool plate of salad and a sliver of watermelon are all he really wants mid-day.

Dinner:

Marinated Three Bean Salad – New Recipe! – Here’s a Mediterranean twist on the traditional three bean salad. If the dressing is too tart for your liking, add a touch of honey. Just a teaspoon should do.

Middle Eastern Chicken Kebabs – Oh my word! Sprinkle some za’atar on these babies! When we’re cooking for a crowd, we use bamboo skewers, but when it’s just the two of us, we use stainless.

Grilled Peach Quinoa Salad with Homemade Balsamic Vinaigrette – New Recipe! The unusual flavor combos in this dish surprised us. I never would have paired peaches and kalamata olives together, but it works beautifully! Make a little extra dressing; it might just become a new favorite.

Bowl of Doom – The name sounds ominous, but this dish is filled with all good things. Use whatever ground meat you have on hand, or go meatless for a vegetarian option. Packed with protein, it’s delicious any time of the day.

Snacks:
Watermelon, Cucumber slices with hummus, Za’atar Snack – New! Take dipping bread in olive oil one step further with this flavorful snack. There’s no real recipe here, just dip crusty bread in good olive oil and then lightly dip in za’atar spice and eat.

Treat:
Avocado, Coconut and Sweet Potato Brownies – New Recipe – This one is a bit of a swing and a miss, but I thought I would share it anyway. While the flavor was good, the texture was just a bit…off. These remind me of that time I made a batch of fudge that just never quite set up. YMMV.

Real Food Meal Prep for Week of 4.21.2019

We’re eating Easter leftovers for the next few days, so meal prep this week is super easy. I don’t think we will need five dinners, but two are simple salads that we can eat along side our leftovers. Here is this week’s plan:

Breakfast:
PB&J Overnight Oats – Yes, we’re a one-trick pony! But it’s a tasty trick.

Chicken with Carrots and Bacon – We saute the bacon and serve it crumbled on top of the chicken. No, this dish is not swimming in grease, it’s a tasty white wine sauce!

Best Ever Broccoli Salad – This salad is served warm and is a nice alternative to the classic broccoli salads with mayonnaise based dressing. Three tablespoons of vinegar is a little too tangy for our tastes, so we use two.

Greek Salad – I left the black olives and feta out because Mr. Arthurized Home doesn’t care for them. This salad is just as tasty without them. We leave the pinch of sugar out as well. This recipe has been a favorite for several years and will be in regular rotation all summer long.

Happy Monday to you! Our weekend was crazy-busy which is a little unusual for us. We painted our bedroom last week so we played catch-up on all the delayed chores while the house was turned upside down.

Tuesday, April 2nd is National Peanut Butter and Jelly Day in the US, so it seems like the perfect time for PBJ Overnight Oats. Plus, they’re insanely tasty! For a smooth mixture, whisk the PB and J together before the other ingredients.

Meatballs and Marinara with Zoodles – I don’t bother baking the meatballs separately. In a large skillet, bring the marinara sauce to a simmer and carefully place the meatballs in the sauce so they are not touching each other. Simmer for about twenty minutes or until cooked through. While the meatballs are simmering. saute the zucchini noodles in a separate skillet. Drain liquids from the zoodles and serve with meatballs and sauce on top. Sliced Steak Tagliata with Sweet Potato Wedges and Warm Tomatoes in Vinaigrette – This dish sounds fancier than it is and comes together very quickly.

Rainbow Cobb Salad: This one is more assembly than a recipe. Layer your favorite lettuce in the bottom of a large serving dish and then working in rows, place your other ingredients in rainbow order like the photo below. We served this salad when we had family visiting and it is great for parties because your guests can pick and choose what they want.

Lettuce layer: Use any lettuce that you enjoy. We like romaine and baby spinach.
Red (and pink): Do you like how I’ve added pink to the rainbow?
Beets, Cubed Ham, Bacon crumbles, Tomatoes, Sweet Bell Peppers
Orange: Carrots, Sweet Bell Peppers
Yellow: Sweet Bell Peppers, Quartered Hard Boiled Eggs, Corn
Green: Cucumbers, Broccoli, Bell Peppers
Blue: Hmm. There aren’t too many blue veggies out there, so let’s skip right to purple. We layered in pepper jack cheese. Use any cheese you like.
Purple: Red Onions, Purple Broccoli (if you can find it), Shredded Red Cabbage
Serve with your favorite dressing.

Snacks:
Apples and peanut butter, Veggies and homemade dill dip, Bananas, Oranges, Pineapple and Cantaloupe
