Real Food Menu for Week of 3.8.2021

Well, it’s been a quiet week in Lake Woebegone. Haha! The weekend weather finally cooperated (somewhat, it was still COLD) giving us an opportunity to work on a few home projects. and of course I was in my happy place working on a couple of baby doll scrap quilts for OCC shoeboxes. We haven’t been particularly adventurous in the food department lately, preferring to fix a few tried and true dishes.

Here is what’s on the menu this week:

Mark’s Breakfast:
Chocolate Sweet Potato Breakfast Cookies – Healthy cookies are great for weekend meal prep. Pop one out of the fridge or freezer and warm for a quick grab-and-go breakfast. These store in the fridge for about a week or in the freezer for three months. I like to add a skosh of nutmeg to this preparation.
https://www.eatingbirdfood.com/sweet-potato-breakfast-cookies

Mark’s Lunch:
Easy Vegetarian Chili – I was a little concerned that vegetarian chili would just taste like, well, vegetable soup with beans, but this one surprised me! Look for good quality refried beans without inflammatory oils; I used Kroger’s Simple Truth Organic brand.
https://www.3fatchicks.com/diet-recipes/easy-vegetarian-chili

Dinners (We plan four dinners each week to leave room in the schedule for a leftovers night or to eat out.)

Spicy Roasted Chickpea Salad – Flavorful and satisfying, the spice in this salad is not heat. Since Mark doesn’t love avocado, we usually only use half at a time. I recently learned a little trick for storing a cut avocado: Place the avocado cut side down in a container of water. It will keep without oxidizing for a day or so.

Amazing Apricot Chicken – This company worthy chicken is a 10! Look for apricot jam that is prepared without added sugar.
https://www.hellofresh.com/recipes/amazing-apricot-chicken-5915b11d4f78db20234cb0c2

Italian Lentil Soup – We love lentils! With a simple substitution or two, this hearty recipe is easily made vegetarian or vegan. We carnivores can beef it up by adding some Italian sausage. Delish.
https://www.gimmesomeoven.com/italian-lentil-soup-recipe

Keto Philly Cheesesteak Skillet Dinner – So good! Mark can’t get enough steak; I should probably make this more often. We like to double the veggies in this quick weeknight dinner. The only *real* work is in slicing those peppers and onions.
https://www.eatingonadime.com/philly-cheese-steak-skillet-dinner

Snack:
Peanut Butter Fruit Dip: I make this dip without any modifications. Try dipping red grapes in this one. It has all the flavor of a peanut butter and jelly sandwich. We like it with apple slices too.

Treat:
See peanut butter dip, above! Between the breakfast cookies, fruit and peanut butter dip, I feel like we have enough treats this week!

Real Food Menu for Week of 11.30.2020

Well, it’s been a minute since I posted to the blog. Mark broke his foot in October and we’ve been a little, erm, hobbled since then. He’s on the mend now and things are slowly getting back to normal. Having an arsenal of real food recipes that I can prep on weekends has been a real lifesaver. My go-tos have been overnight oats, casseroles, soups and big salads. When making soups and casseroles, I like to double the batch and put half in the freezer.

Funny (and enormous!) card my sister sent to Mark.

Mark’s Breakfast:
Pumpkin Spice Overnight Oats – Still loving all things pumpkin.
https://cleanfoodcrush.com/pumpkin-pie-overnight-oats-recipe/

Mark’s Lunch:
Creamy Coconut Lentil Curry – Yum! We add 1/2 tsp. of garam masala and 1/2 tsp. of curry powder, for a little extra spice. Serve over brown rice. This keeps well in the fridge for a few days.
https://www.theendlessmeal.com/creamy-coconut-lentil-curry/

Peruvian Stir Fry (Lomo Saltado) – New Recipe! It would never occur to me to serve steak stir fry over steak fries, but here we are. And I’m glad we tried it. This dish certainly scratched the meat n’ taters itch for my carnivorous husband. Adapt for meatless by substituting portabellos for steak. We swap out gluten free tamari for the soy sauce.
https://www.100daysofrealfood.com/peruvian-stir-fry-lomo-saltado

Aztecan Quinoa Salad – My quinoa has a longer cooking time than the recipe, so I cooked it according to the package directions, cooled and fluffed it with a fork. You’ll need about three cups of cooked quinoa. The flavor profile is similar to our favorite Greek Salad.
https://www.foodnetwork.com/recipes/aztecan-quinoa-salad-recipe-1970211

Chicken and White Bean Soup – New Recipe! There’s just something about a bowl of hot soup that is so simple, yet satisfying. This one is savory and mild. Serve with a nice crusty bread if you like.
http://www.eatingwell.com/recipe/248881/chicken-white-bean-soup

Pickety Bits – Unfamiliar? It’s a charcuterie board, a grazing board, or whatever the trendy name for it is today. I prefer ‘pickety bits’. Essentially, you just arrange your favorite snacks on a serving board or platter and call it dinner. My kind of cooking. Perfect for a low-key evening; great for game night.

Snack:
Southwest Black Bean Dip – I used a red bell pepper for that pop of color, and doubled the chili powder and lime juice. Serve with cucumber slices or tortilla chips. We like Late July or Simple Truth Organic, but any clean brand of chips will do.
https://www.healthline.com/nutrition/healthy-dips-and-spreads

Treat:
Peanut Butter Fruit Dip – Try this with chilled red grapes; all the flavors of a PBJ, none of that carb-laden bread! If dips are your thing, you may be interested in this post, or this one.

Real Food Menu for Week of 5.18.2020

We’re coming off a fun and busy weekend. We had dinner and hung out with Pa Kettle on Friday night. On Saturday, we had our group run, participated in a “we miss you” parade for a friend and then went back to Pa Kettle’s house for some gardening fun. He taught me how to plant corn and we picked three huge bags of dill. We dug up a few small cedar trees and several white lilacs to transplant here.

I’ve got four new recipes for you this week. Here is the menu:

Breakfast:
Blueberry Pie Overnight Oatmeal – New Recipe! Mark raved about these.
https://cleanfoodcrush.com/clean-eating-blueberry-overnight-oatmeal/

Lunch:
Chicken Rice Soup – Yum! Comfort food at it’s best.
https://www.spendwithpennies.com/chicken-rice-soup/

Dinner: (We plan four dinners each week to leave room in the schedule for a leftovers night or to eat out.)

Strawberry Avocado Salad – New Recipe! We learned three things the first time we ate this salad:
1) Mr. Arthurized Home still dislikes avocado.
2) Mr. Arthurized Home added asiago cheese to the extensive list of Foods He Dislikes.
3) Mr. Arthurized Home would swim laps in a vat of that Honey Lime dressing. (Seriously. Try it! It’s that good.)

Cauliflower Pizza – We love this crust! I substitute ground flaxseed for the psyillium husks.
https://thestonesoup.com/blog/2016/09/27/cauliflower-pizza/

Cod in Fresh Tomato Basil Sauce – New Recipe! Not the prettiest dish on the planet, but a savory, light meal that won’t leave you feeling weighed down.
https://cleanfoodcrush.com/fresh-tomato-basil-cod-clean-eating/

Easy Vegetarian Chili – New Recipe! I was a little concerned that vegetarian chili would just taste like, well, vegetable soup with beans, but this one surprised me! Look for good quality refried beans without inflammatory oils; I used Kroger’s Simple Truth Organic brand.
https://www.3fatchicks.com/diet-recipes/easy-vegetarian-chili/

Snacks:
Watermelon – served nightly! Popcorn and the usual fruits: Bananas, apples, and berries.

Treat:
Peanut Butter Fruit Dip – Try this with chilled red grapes; all the flavors of a PBJ, none of that carb-laden bread! If dips are your thing, you may be interested in this post, or this one.

Real Food Meal Prep for Week of 5.5.2019

I’m inching closer to keto this week and sharing some family favorite recipes with you!

Ropa Vieja is a delicious, Cuban, shredded beef dish that I’ve made frequently over the past 18 years. My version is Americanized; I take some help from the store and use jarred salsa. If you serve it over cauliflower rice instead of white or brown rice, it’s very low carb. I love the richness of flavor that slow-roasting gives, so I use the Dutch oven. As a bonus, the house smell amazing while it cooks!

Here is this week’s menu:

Breakfast:
Blueberry Smoothie – New Recipe!
“Looks so bad, but it tastes so good.” – My husband
Y’all. I have laughed so hard over these smoothies which look NOTHING like the beautiful purple in the recipe photo. These look more like something you would serve at a Grinch party! Trust me, they are tasty, and you know you’re getting your daily dose of green goodness from the spinach. If the kids are constantly drinking your smoothie, offer them this and watch them recoil in horror! Looks can be deceiving.

Copycat Starbucks Keto Egg Bites – New Recipe!
https://laurenrabadi.com/2018/08/29/copycat-oven-baked-starbucks-keto-egg-bites/amp/?utm_medium=social&utm_source=pinterest&utm_campaign=tailwind_smartloop&utm_content=smartloop&utm_term=8803022

Lunch: Ropa Vieja
My husband will have his over brown rice, I’ll have cauliflower rice.

Ropa Vieja
325° for 2 1/2 to 3 hours
3 lbs beef chuck roast
1 package (1 oz.) dry onion soup mix – or make your own like this:
https://feedingbig.com/clean-eating-onion-soup-mix.html
1 onion, chopped
1 c. red wine
3 T. coconut oil
1/2 c. salsa – look for salsa with no added sugar
1/2 c. water – optional (I almost never add this)
Garnishes: sour cream, cilantro, lime wedges and avocado

Heat oil in dutch oven, over med-high. Add beef and brown on all sides . Reduce heat, add onion and cook until soft but not browned. Add onion soup mix, wine, salsa and water (if using). Bring to a boil. Cover and place in preheated oven for 2 1/2 to 3 hours. Check occasionally to make sure there is sufficient liquid in the pan, add more wine if necessary. Shred beef before serving. Serve over rice, or cauliflower rice for low carb. Garnish as desired.

Dinner:
Keto stuffed bell peppers with side salad
https://www.dietdoctor.com/recipes/stuffed-peppers-with-ground-beef-and-cheese

Guacamole Bacon Burgers on a lettuce bun – we make lettuce buns two ways:

  • Slice large rounds from the sides of a head of iceberg lettuce.
  • Stack several large leaves of romaine lettuce to make each half of a bun.

Strawberry Avocado Salad with Honey Lime Dressing
https://cleanfoodcrush.com/strawberry-avocado-salad-clean-eating/

Summer Squash Oregano – I found this recipe in Southern Living magazine years ago; and we make this all summer long. Well, as long as the squash from Pa Kettle’s garden are rolling in! Add some rolls or cloud bread, and you’ve got a nice vegetarian dinner.

Summer Squash Oregano – Serves 6 as a side dish
From Southern Living magazine
3 T. butter
1 medium yellow onion, minced
1 garlic clove, minced
1 small, green bell pepper, chopped
1 T. chopped, fresh oregano
3/4 lb. yellow squash, sliced
3/4 lb. zucchini, sliced
4 tomatoes, chopped
1/2 t. salt
1 tsp. pepper
1 c. grated parmesan
Melt butter in a large skillet; add onion, garlic and bell pepper, and saute until tender. Stir in oregano, yellow squash and zucchini; cover and cook, stirring occasionally for 15 minutes. Stir in tomato, salt and pepper; cook uncovered until squash is tender. Spoon into a serving dish and sprinkle with cheese.

Snacks:

Fruit for hubby: Grapes, bananas, pineapple, watermelon

Rainbow Fruit with 3 Healthy Dips

You won’t miss the sugary cereal or rainbow colored candies this St. Patrick’s Day; these tasty treats will satisfy your sweet tooth and that of any visiting leprechauns! The fruit dips are all gluten free and two of them are nut free.

Rainbow Fruit Tray:
Choose any fruit that you enjoy in the colors of the rainbow. Cut into similar size pieces and arrange in ROYGBIV order.

Rainbow Skewers:
Starting with the purple fruit, guide it onto the pointed end of a 6″ wooden skewer. Slide the fruit toward the flat end, leaving about 1″ of skewer exposed. This will function as a handle. Work in rainbow order to the red fruit. If you’re using strawberries for ‘red’, be sure to leave enough space on the pointed end of the skewer to hold it securely.

Now on to the dips!

Peanut Butter Dip: I made this dip without any modifications. Try dipping red grapes in this one. It has all the flavor of a peanut butter and jelly sandwich!

https://cleanfoodcrush.com/peanut-butter-fruit-dip-clean-eating/

Skinny Chocolate Fruit Dip: I doubled the batch to make one cup. Instead of coconut sugar, I used honey. I left out the almond extract and added one teaspoon of Godiva chocolate liqueur. I sprinkled a few Lily’s chocolate chips for garnish. This dip is amazing with strawberries and orange slices.

https://www.groundedandsurrounded.com/recipe/chocolate-fruit-dip/

We try to eat 90/10. 90% foods made in nature and 10% or less of foods made in a factory. These chocolate chips are part of that 10% and we enjoy them as an occasional treat.

Creamy Lemon Fruit Dip: I made this according to the recipe. It’s light, refreshing and just sweet enough. The recipe lists “lemon peel” under toppings where it should say “lemon zest”. I don’t think lemon peel would be very tasty mixed into this dip. Because this dip is not as thick as the others, it would be fantastic drizzled over a fruit salad or mixed berries.

https://www.superhealthykids.com/creamy-lemon-clean-eating-fruit-dip/

Drizzle that lemon dip over this!

I hope your St. Patrick’s Day is a happy one filled with all the shenanigans you can handle!
