Real Food Menu for Week of 3.2.2020

Are you better at eating real food when you keep healthy snacks on hand? For us, the key to cutting down on junk food has been simply this: Don’t have it in the house. Revolutionary, I know. There are very few cravings worth changing out of pajamas and leaving the house for. Thank God we don’t have grocery (or pizza!) delivery service out here in the country.

Having said that, sometimes you just get a hankerin’ for something a little sweet or a salty, crunchy snack. That’s why we add snacks and treats to our menus. I’m more than happy to munch on fresh veggies, hummus and parmesan chips if we have them ready to go when a craving hits.

Breakfast:
Homemade Granola – New Recipe! We doubled the cinnamon because we’re maniacs that way and added a sprinkle of nutmeg. Mark likes his granola with coconut milk and banana slices, I like mine with Greek yogurt and fresh berries.
https://www.5dollardinners.com/homemade-granola-sugar-free/

Lunch:
Weeknight Taco Soup – An old favorite, lightened up by substituting ground turkey for the beef. This tasty soup is great for meal prep because it keeps well in the fridge for a few days, or in the freezer for several weeks.

Dinner:

Cherry Tomato White Bean Salad – New Recipe! Can you say sensational, savory, and satisfying salad three times fast? You’re gonna need to. This one’s a dandy!
https://cleanfoodcrush.com/cherry-tomato-white-bean-salad/

Creamy Roasted Cauliflower Soup – What she lacks in visual appeal, she makes up for in flavor. Hubs loves this one.
https://cookieandkate.com/creamy-roasted-cauliflower-soup-recipe/

Stuffed Peppers with Ground Beef and Cheese – As per the Mediterranean Diet, we’re using ground turkey instead of ground beef. And since I’m not doing keto, I add a little cooked brown rice to the mixture. I bake these on a Silpat and don’t bother with the butter. These little crowd-pleasers freeze well.
https://www.dietdoctor.com/recipes/stuffed-peppers-with-ground-beef-and-cheese

Pickety Bits – This is the easiest dinner ever, and a great opportunity to clean out the fridge. There are no rules here. You know that half-eaten jar of pickles languishing in the fridge door? Use it up! Include a selection of fruits, fresh and pickled veggies, olives, meats, cheeses, nuts, crackers, dips and spreads. Dinner is served!

Snack:
Parmesan Chips – Crunchy, salty and delicious! I scale this recipe to make 6 servings, scoop with a cookie scoop and bake on a silpat. These pair well with soups and/or Netflix binges.
https://www.dietdoctor.com/recipes/parmesan-chips/servings/6

Treat:
Chocolate Almond Coconut Bites – New Recipe! This recipe made 18 bites. I added 1/4 tsp of salt to my batch. I’m going to experiment with using these as running fuel.

Have a great week, everyone!

Real Food Menu for Week of 1.26.2020

Ever since we deep-sixed our microwave, we’ve done a lot of our cooking in this toaster/convection oven. Because this little dude is more energy efficient than our full size oven, we’ve realized $20+ monthly savings on our power bill. It’s large enough to bake a 12″ pizza, and doesn’t heat up the kitchen like the full-sized oven does. I guess that’s not really a bonus this time of year, but we appreciate that benefit during warmer months.

Breakfast:
Healthy Carrot Cake Baked Oatmeal – So good. Don’t skimp on the cinnamon!
https://www.erinliveswhole.com/healthy-carrot-cake-baked-oatmeal/

Lunch:
Cauliflower Pizza – Here’s an old favorite made Mediterranean diet friendly by loading it up with veggies. I made two pizzas, so that Mark can have his favorite, pepperoni.
https://thestonesoup.com/blog/2016/09/27/cauliflower-pizza/

Dinner:

Carb Buster Breakfast – We love breakfast for dinner and this vegetarian meal is a satisfying, savory option!
https://www.foodnetwork.com/recipes/ree-drummond/carb-buster-breakfast-2324125

Chicken and Rice Soup – New Recipe! I’m subbing canned coconut milk for the evaporated milk. Don’t worry, the coconut adds creaminess, not coconut flavor.
https://www.spendwithpennies.com/chicken-rice-soup/

Chop Chop Fresh Veggie Salad – Do you crave fresh veggies in the winter, like I do? This is so refreshing.
https://cleanfoodcrush.com/chop-chop/

30 Minute Mustard Glazed Oven Baked Chicken Thighs
https://unsophisticook.com/baked-chicken-thighs/

Snacks: Popcorn (can’t stop, won’t stop), apple slices with cheddar, carrots with roasted red pepper hummus

Treat:
No Sugar Chocolate Chip Cookie Dough Dip – This is one of those 10% treats. Minus the chocolate chips, this recipe is processed sugar-free. We use these stevia sweetened chocolate chips. Hubs eats his with gluten free cookies, I’m having mine with apple slices. We sampled this dip with gluten free pretzels, and that’s a tasty combo as well.

Real Food Menu for Week of 11.17.2019

I feel like a kid at Christmas! National collection week is here for Operation Christmas Child. About 5,000 collection centers open in the U.S. on Monday. What a great way to kick off the holidays by meeting the practical needs of children in poverty while sharing Jesus with them. Many tireless volunteers will work all week long to collect an estimated 11 million boxes. Good news, great joy, indeed!

Breakfast:
Oatmeal with Raisins, Walnuts and Banana – Not really a recipe. Prepare your favorite version of oats and add toppings as desired. I like to add raisins to the water before boiling, so they plump up nicely. A drizzle of this is a tasty addition.

Lunch:
Greek Chicken Soup – Flavorful and light. We made this a few weeks ago and loved it. If you are reheating leftovers, warm it just until heated. If you boil it, you’ll have tiny bits of scrambled egg in your soup!
https://cleanfoodcrush.com/budget-friendly-greek-chicken-soup/

Dinner:
Autumn Pear and Goat Cheese Chicken Salad – So delicious, and Mark loves this dressing. I top with parmesan instead of goat cheese.
https://cleanfoodcrush.com/autumn-pear-goat-cheese-chicken-salad/

Turkey Herb Stuffing-Style Riced Cauliflower – New Recipe!
https://cleanfoodcrush.com/cauliflower-stuffing/

Huevos Rancheros – I used half the lime juice and added minced onion.
https://deliciouslyorganic.net/huevos-rancheros-without-the-grain/
Serve with clean corn tortillas if desired. Like these:

Marry Me Chicken – New Recipe! I hope it lives up to its name. I could use some new bling.
https://www.modernhoney.com/marry-me-chicken/

Mediterranean Green Lentil Soup – A family favorite.
https://www.unicornsinthekitchen.com/easy-mediterranean-green-lentil-soup/

Snack:
Hummus and cucumber slices, Grapes, Strawberries, and Popcorn

Treat:
Chocolate Peanut Butter Nice Cream – New Recipe! A treat for the Mister.

I’ve blogged about packing shoeboxes here and here. For more information on Operation Christmas Child, go here.

I hope your week brings all good things!

Meal Prep for Week of 6.2.2019

This past weekend was a blink-and-you-miss-it blur. We did loads of adulting and gardening. Hubby had a 16 mile trail race, and we spent some time catching up with friends we hadn’t seen in awhile.

Last night we watched a couple of deer work their way through, sampling from the delicious buffet that is our side yard. They completely ignored the herb garden, which made us wonder if they had bumped into the new fence and were spooked by it. Time will tell.

Diving into this week’s menu:

Breakfast:
Cloud Bread – New Recipe! I made two flavors; Parmesan and Everything Bagel. Will serve these with a schmear.
https://www.delish.com/cooking/recipe-ideas/a24749186/cloud-oopsie-bread-recipe/

Lunch:
We’re having a mixture of cold salads for lunch this week.
Mason Jar Spinach Salad – New Recipe! I made four of these salads. I substituted stevia sweetener for the sugar in the dressing. Instead of spooning the dressing into the bottom of the jar, I stored each portion in a tiny container.
https://www.theseasonedmom.com/wprm_print/57058

Zucchini Salad – New Recipe! I’m intrigued by the prospect of a low-carb imitation potato salad. UPDATE: We like this! I added a little extra mustard and three boiled eggs.
https://www.dietdoctor.com/recipes/zucchini-salad

Greek Salad – An old favorite

Greek Salad

Dinner:
Meatloaf, Green Beans and Mashed Cauliflower – New recipe! I substituted almond flour for the oatmeal in the meatloaf, and used prepared mashed cauliflower.
https://cleanfoodcrush.com/meatloaf-dinner/

Keto Western Omelettes – New Recipe! We love breakfast for dinner.
https://www.dietdoctor.com/recipes/keto-western-omelet

Cauliflower Pizza – This is as satisfying as “real” pizza; and has become a default when we need some dinner inspiration. I use ground flax seed (from Aldi) instead of the psyllium husk.
https://thestonesoup.com/blog/2016/09/27/cauliflower-pizza/

Southwestern Squash Casserole – To make this gluten free and lower in carbs, I’m substituting coconut flour for the wheat flour. UPDATE: Do not do this! The coconut flour did not incorporate well and the casserole was gritty as a result. It didn’t affect the flavor, just the texture. I’ll try arrowroot powder next.
https://12tomatoes.com/southwestern-squash-casserole/

Lemony Avocado Tuna Salad – We’re slightly obsessed.
https://cleanfoodcrush.com/eat-clean-lemony-avocado-tuna-salad/

Snacks:
I’m finding that I need fewer snacks on keto.
Pimento cheese and celery, cucumber slices, pickles, walnuts, green pepper strips
Beautiful carbs for hubby: Pineapple, grapes, bananas, watermelon, Tiny but Mighty popcorn

Treat:
Fresh Strawberries and Homemade Whipped Cream with Lily’s Chocolate Chips on top – If it ain’t broke, don’t fix it! I sweeten the cream with a packet or two of Whole Earth. This tasty keto treat is a good substitute for my nightly watermelon.

I hope that you will give some of these recipes a try. If you like them, let me know in the comments or via email at arthurized dot home at gmail dot com.
