Real Food Menu for Week of 12.8.2019

Oh, y’all. We are in the throes of it now. Christmas decorating, shopping, gift wrapping and cooking has begun in earnest. And I love all of it!

On Friday evening, we attended my company Christmas dinner at the historic Hotel Roanoke and Conference Center. The hotel absolutely sparkled from top to bottom with all the Christmas trees decorated by community groups. We’ll go back and stroll through one evening when it’s not as crowded. It’s a fun, local tradition and definitely worthwhile!

Here’s what’s cookin’ this week:

Breakfast:
Blueberry Coconut Chia Pudding –

Lunch:
Hearty Stuffed Bell Pepper Soup – Hello, old friend! We’re subbing ground turkey for the beef in this recipe. The brown rice and ground meat make this a filling lunch.

Dinner:

One Pan Balsamic Chicken and Veggies – Take some help from the store and use baby carrots. Ain’t no shame in that game!

Sukuma Wiki: A wintertime favorite dish. Again, lightening it up a little by subbing ground turkey for ground beef.

Simple Pumpkin Soup

  • Servings: 4 servings
  • Difficulty: Easy
  • Print

Gluten-free, dairy-free and delicious, comfort food

Ingredients

  • ½ c. onion, diced
  • 2 T. olive oil
  • 1 (15 oz.) can pumpkin puree
  • 1 tsp. salt
  • 1 T. maple syrup
  • ¼ tsp. nutmeg
  • pinch of cayenne (or to taste)
  • ¼ tsp. ground pepper
  • 2.5 cups chicken broth (or vegetable broth for vegetarian)
  • 1 (13.5 oz.) can coconut milk
  • Garnish with pepitas, if desired

Directions

  1. Dice the onions and gently brown with olive oil in a large saute pan.
  2. Add pumpkin puree, salt, maple syrup, nutmeg cayenne and ground pepper.
  3. Slowly add chicken broth and coconut milk. Heat through, but do not bring to a boil. Garnish as desired and serve.

Turkey Herbed Stuffing-Style Riced Cauliflower – Here’s a nice, light dinner or serve as a side dish with a piece of grilled chicken. For extra flavor, I like to add a tablespoon of poultry seasoning in addition to the other herbs.

Convert Kale Salad – We’re definitely getting our greens this week. It’s called ‘convert’ because people who think they don’t like kale, try it and convert. I usually sub in pecans for the pine nuts. Don’t skip the step of massaging the kale! Make this a day ahead, so the kale softens in the dressing. This is a good salad for meal prep as it keeps well in the fridge for a few days.

Real Food Meal Prep for Week of 5.19.2019

This week’s menu has several recipes with the flavors of restaurant meals, plus the added benefit of knowing (and controlling) what’s in our food.

Breakfast:
Keto Sausage, Egg and Cheese Biscuits – Prep these on Sunday and you won’t need the drive-thru for breakfast. These are nutrient dense and very filling.

I baked the sausage patties in the oven and used this genius method for the eggs. While slicing the biscuits with a bread knife, use a sawing motion without applying pressure. Let the knife do the work, so the biscuits don’t crumble.

Paleo Egg Roll in a Bowl – Edible dianthus is entirely optional, but it’s pretty!

Dinner:
Cheeseburger Salad – I know this sounds weird, but we eat warm meat over lettuce and call it taco salad, right? This is the same idea, just with the flavors of a cheeseburger. And guess what? We like it!

UPDATE: This is a tasty Asian inspired meal, but it ain’t General Tso’s! We’ll certainly make it again, but sadly, this did not scratch the itch.

Lemony Avocado and Tomato Tuna Salad – So refreshing! I subbed in cucumber because my avocado wasn’t ripe, and used tuna packed in olive oil, omitting the 2 T. of olive oil in the recipe.

Treat:
Peppermint Fat Bombs – I made a double batch using 1 tsp. of peppermint extract and 1 tsp. of honey for the sweetener. Divided by 30, the honey adds less than 1 gram of carbs per fat bomb. Adjust to your tastes.

Real Food Meal Prep for Week of 4.7.2019

Hmm, let’s see: Parmesan in the broccoli salad, mozzarella on the pizza and a cream cheese based spread for the banana bread. Yep, we’re heavier on dairy than usual this week.

Balsamic Chicken with Onions – We made this last week using chicken thighs and it was so good that my husband suggested we meal prep it for lunches this week with brown rice and broccoli on the side. I caramelized the onions well before baking.
I didn’t feel comfortable keeping chicken in the fridge for five days, so we kept Monday and Tuesday’s lunches in the refrigerator and put the rest in the freezer.

Perfect comfort food on a chilly spring day! This dish sounds more exotic than it is; and you may have the ingredients on hand already. The blend of spices is amazing. Be sure to drain excess grease from the ground beef if necessary.

Breakfast for Dinner – Scrambled Eggs, Bacon and Potatoes

We love breakfast for dinner!

Snacks: Cantaloupe, Apples & Peanut Butter, Grapefruit, Oranges, Bell Peppers, Cashews

It’s nice to have a healthy treat available throughout the week so that we don’t feel deprived or tempted by junk food. This banana bread is very nutrient dense, egg free, dairy free and of course, gluten free.

Maple Cream Cheese Spread
I added about a teaspoon of cinnamon and a pinch of nutmeg to the maple cream cheese frosting recipe linked below. You could whip chilled coconut cream for a dairy-free version. If your mixture is too thick to spread easily, mix in a tablespoon or two of milk or coconut milk.
