Real Food Menu for Week of 3.15.2021

I’ve recently learned about colcannon for St. Patrick’s day and I’ve gotta say, I’m intrigued, but skeptical. My concerns are threefold. Will the combination of cabbage and potatoes ruin perfectly good potatoes? Will the potatoes ruin perfectly good cabbage? If I fry up the leftovers, have I actually made Bubble & Squeak? So many questions.

On my friend Sue’s suggestion, we’ll try this little Irish goodie for dinner on St. Pat’s with that steak tagliata. Here’s what we’re eating the rest of the week:

Mark’s Breakfast:

Pumpkin Spice Overnight Oats – When berries aren’t in season, these oats are a nice breakfast option. They’re great eaten cold with a dollop of Greek yogurt and a sprinkle of cinnamon, or heat and eat minus the toppings.

Mark’s Lunch:
Slow Cooker Cabbage Roll Soup – While we’re on a cabbage roll….(heh. see what I did there?)

All the flavors, none of that pesky stuffing and rolling cabbage leaves. This soup stores and reheats well. The recipe says it yields 12 servings. Maybe if you’re feeding tiny people? This makes 8 hearty bowls of soup.

Dinners:

Curry Roasted Carrots (new Recipe!) Here’s a flavor combo we haven’t tried before. Why not give it a whirl? We love curry and we love roasted veggies. Turns out, it’s delicious!

Chop Chop Fresh Veggie Salad – So crunchy and fresh! I love that these veggies are available year round, so we don’t have to wait for garden produce to enjoy this salad.

Sliced Steak Tagliata – This delicious steak dinner is super simple to prepare and would make a nice meal for foodie guests. It looks fancier than it is. Instead of sweet potato fries, we’re giving a side of colcannon a try.

Veggie Packed Fried Rice – New Recipe! Coconut aminos or gluten-free tamari are good substitutes for soy sauce. Whatever sauce you use, reserve a little to drizzle on top when serving.

Snack:
Popcorn, bananas, apples, grapes and cucumber slices with hummus.

Treat:
Chocolate Chip Chickpea Blondies – I was recently chatting with a friend about how I sneak chickpeas by Mr. Arthur’s discerning palate. This treat is one of those ways. We like these blondies with Lily’s chocolate chips.

Real Food Menu for Week of 4.6.2020

For the past week and a half, I’ve been traveling nowhere except work and home. I feel like I’ve been on house arrest with work release! I’m coming out of that today, and I never thought I would be so happy to (cautiously) go to the grocery store, or for a socially-distanced run.

Cooking from the pantry has been a good experiment and we’ve proven to ourselves that it’s doable for a few weeks at a time, if necessary. When it looked like the Governor might place Virginia under shelter in place, I stocked up on veggies that are good keepers: cabbage, carrots and potatoes, etc. We’ll use some of those up in this week’s menu:

Breakfast:
Chocolate Pecan Sweet Potato Breakfast Cookies – If you don’t have a sweet potato, take a little help from the store and substitute canned pumpkin. We add a smidgen of nutmeg to the dough and a sprinkle of these chocolate chips.

Lunch:
Italian Lentil Soup – Classic! Don’t skimp on the veggies.

Spicy Roasted Chickpea Salad – New Recipe! Don’t let the word ‘spicy’, deter you from trying this one; this spice is not heat. Roast the chickpeas and make the dressing ahead of time for quick dinner prep.

Sheet Pan Garlic Butter Salmon and Red Potatoes – Serve with a green vegetable on the side, if you’re into that kind of thing.

Minute Steaks with Quick Chive Butter – I gotta admit, I’ve never been much of a steak fan, but Mark’s been craving them lately. This recipe is a tasty one!

Keto Western Omelette – New Recipe! – As with all Diet Doctor recipes, scale for your crowd. I chopped up extra onions, peppers and ham to freeze for another day. We love these quick, easy meals for evenings when we’re on the run, literally or figuratively.

Snacks:
I used up a bag of dried garbanzo beans last week making hummus and I’m still not sick of it. Hummus with carrots, cucumbers and bell pepper strips is the order of the day. Also, our requisite bananas, grapes, apples and popcorn. We really never tire of it.

Treat:
Double Dark Chocolate Brownies – So good! The recipe says to finely grate the zucchini, but we’re not trying to sneak vegetables past picky eaters, so I give my zukes a regular grate. You can see them in the finished product, similar to a chocolate zucchini bread. If that bothers you, go with the fine grate.

Meal Prep for Week of 3.24.19

We’re trying several new recipes this week. Three of these are recipes that we’ve made before and they are keepers! The baked oatmeal is a breakfast favorite. It’s an easy dish for guests and is a crowd-pleaser. The Steak Fajitas and Roast Chicken with Carrots and Bacon are tried and true as well.

Quick and easy Chicken Salad – I made a little extra dressing because we are serving this over a bed of baby spinach.

Snacks:

Greek Yogurt, Grapes, Mandarins, Cantaloupe, Pineapple
Bell Peppers and Cucumbers, Celery and Peanut Butter
Homemade Dill Dip is from this dressing recipe. We use Sir Kensington’s Organic Mayonnaise and substitute raw honey for the sugar. https://thepioneerwoman.com/cooking/layered-salad/

I found the joie containers at Home Goods; they hold about two tablespoons of dip. The tiny jar in the back is from a restaurant. It’s the perfect size for this use.

Treat:
