Real Food Menu for Week of 3.30.2020
Well, we’ve been under self-quarantine since last Wednesday. Not because either one of us is sick or exhibiting symptoms of COVID-19, but because one of my co-workers visited family from NYC last weekend. It’s just not worth the risk of inadvertently passing it to Pa Kettle, or anyone else for that matter.
While we’ve been home this weekend, we had two beautiful days to get some yard work done. We limbed up two enormous white pines to allow more sunlight to the garden, pruned back the flowering quince and planted 25 money plants that Pa Kettle left on our sidewalk Friday afternoon. Loads of work, not much to show for it yet.
I’m trying to get through to next Sunday without going to the grocery store, so here is our menu for the week:
Breakfast:
Keto Waffles – If you’re not keto, top these with anything you like. When I was doing keto we enjoyed these with homemade whipped cream and fresh berries.

Lunch:
Low Carb Taco Casserole – To punch up the flavor a bit, I add an extra tablespoon of taco seasoning. We use Clean Food Crush’s taco seasoning recipe. If I have enough spices on hand, I mix up a quadruple batch. We use it on anything taco related.

Dinner:
Slow Cooker Corn Chowder – New Recipe! This satisfying chowder is perfect for early spring while we’re still having sporadic chilly days. It’s dairy free, and could go vegan if using vegetable broth and omitting bacon as a garnish.

Lemony Avocado and Tomato Tuna Salad – We usually sub English cucumbers for the avocado, but it’s delicious with both.

Pizza Frittata – New Recipe! Baked in my 8″ cast iron skillet, this puffed up beautifully, deflated and left a gaping hole on one side of the frittata! I’ll use ten eggs the next time I make it.

Cheeseburger Salad Bowls – This salad is refreshing yet hearty; we’ve been craving it lately. Delicious with ground beef, or lighten it up a bit using ground turkey.

Snack:
Pistachios, Gouda snacking cheese (Aldi), hummus and carrot sticks, apples, bananas and the ever-present popcorn
Chocolate Coconut Snowballs – Can I get away with making these one more time before warm weather is here to stay? I use this chocolate for the coating.

Have a great week, everybody!
