Real Food Menu for Week of 10.5.2020

Virginia’s Blue Ridge showed off this weekend with cool nights and gorgeous, sunny days! Early morning temps were perfect for running, while late morning invited lazing around on patios and catching up with friends.

We did a little prep work for the secret garden we’re creating in our woods. And by that I mean we pulled all the Japanese stiltgrass we could get our hands on, and laid out the perimeter of our garden spot. We’ll work on that more as the weather gets colder. Read: after the snakes have gone to bed for the winter. If you’ve got suggestions for shade tolerant plants and native screening shrubs, I’m all ears.

Here is our menu for the new week:

Mark’s Breakfast:
Pumpkin Seed Granola – I use a 50:50 mixture of cinnamon and pumpkin pie spice, plus a dash of nutmeg. Bonus points for making your house smell like pumpkin pie while it’s baking. This would be delicious with diced apples on top.

Mark’s Lunch:
Creamy Tuscan Soup – I used leftover shredded chicken in this savory bowl o’ goodness.

Dinner:

Chipotle Lime Cauliflower Tacos – New recipe, and so, so flavorful! The smoky flavor of the chipotles in adobo make this dish sing. I blended the entire can of chipotles and adobo and portioned into tablespoon size puddles on a parchment lined cookie sheet. I popped them into the freezer and once frozen solid, transferred the discs to a freezer bag for later use.

  1. Dice the onions and gently brown with olive oil in a large saute pan.

Spinach and Roasted Beet Salad – New Recipe! If you’re like us and love earthy, roasted beets, you’ll enjoy this salad. This recipe serves one, so scale it for your crowd. You’ll need one beet per salad.

Snack:
Fresh Veggies with Chili-Lime Dip – While you’ve got the hot sauce and lime out for the cauliflower tacos, let’s whip up the perfect dip to accompany them. Sub Greek yogurt or full-fat sour cream here. Add a touch of cayenne or a few dashes of hot sauce for a little extra kick. If you don’t have jicama, cucumber slices and bell peppers are nice low calorie dippers.

Treat:
Maple Vanilla Baked Pears – If your pears could use a little something extra, try this recipe. It’s the perfect fall dessert.

Real Food Menu for Week of 11.10.2019

I’m diving into crazy-busy season at work, so we’re giving the Crock-Pot a workout this week. I love coming home at night to a ready-made dinner.

Breakfast:
Slow Cooker Apple Pie Oatmeal – New Recipe! I’d never tried oats in the crock-pot before, but this recipe intrigued me. These took five hours to cook perfectly; an extra sprinkle of cinnamon on top, a drizzle of monk fruit syrup, because, why not?

Lunch:
Crock-pot Italian Chicken Soup – This recipe is an oldie but a goodie! Use whatever veggies you have on hand. This keeps well in the fridge for a few days. There’s no dairy in the soup, so it freezes well…if you have leftovers enough to freeze.

Dinner:

Perfect Roast Chicken – Tried and true. Seriously, so good!

Marinated Salmon – Delish!

Spanish Chicken and Rice – New Recipe! I subbed brown rice for the wild rice. This recipe makes enough to feed a crowd. We had leftovers for days.

Garlic Butter Meatballs with Lemon Zucchini Noodles – This recipe has become a favorite.

Snack:
Jicama Sticks with Chili-Lime Dip – We’re serving cucumber slices with this as well. If you like a little extra kick, add a touch of cayenne or a few dashes of hot sauce.
https://www.marthastewart.com/317906/jicama-sticks-with-chili-lime-dip

Treat:
Vanilla Coconut Flour Paleo Cupcakes – New Recipe! Not Mediterranean Diet approved, but Mr. Arthur has been jonesing for a sweet treat. I used this frosting to minimize the carbs. The recipe says it yields eight cupcakes, but mine overflowed; next time I’ll make nine. We felt that these cupcakes were slightly too oily, so I’ll decrease the coconut oil to 1/4 cup as well. These cupcakes were surprisingly light and fluffy! Store these in the fridge, because they contain no preservatives.

Have a great week, everybody!

Real Food Menu for Week of 10.27.2019

Mr. Arthurized Home has lost about ten pounds, and and I’ve lost seventeen so far this year. Last weekend we went through our fall and winter clothes, tried everything on, and made a huge donation pile for charity. After doing that, we looked around and realized that we have very little left to wear this winter! Yikes. Because nudity is frowned upon at the office, I did some winter wardrobe shopping Friday night.

Except for some rain Sunday morning, the weather was beautiful this weekend. We buttoned up the herb garden for the winter with a few final tasks, a thorough weeding and a nice layer of mulch around the perennials. I’m so sad that the growing season is over; the herb garden has been my happy place this year.

Breakfast:
Mediterranean Cauliflower Rice Quiche – New Recipe! – We left the feta out and sprinkled black olives on half of the quiche. And seriously, how cute is this plate our nephew painted when he was four?!
https://cleanfoodcrush.com/mediterranean-cauliflower-rice-quiche/

Lunch:
Hearty Stuffed Pepper Soup – Tried and true! I attempted a picture of the steam rising from the pot of hot soup, but it just made the tomatoes look pink! Oh, well. If you like stuffed peppers, you’ll love this soup.

Dinner:

Mustard Glazed Baked Chicken Thighs with Green Beans – So simple, but flavorful!
https://unsophisticook.com/baked-chicken-thighs/

Avocado Chicken Chopped Salad – New Recipe!

Marinated Salmon – We made this last week, and it was so fantastic that we’re bringing it back again!
https://www.dinneratthezoo.com/marinated-salmon/

Huevos Rancheros – We still love breakfast for dinner and this dish is easy to whip up, especially with prepped refried black beans waiting in the refrigerator.

Autumn Pear and Goat Cheese Chicken Salad – Yum. I subbed Parmesan for goat cheese.
https://cleanfoodcrush.com/autumn-pear-goat-cheese-chicken-salad/

Snack:
Toasted Pumpkin Seeds – New Recipe!

Treat:
Maple Vanilla Baked Pears – New Recipe! If this isn’t autumn on a plate, I don’t know what is. Assemble in 5 minutes, pop into the oven and enjoy this for dessert tonight. I added nutmeg before baking, and put a dollop of Greek yogurt, and a sprinkle of pumpkin seed granola on top to serve. Delicious.
