Real Food Menu for Week of 3.1.2021

Debbie Downer checking in here! Well, it’s been a minute since I last posted our weekly menu. Let’s just call this year 2020 2.0! We both had COVID back in January including the delightful symptom of losing taste and smell. We still ate real food, but didn’t put much effort into cooking because dining became nourishment over enjoyment. Temperature and texture, rather than the nuances of flavors and aromas.

February’s gift has been a tendonitis flare in my wrist, rendering my dominant hand as useful as a paperweight. Mark has taken up most of the food prep and daily cooking while I whine about my wrist and freebase ibuprofen. It’s improving now; and I haven’t been entirely idle. I’m finishing up my third baby doll quilt for Operation Christmas Child shoeboxes.

Baby Burrito. Ha ha.

Anywhoo. On to this week’s eats.

Mark’s Breakfast:
Oatmeal with Toppings: This one isn’t a recipe other than what’s on the side of the oats canister. Mark is currently loving the apple raisin combo, so we add raisins to the cooking water before it boils and top the prepared oats with diced apple.

Mark’s Lunch:
Homemade Creamy Tomato Soup – We love this simple soup! I double all the spices except red pepper flakes and add a pinch of nutmeg. Serve with gluten-free Brazilian cheese bread, a grilled cheese sammy or your favorite crusty bread.

Dinners:

Mashed Butternut Squash – New Recipe! My knife skills aren’t the greatest, so I don’t feel comfortable chopping butternut squash for roasting. Instead, I slice it in half lengthwise, brush with olive oil and oven roast at 375° for 45 minutes or until fork tender. Scoop the flesh when it is cool enough to handle and mash. So simple. Serve this as a side with your favorite protein and some green beans or a salad.

Teriyaki Salmon – Here’s an easy, sheet pan meal! I substitute gluten free tamari for the soy sauce. Cook until the salmon flakes easily and the veggies are tender-crisp.

Creamy Greek Pasta Salad – Mark rates this one a 9; he can deal with the feta, but not kalamata olives! We use lentil or chickpea pasta because it is less gummy than brown rice pasta. This large salad would be perfect for potlucks or family gatherings.

Chicken Pineapple Curry – Hello, old friend! Savory with pineapple sweetness, this recipe is an old favorite. For thicker sauce, use just one can of coconut milk. We usually make a double batch and stash the extra in the freezer.

Snack and Treat:
Stupidly Easy Banana Bread –  With only six ingredients and no processed sugar, this lightly sweet loaf is great for breakfast, snacks or as a treat.

If you need a lil’ sweetness on your banana bread, add the maple cream cheese spread. So good, it’s dangerous! I decrease the recipe by half and add a teaspoon of cinnamon and a pinch of nutmeg. For dairy-free, whip some chilled coconut cream. If the mixture is too thick to spread easily, add in a tablespoon or two of milk or coconut milk.

Real Food Menu for Week of 3.16.2020

With our cupboards looking a little Mother Hubbardy, we went to Kroger on Saturday for our weekly rations. While I wouldn’t say that social distancing was in full effect, shoppers seemed focused on the task at hand and the mood was a little somber.

Large sections of the store were wiped out, with signs all around stating limits on key items. Despite the signs, a man in the checkout line in front of us took the opportunity to berate the cashier telling him he couldn’t buy that cart full of toilet paper (I don’t understand this obsession!). He swore he didn’t see those enormous signs posted everywhere.

At Fresh Market, the manager thanked me for not being angry when she checked their stock and reported they were out of tuna. When she followed instructions from corporate to limit the number of people touching the coffee dispensers by pulling the free sample size cups, customers yelled at her.

With friends and loved ones who are in the high-risk categories, I certainly understand the fear of this pandemic. But I think with a little extra patience, kindness and common sense, we’ll get through this COVID-19 mess just fine.

Now onto this week’s menu:

Breakfast:
BLT Breakfast Bake – Mr. Arthur is happy to welcome bacon back to the breakfast table.

Lunch:
Hearty Stuffed Bell Pepper Soup – A year after finding this recipe, we still love it. We double the recipe to make enough for our lunches and a little extra for Pa Kettle’s freezer.

Dinner:

Bowl of Doom – We haven’t had this favorite in awhile. I’m lightening it up a little with ground turkey.

Green Curry of Broccoli Soup – She’s not gonna win a beauty contest any time soon, but this little number is creamy and delicious! Top with finely shredded parmesan and toasted pepitas.

Fiesta Honey and Lime Kale Salad – New Recipe! We prepped this one in the morning to give the dressing time to soften the kale. This is a nice salad for meal prep as it keeps for a few days in the fridge.

Chicken and Green Bean Stir Fry – New Recipe! This was our first time trying coconut aminos, we normally substitute gluten-free tamari in Asian inspired dishes. For extra flavor when serving, sprinkle a little over top. Mr. Arthurized Home wants you to reduce the cayenne by half, while I think this recipe has just the right amount of heat. You be the judge!

Snack:
Superhero Muffins – If you haven’t tried these yet, I highly recommend them! They really are a meal in a muffin. Because they freeze beautifully, we’re making a double batch and filling the freezer.

Treat:
Stupidly Easy Banana Bread With only six ingredients and no processed sugar, this lightly sweet loaf is great for breakfast as well as a treat.

If you need a lil’ sweetness on your banana bread, try this maple cream cheese spread.

Are you ready to take on the week? Go, be your awesome self, especially to grocery workers!

Real Food Meal Prep for Week of 4.7.2019

Hmm, let’s see: Parmesan in the broccoli salad, mozzarella on the pizza and a cream cheese based spread for the banana bread. Yep, we’re heavier on dairy than usual this week.

Breakfast:
Baked Carrot Cake Oatmeal – New Recipe
https://thehealthyapple.com/gluten-free-baked-carrot-cake-oatmeal/

Lunch:
Balsamic Chicken with Onions
https://www.5dollardinners.com/balsamic-chicken-with-onions/

Balsamic Chicken with Onions – We made this last week using chicken thighs and it was so good that my husband suggested we meal prep it for lunches this week with brown rice and broccoli on the side. I caramelized the onions well before baking.
I didn’t feel comfortable keeping chicken in the fridge for five days, so we kept Monday and Tuesday’s lunches in the refrigerator and put the rest in the freezer.

Dinner:
Minute Steaks with Chive Butter – New recipe

Sukuma Wiki
https://thedomesticman.com/2013/07/02/sukuma-wiki-kenyan-braised-collard-greens-and-ground-beef/

Perfect comfort food on a chilly spring day! This dish sounds more exotic than it is; and you may have the ingredients on hand already. The blend of spices is amazing. Be sure to drain excess grease from the ground beef if necessary.

Best Ever Broccoli Salad – New Recipe

Cauliflower Pizza – New Recipe – I’m using ground flax seed instead of the psyllium husks.

Breakfast for Dinner – Scrambled Eggs, Bacon and Potatoes

We love breakfast for dinner!

Snacks: Cantaloupe, Apples & Peanut Butter, Grapefruit, Oranges, Bell Peppers, Cashews

It’s nice to have a healthy treat available throughout the week so that we don’t feel deprived or tempted by junk food. This banana bread is very nutrient dense, egg free, dairy free and of course, gluten free.

Treat:
Stupidly Easy Banana Bread

Maple Cream Cheese Spread
I added about a teaspoon of cinnamon and a pinch of nutmeg to the maple cream cheese frosting recipe linked below. You could whip chilled coconut cream for a dairy-free version. If your mixture is too thick to spread easily, mix in a tablespoon or two of milk or coconut milk.
This is so good, it’s dangerous!

Have a great week, everyone!
