Real Food Menu for Week of 9.29.2019

Happiness is getting to visit with your Tennessee sister twice in four days. She spent the night Thursday night on her way to Massanutten Resort for the Xtreme Hike for Cystic Fibrosis, and then we met for lunch out by the interstate on her way back home. We met at Angelle’s Diner, and sat outside on the patio in 94° heat listening the roar of tractor-trailer engines off in the distance. We really know how to show our guests a good time! It was too brief a visit, but we’ll take what we can get.

This is shaping up to be a busy week, so we’re sticking with mostly tried and true recipes. Except that keto lava cake. We’ll need to perfect that recipe just a little more.

Breakfast:
Cinnamon Roll Noatmeal – There’s nothing like starting the day with a warm bowl of noatmeal. I double the recipe, add 3/4 tsp. of cinnamon and a smidgen of nutmeg (’cause it’s my favorite!) to the dry noatmeal mix from here…
https://www.healthysweeteats.com/my-favorite-noatmeal-aka-low-carb-oat-free-porridge-the-basic-recipe-and-6-variations/
…and made the cinnamon roll drizzle from here:
https://www.wholesomeyum.com/easy-low-carb-keto-oatmeal-recipe/

Lunch:
Cauliflower Pizza – I’m making two of these pizzas, pepperoni for Mark and cheese pizza for me. This crust holds up well to reheating in the toaster oven at work.
https://thestonesoup.com/blog/2016/09/27/cauliflower-pizza/

Dinner:
I only plan five dinners each week to leave room in the schedule for dining out, or having a leftovers night.

Keto Meatballs and Sauce – I like to make the meatballs using ground turkey. We’ll serve over zoodles to amp up the veggies. The cream in this tasty sauce cuts some of the acidity of the tomatoes.
https://www.tasteofhome.com/recipes/keto-meatballs-and-sauce/

Salmon in Roasted Pepper Sauce – This sauce is creamy and delicious! I’m doubling the sauce so there is plenty to mix into the cauliflower rice.
https://cooktoria.com/salmon-in-roasted-pepper-sauce/

Keto Stuffed Peppers – Earth Fare had green peppers 3/$1 and Mark really loves these, so…
https://www.dietdoctor.com/recipes/stuffed-peppers-with-ground-beef-and-cheese

Perfect Roast Chicken – Ina’s classic roast chicken. This recipe is an oldie, but a goodie. We’ll do carrots and potatoes for Mark, brussels sprouts for me.
https://barefootcontessa.com/recipes/perfect-roast-chicken

Keto White Chicken Chili – We made this for the first time last week and it was so good we’re bringing it back again! We’ll use the leftover roast chicken in this creamy soup.
https://www.heyketomama.com/keto-white-chicken-chili/

Snacks:
Parmesan chips, if I have a hankerin’. I’m not really snacking on keto.
Carb-loading Hubby will enjoy bananas, grapes and Tiny but Mighty Popcorn. When Mark was a kid, his family had Friday movie nights and his Mom made popcorn on the stove by shaking the kernels in a covered sauce pan. He makes his popcorn on the stove top just like his Mama did.

Treat:
Keto Lava Cakes – We may or may not have had to bake these several nights last week. For purposes of recipe testing, of course. *ahem* These are topped with fresh raspberries and powdered Swerve. Who says you can’t eat low-carb and enjoy it, too?

To shop the post:
Silpat / Fiestaware / Popcorn Maker / Swerve / Mikasa China

Real Food Menu for Week of 9.22.2019

I know what you’re thinking. “Wow! That’s a load of chicken for one week.” Yup. Mostly because I peered into the freezer and found six(!) packages of frozen chicken. So, here we go, Chicken Week. Let’s do this thang!

Breakfast:
Almond Flour Pancakes with Chocolate Chips – These are mini chocolate chips and we use them sparingly. One bag goes a long way when you’re using a few tablespoons per recipe.
https://joyfilledeats.com/almond-flour-pancakes/

Lunch:
Keto Taco Salads – I don’t have a recipe for the taco meat, I just cook it thoroughly with a diced onion and loads of taco seasoning. I packaged the taco meat into ramekins for reheating in the toaster oven at work. To assemble the bowls add toppings to a bed of lettuce. I used this taco seasoning recipe:
https://cleanfoodcrush.com/homemade-taco-seasoning/

Dinner:

Easy Garlic Butter Keto Chicken Thighs – Simple and delicious!
https://www.ieatketo.com/easy-garlic-butter-keto-chicken-thighs/

Baked Garlic Parmesan Salmon – New Recipe! I love using home grown, flat leaf Italian parsley in this dish. It’s one of my favorite herbs.
https://www.healthstartsinthekitchen.com/2016/04/06/baked-garlic-parmesan-salmon-primal-low-carb-keto/

White Chicken Chili – New Recipe, and so good! Mark said “the next time we make this, let’s make a double batch.”
https://www.heyketomama.com/keto-white-chicken-chili/

BLT Breakfast Bake – New Recipe!
https://www.realfoodwithjessica.com/2018/09/05/paleo-whole30-blt-breakfast-bake/

Keto Sweet Chili Chicken Thighs – New Recipe! I reduced the heat and the sweetener here: 1/3 c. of monkfruit sweetener and medium heat on the stove top. Yes, this looks burned, but I promise it’s not!
https://fitmomjourney.com/keto-sweet-spicy-chicken-thighs

Snacks:
Chili Lime Cucumber – I know this sounds weird, but this snack is so refreshing. Simply slice an English cucumber into rounds, season liberally with chili powder and squeeze fresh lime juice over it. A sprinkle of sea salt is optional.

Dessert:
Keto Lava Cake – New Recipe! So rich and fudgey! Mark has wanted to try baking these for some time now. Lava cakes are perfect for dinner guests because you can prepare the batter ahead of time, refrigerate it in the ramekins and just pop them in the oven to bake, about 20 minutes before serving.
https://kirbiecravings.com/keto-lava-cake/

Chocolate Chips / Monkfruit Sweetener / Hot Handle Covers / Fiestaware / Lodge Cast Iron Skillet

Real Food Menu for Week of 9.15.2019

I had a hot minute to pop into a thrift store on Friday evening, and scored some vintage Pyrex bowls for a Hamilton Beach mixer. I also bought a Pyrex square baker. ‘Cause I need more stuff! In my defense, I’ve already used everything but the pour bowl.

We’ve been busy in the Arthurized Home Test Kitchens, prepping 7 new recipes for this week’s menu! We’ve found several keepers and a new favorite vegetarian soup. This one will be in the rotation frequently. Let’s dive in, shall we? (To the menu, not the soup.)

Breakfast:
Sausage Breakfast Scramble – New Recipe! Here’s a bowl of savory, comfort food for breakfast. We made the Italian version; omitting the salt and using just one half cup of cheese. But, if you like two cups, toss it in there! I don’t judge.
https://www.southyourmouth.com/2016/07/sausage-breakfast-scramble-low-carb.html

Lunch:
Lemony Avocado Tuna Salad – Mark doesn’t care for avocado, so we sub in chopped cucumber. It’s every bit as delicious.
https://cleanfoodcrush.com/eat-clean-lemony-avocado-tuna-salad/

Dinner:

Baked Salmon with Lemon Butter – New Recipe! The fastest entree you’ll ever throw together. You can have this in the oven in five minutes, tops! I didn’t bother to make the side of lemon butter. Because dang, that’s dedication to your butter, there. Clearly, I’m just not at that level.
https://www.dietdoctor.com/recipes/keto-baked-salmon-lemon-butter/servings/2

Middle Eastern Chicken Kebabs – New Recipe! When we’re cooking for a crowd, we use bamboo skewers, but when it’s just the two of us, we use stainless.
https://mythreeseasons.com/middle-eastern-chicken-kebabs/
Basic Tahini Sauce
https://mythreeseasons.com/tahini-dressing/

Forty-Clove Chicken Filice – New Recipe! Take some help from the grocery store on this one, and buy a package of peeled garlic cloves. Ain’t nobody got time for peeling forty cloves of garlic! Don’t be afraid of all that garlic; baking just makes them sweeter. You won’t repel vampires.
https://www.cooks.com/recipe/u81yk046/40-clove-chicken-filice.html

Green Curry of Broccoli Soup – New Recipe! She’s no beauty queen, but if you’re looking for a mild curry, I’ve gotcha covered. Mine is the vegetarian version, topped with a little parmesan and a few toasted pepitas.
https://thestonesoup.com/blog/2012/01/16/7-surprising-reasons-to-eat-more-soup-green-curry-of-broccoli-soup/

Ropa Vieja

  • Servings: 6-8 very hungry people
  • Difficulty: Easy
  • Print

My very Americanized version of this hearty shredded beef dish.

Ingredients

  • 3 lbs beef chuck roast
  • 1 package (1 oz.) dry onion soup mix – or make your own like this: https://feedingbig.com/clean-eating-onion-soup-mix.html
  • 1 onion, chopped
  • 1 c. red wine
  • 3 T. coconut oil
  • 1/2 c. salsa – look for salsa with no added sugar
  • 1/2 c. water – optional (I almost never add this)
  • Garnishes: Any combination of sour cream, salsa, cilantro, lime wedges, shredded cheese, olives and avocado
  • 3-4 cups cooked rice of your choice or cauliflower rice for low-carb

Directions

  1. Preheat oven to 325°. Heat oil in dutch oven, over med-high. Add beef and brown on all sides.
  2. Reduce heat, add onion and cook until soft but not browned.
  3. Add onion soup mix, wine, salsa and water (if using). Bring to a boil.
  4. Cover and place in preheated oven for 2 1/2 to 3 hours. Check occasionally to make sure there is sufficient liquid in the pan, add more wine if necessary.
  5. Shred beef before serving. Serve over rice, or cauliflower rice for low-carb. Garnish as desired. Enjoy!

Snack:
Parmesan chips – New Recipe! – These chips are dangerously addictive! They would be great on a little appetizer tray. Scale this recipe to the number of servings you need. I used my 1″ cookie scoop to portion them onto the Silpat. The Silpat is great for this, because if you’re baking several batches, you won’t need a fresh piece of parchment paper each time.
https://www.dietdoctor.com/recipes/parmesan-chips

Treat:
Keto Key Lime Pie Jars – New Recipe! There’s no need for chemical food dyes in this pretty, green dessert. An under-ripe avocado lends unpleasant sharpness, so use a guacamole-ready avocado for smooth, buttery flavor. I used powdered Swerve in the filling and increased it slightly. Add extra lime juice to the filling if you like.
As an experiment, I pressed plastic wrap onto the surface of the filling to remove the air, and placed these in the refrigerator and freezer. These kept just fine in both places for a few days. The avocado did not oxidize at all. I imagine they would keep longer in the freezer. If they’re not eaten first!
https://peaceloveandlowcarb.com/keto-key-lime-pie-jars/

I hope your week is off to a great start!

Real Food Menu for Week of 9.8.2019

Birthday Month has officially started! Mark and I both have September birthdays so we decided to celebrate all month long. Actually, we kicked off the partying in August (why limit it to one month?!) with a family lunch at Wildflour, and then continued the celebration last weekend in Pittsburgh. My sister made beautiful and delicious keto Death by Chocolate Cake and Coconut Cream Custards.

Breakfast:
Almond Flour Biscuit with Tomato – We’re still working those garden tomatoes and this is one of the simplest ways to enjoy them!
https://www.wholesomeyum.com/recipes/paleo-almond-flour-biscuits-low-carb-gluten-free/

Lunch:
Chop Chop Fresh Veggie Salad – Crunchy and delicious! To reduce carbs, I left the chickpeas out altogether, and I’m serving the olives and feta on the side, because a certain someone still doesn’t care for them. *ahem*
https://cleanfoodcrush.com/chop-chop/

Dinner:

Carb Buster Breakfast for Dinner – New Recipe! So simple and so yum! I could eat this once a week.
https://thepioneerwoman.com/cooking/carb-buster-breakfast/

Perfect Roast Chicken – Earth Fare had whole chickens on sale this weekend, so we’ll have roast chicken one night and then make chicken salad the next day.
https://barefootcontessa.com/recipes/perfect-roast-chicken

Quick and Easy Chicken Salad on Spinach – I’ll take extra celery, Hubs can have my grapes.
https://cleanfoodcrush.com/quick-easy-chicken-salad-recipe/

Salmon in Roasted Pepper Sauce – New Recipe!
https://cooktoria.com/salmon-in-roasted-pepper-sauce/

Spinach Salad with Bacon and Eggs – New Recipe!
https://www.healthyseasonalrecipes.com/spinach-salad-with-bacon-eggs/

Snacks:
Celery and peanut butter, Gouda snacking cheese (Aldi)
Hubby: Tiny but Mighty popcorn, grapes, bananas, cottage cheese

Treat:
Chocolate Dipped Strawberries – We’re keeping it simple this week with fresh strawberries dipped in melted Lily’s dark chocolate chips. I add about a teaspoon of coconut oil to 1/2 cup chocolate chips while melting them in a double boiler. If you don’t have a double boiler, simply boil about an inch of water in a saucepan underneath a tempered glass bowl. Make sure that the boiling water does not touch the bowl above. Dip the strawberries and sprinkle with unsweetened coconut if desired.

Have a great week, everyone!

To shop the post:
Fiestaware plates / Fiestaware bowls / ramekins / parchment paper / Lily’s chocolate chips (catch these on sale at Earth Fare) / similar checked dinner napkins / Tiny but Mighty popcorn (lower priced at Fresh Market)

Tomato and Cheese Pie

HoldingOntoSummerAsLongAsPossible is an annual event in our home. I’m not dying to bundle up in sweaters and boots just yet. While the summer produce is still rolling in, let’s give this savory pie a little love, shall we? This dish should really be named Tomato Basil Pie because the ricotta and parmesan take a back seat to the fresh flavors of the basil and tomato. It’s easy to whip together, and makes a nice breakfast or brunch side dish.

Tomato and Cheese Pie
adapted from The Supermarket Diet Cookbook
Prep: 20 Minutes
Bake: 30 Minutes
Makes: 4 Servings
1 container (15 ounces) ricotta cheese
4 large eggs
1/4 cup freshly grated Parmesan cheese
1/2 tsp. salt, plus additional for sprinkling
1/8 tsp. coarsely ground black pepper, plus additional for sprinkling
1/4 cup milk
1 T. cornstarch – I use arrowroot powder
1 cup packed fresh basil leaves, chopped
1 pound ripe tomatoes (three medium), thinly sliced

The top three eggs are pastured, the egg on the bottom is “cage free”. Notice the difference in the yolk color! Totally subjective, but we think pastured egg yolks have a richer flavor.

1) Preheat oven to 375°F. In a large bowl, with whisk or fork, beat ricotta, eggs, Parmesan, salt and pepper until blended.

I used purple basil because it has the most traditional basil flavor of the three types that I planted this year. I don’t think lime basil or Thai basil would be tasty in this recipe!

2) In cup, with fork, stir milk and cornstarch (arrowroot) until blended; whisk into cheese mixture. Stir in basil. Pour mixture into 9 inch glass or ceramic pie plate. Arrange tomatoes on top, overlapping if necessary. Sprinkle tomatoes with salt and pepper.

3) Bake pie until lightly browned around edge and center is puffed, 30 to 35 minutes.

Enjoy! Happy Labor Day!

Meal Prep for Week of 8.25.2019

The garden produce is slowing down a little, but we’re still up to our eyeballs in fresh herbs. The herb garden has become my happy place. (Well, in addition to Sunset Beach, the greenway, any ol’ clearance rack and, and, and…!) I absolutely love strolling out there to snip something fresh to add to our meals. I’ve got four new recipes for you this week, including a few vegetarian options:

Breakfast:
Keto Coconut Porridge – New Recipe! This porridge has an almost savory, mild, coconut flavor; which we enjoy. It’s quick and easy to prepare. However, we’re pounding through one can of coconut milk per day, so that adds up over the course of a week. We’ll likely reserve this one for occasional breakfasts going forward.
Recipes from Diet Doctor can be scaled to the number of servings needed. Don’t scale the salt in this recipe. Ask me how I know that.
https://www.dietdoctor.com/recipes/keto-coconut-porridge/servings/2

Lunch:
Turkey, Bacon and Swiss on a Lettuce Bun – Slice “cheeks” from a head of iceberg lettuce to make the bun. I like my sandwich with spicy dijon mustard.

Dinner:

Tuscan Chicken with Sun-Dried Tomatoes and Creamy Garlic Sauce – New Recipe!
https://www.savorytooth.com/sun-dried-tomato-chicken/?utm_source=pinterest&utm_medium=social&utm_campaign=BlogButton

Garlicky Parmesan Zucchini Bake – New Recipe! We’ll serve this with a piece of fish or grilled chicken.
https://cleanfoodcrush.com/garlicky-parmesan-zucchini-bake-clean-eating/

Annnnnd sometimes you add the parsley too early. Oops!

Oh well, I happen to love parsley and don’t think a half cup is too much for this recipe. I also love garlic, and this made the house smell like a pizzeria while it was baking. Broiling it for a few minutes with a little extra parmesan on top is always a good idea.

Cumulus Spiced Eggs – Super quick dinner! You can have this meal on the table in twenty minutes, start to finish. The eggs are the start of this show, so I recommend pastured eggs if available.
https://stonesoupvirtualcookeryschool.com/2013/06/cumulus-spiced-eggs/

Garlic Butter Salmon from this recipe:
https://cleanfoodcrush.com/one-sheet-pan-garlic-butter-salmon/
…with the carrots and broccoli from here:
https://cleanfoodcrush.com/homemade-teriyaki-salmon-meal-prep/

Chop Chop Fresh Veggie Salad – New Recipe! This salad is so tasty! To reduce carbs, I left the chickpeas out altogether, and I’m serving the olives and feta on the side, because a certain someone doesn’t care for them. *ahem*
https://cleanfoodcrush.com/chop-chop/

Snacks:
Mine: Gouda Snacking Cheese, Celery and Peanut Butter. Meh.
Hubby: Watermelon, grapes, bananas, Tiny but Mighty Popcorn…

Treat: Coconut Milk Panna Cotta topped with Chia Seed Strawberry Jam – To decrease the carbs, swap the honey in the panna cotta for a tablespoon (or so) of your favorite low-carb sweetener. I used Swerve.
https://deliciouslyorganic.net/coconut-panna-cotta-dairy-free-gaps-paleo-grain-free/
Same here. Deep-six the honey for a couple teaspoons of low-carb sweetener.

Meal Prep for the Week of 8.18.2019

In order to beat the heat and 8000% humidity, I met up with friends to run at 6:30 on Saturday morning. It was still stinking hot at that hour. We followed Leg 4 of the Blue Ridge Marathon Relay as a training run. It’s a route we’ll repeat again and again between now and April. We had a great run in spite of the heat. In a few months, I’ll miss this weather.

We had friends over for dinner that night and had a blast playing Telestrations with them afterward. The rest of the weekend was fairly routine.

Now on to this week’s menu:

Breakfast:
Almond Flour Pancakes – Make a batch on the weekend, freeze individually, and pull out just what you need each morning.
https://joyfilledeats.com/almond-flour-pancakes/

Lunch:
Mustard Glazed Baked Chicken Thighs with Green Beans – So simple, but flavorful!
https://unsophisticook.com/baked-chicken-thighs/

Dinner:

Chicken Pineapple Curry – This dish deserves a post of its own! It’s a favorite dish when we’re craving comfort food. As a bonus for Mark, while I’m doing keto, he gets my pineapple.
https://www.5dollardinners.com/chicken-pineapple-curry/

Cucumber and Strawberry Salad with Poppyseed Dressing – A new favorite! I thought the dressing was slightly too sour by itself, but when tossed with the salad, it’s perfect.
https://cleanfoodcrush.com/cucumber-strawberry-salad/

Keto Meatballs and Sauce with Zoodles – This one is so tasty! The cream in the sauce cuts the acidity of the tomatoes. I’m loving the wide zoodles, To make them, just slice a little off the side of the zucchini so that it lays flat on the cutting board. Use a vegetable peeler to slice thin, wide noodles. I saute them in coconut oil for a few minutes, just until tender. Very few things in life are worse than a mushy zoodle.
https://www.tasteofhome.com/recipes/keto-meatballs-and-sauce/

Lemony Avocado and Tomato Tuna Salad – Hello, old friend! We usually fix this with cucumber instead of avocado because Mark hasn’t yet embraced that little wonder berry.
https://cleanfoodcrush.com/eat-clean-lemony-avocado-tuna-salad/

Basil Tomato Cauliflower Rice Salad – I first made this salad 22 years ago, after attending the Southern Living Cooking School. It became my summer potluck go-to. I recently adapted it for cauliflower rice instead of the original Minute rice. You can certainly prepare it using rice; we like brown rice because it holds up well to the dressing even if it’s prepared a day ahead of serving.

Basil Tomato Cauliflower Rice Salad
Adapted from Southern Living Cooking School – Fall 1997
To cool cauliflower rice quickly, spread on a jelly roll pan and place in freezer for 10 minutes.
2 T. coconut oil (or ghee)
2 (12 oz.) bags frozen cauliflower rice
6 plum tomatoes, seeded and diced – bonus points for using juliets from Pa Kettle’s garden
1/2 cup chopped red onion
1/2 cup sliced fresh basil – I used purple basil
1/3 cup favorite Italian dressing – My recipe below
shaved Parmesan cheese or crumbled feta cheese
In a large skillet on the stove top, saute the cauliflower rice in coconut oil just until tender. Set aside to cool.
Toss the cooled cauliflower rice with tomato, onion, basil and dressing. Top with cheese.

Homemade Italian Dressing
3/4 c. olive oil – Should I tell you to use “good” olive oil like Ina does?
Nah. Use whatever you have/like.
1/4 c. red wine vinegar
1 T. dried Italian seasoning
1/2 t. garlic powder
1 T. Swerve or other sweetener of choice
1 dash of paprika – for color
1 smidgen of nutmeg – because I put it in everrrrryyyythang
Salt and pepper to taste
Whisk all ingredients together to emulsify. Shake before serving.

Snacks:
Mine – Same ol’, same ol’…celery and peanut butter, gouda snacking cheese. Maybe I’ll make pimento cheese next week?
Mark’s – Tiny but Mighty Popcorn, Watermelon, Bananas

Treat: Strawberries and Fresh Whipped Cream

What’s going on in your kitchen this week? Have a great week, everyone!

Meal Prep for the Week of 8.11.2019

True to form, I started a painting project yesterday and well, I’m in a little over my head. This one has been in the works for awhile and I’m starting to see that it will either be a glorious success or a spectacular failure. There is no in-between, I’m afraid. I’ll let you know either way. Here’s a sneak preview:

I haven’t had much time for cooking this weekend, so I have just a few pictures for you. I’ll update them going forward. Hope you don’t mind. Let’s dive into this week’s menu:

Breakfast:
Cinnamon Roll Noatmeal – This variation is so good! I added 3/4 tsp. of cinnamon and a smidgen of nutmeg (’cause it’s my favorite spice and I add it to nearly everything!) to the dry noatmeal mix from here…
https://www.healthysweeteats.com/my-favorite-noatmeal-aka-low-carb-oat-free-porridge-the-basic-recipe-and-6-variations/
…and made the cinnamon roll drizzle from here:
https://www.wholesomeyum.com/easy-low-carb-keto-oatmeal-recipe/

Lunch:
Chicken and Garlic with Fresh Herbs – We’ll have this with a side of fresh green beans from Pa Kettle’s garden. The chives, rosemary and thyme are all from our garden. We grilled the chicken and then finished it on the stove.
https://www.tasteofhome.com/recipes/chicken-garlic-with-fresh-herbs/

Dinner:

Keto Waffles – Breakfast for Dinner!
https://www.eatingonadime.com/keto-waffles-recipe/

Cucumber and Strawberry Salad with Poppyseed Dressing – New Recipe! Because sometimes you just want a light, refreshing salad for dinner. I was skeptical about the amount of vinegar in the dressing, but it’s just right. I left the honey out and used monkfruit sweetener instead. We both really enjoy this salad. Hope they don’t do random drug testing at work!
https://cleanfoodcrush.com/cucumber-strawberry-salad/

Perfect Roast Chicken – Ina’s classic roast chicken. This recipe is an oldie, but a goodie.
https://barefootcontessa.com/recipes/perfect-roast-chicken

Turkey, Bacon and Swiss on a Lettuce Bun – No recipe, just cut “cheeks” from a head of iceburg lettuce, fill with turkey slices, a slice of bacon, tomato, cheese and your favorite condiments. I like spicy brown mustard. Fast, easy, keto!

Keto Meatballs and Sauce – New Recipe! We’ll serve over zoodles to amp up the veggies.
https://www.tasteofhome.com/recipes/keto-meatballs-and-sauce/

Snacks:
Keto – Gouda Snacking Cheese, Cucumber slices, Celery and Peanut Butter
Delightful, Carb-Filled Snacks for Hubby – Watermelon, Grapes, Bananas, Tiny but Mighty Popcorn

Treat:
Keto Strawberry Icebox Pie – New Recipe! Honestly, this one was a mixed bag. A delicious, mixed bag that I would make again, but decrease the sweetener by half. This was just too sweet for our tastes as written. I didn’t bother to make the whipped cream for the two of us because, dang, that’s a lot of cream! I’m keeping this in the freezer, because it stays a little soft in the fridge. If you like strawberry cheesecake, you’ll like this pie. This would make a nice dessert for guests, and I bet they’d never guess it is keto!
https://www.ibreatheimhungry.com/keto-strawberry-icebox-pie-low-carb/

Have a great week, everyone! I’ll just be over here, with paint in my hair and stain under my fingernails.

Meal Prep for Week of 8.4.2019

Happiness is cooking with herbs that you planted, tended and harvested! I’m not sure why the idea of cauliflower rice tabbouleh never occurred to me before, but I’m glad to finally try it! Pa Kettle’s garden provided the cukes and Juliet tomatoes, and the herbs are fresh from our garden.

Breakfast:
Easy Three Cheese Keto Biscuits – New Recipe! So tasty!
https://www.myketokitchen.com/keto-recipes/keto-biscuits-low-carb/

Lunch:
Cowboy Butter Chicken with Zucchini Noodles – The term ‘zucchini noodles’ chafes my affinity for nonsense words. ‘Zoodles made from zukes’ is just more fun to say! If you’re not a fan of heat, go easy on the cayenne and crushed red pepper flakes.

Cousin Ruby’s Dilled Tuna Stuffed Tomatoes

Cauliflower Rice Tabbouleh – Keto twist on a classic, summer dish! I modified Ina’s recipe to exclude the bulghur, water and greatly reduce the salt. This recipe is from the Barefoot Contessa Parties cookbook, and IMHO 3 1/2 teaspoons of salt is way too much! (Even when I made this with bulghur, I never used that much salt.) I used about 1 teaspoon of salt for this salad. Adjust to taste. Don’t skimp on the parsley and mint. In this dish, more is indeed more!

Step One of the recipe becomes: Rice a small head of cauliflower in a food processor, and add the raw cauliflower to a large bowl. Add the lemon juice, olive oil, salt and pepper.
Step Two: Add the scallions, mint, parsley, cucumber, tomatoes; mix well. Season, to taste, and serve or cover and refrigerate. The flavor will improve if the tabbouleh sits for a few hours.

Snacks:
Mine:
Gouda Cheese Sticks, Boiled Eggs, Cucumber Slices and Celery with Peanut Butter. Again.
Hub’s:
Watermelon, Cherries, Tiny but Mighty Popcorn and Avocado Oil Potato Chips

Treat:
Keto Chocolate and Peanut Butter Cookies – These are like preacher cookies, minus the oats. Yum. I use about two packets of green stuff per batch. Store them in the freezer.

Meal Prep for Week of 7.28.2019

When I say that I had a busy weekend, what I mean by that is that I met some friends to run Saturday morning, and then spent the rest of the day with my nose in a book! I haven’t done that in forever, but it was a much needed break. A friend called us late Saturday evening and asked if we wanted to go pick her friend’s garden, so we said “Sure!” I’ve never picked veggies at twilight before, but it was a fun outing and great to spend time with her. We’re still loving the home grown produce, so let’s have a look at this week’s menu:

Breakfast:
Almond Flour Biscuits and Tomato – Gotta take advantage of those garden fresh tomatoes!

Dinner:

One Pot Keto Sesame Chicken and Broccoli – New Recipe! Since we don’t own a microwave, steps 1 and 2 become:
1) Saute the broccoli in a large skillet until tender-crisp.
2) Remove from skillet and set aside.
