Real Food Menu for Week of 11.17.2019

I feel like a kid at Christmas! National collection week is here for Operation Christmas Child. About 5,000 collection centers open in the U.S. on Monday. What a great way to kick off the holidays by meeting the practical needs of children in poverty while sharing Jesus with them. Many tireless volunteers will work all week long to collect an estimated 11 million boxes. Good news, great joy, indeed!

Breakfast:
Oatmeal with Raisins, Walnuts and Banana – Not really a recipe. Prepare your favorite version of oats and add toppings as desired. I like to add raisins to the water before boiling, so they plump up nicely. A drizzle of this is a tasty addition.

Lunch:
Greek Chicken Soup – Flavorful and light. We made this a few weeks ago and loved it. If you are reheating leftovers, warm it just until heated. If you boil it, you’ll have tiny bits of scrambled egg in your soup!

Dinner:
Autumn Pear and Goat Cheese Chicken Salad – So delicious, and Mark loves this dressing. I top with parmesan instead of goat cheese.

Turkey Herb Stuffing-Style Riced Cauliflower – New Recipe!

Huevos Rancheros – I used half the lime juice and added minced onion.

Real Food Menu for Week of 10.27.2019

Mr. Arthurized Home has lost about ten pounds, and and I’ve lost seventeen so far this year. Last weekend we went through our fall and winter clothes, tried everything on, and made a huge donation pile for charity. After doing that, we looked around and realized that we have very little left to wear this winter! Yikes. Because nudity is frowned upon at the office, I did some winter wardrobe shopping Friday night.

Except for some rain Sunday morning, the weather was beautiful this weekend. We buttoned up the herb garden for the winter with a few final tasks, a thorough weeding and a nice layer of mulch around the perennials. I’m so sad that the growing season is over; the herb garden has been my happy place this year.

Breakfast:
Mediterranean Cauliflower Rice Quiche – New Recipe! – We left the feta out and sprinkled black olives on half of the quiche. And seriously, how cute is this plate our nephew painted when he was four?!

Hearty Stuffed Pepper Soup – Tried and true! I attempted a picture of the steam rising from the pot of hot soup, but it just made the tomatoes look pink! Oh, well. If you like stuffed peppers, you’ll love this soup.

Maple Vanilla Baked Pears – New Recipe! If this isn’t autumn on a plate, I don’t know what is. Assemble in 5 minutes, pop into the oven and enjoy this for dessert tonight. I added nutmeg before baking, and put a dollop of Greek yogurt, and a sprinkle of pumpkin seed granola on top to serve. Delicious.
