Real Food Menu for Week of 3.23.2020

These certainly are strange times we’re living in. My heart goes out to everyone whose lives have been upended by COVID-19. So many of us are preparing for the unknown, working long hours, living in self-isolation or under shelter in place orders. I think that social distancing and resisting the urge to hoard have become our era’s victory gardens; everyone can do their part to stop the spread of this disease.

On Saturday, Mark and I went out to do our weekly grocery shopping and as everywhere, we encountered empty aisles throughout the stores. Surprisingly, we were able to find (or substitute) nearly everything on our list. We took pictures of the stores so that Pa Kettle could see what is happening from the comfort of his home.

In this week’s menu, I’ve got a fantastic, new quinoa salad. Packed with protein and minerals, this tiny seed is a nutritional powerhouse. It’s mild, nutty flavor lends itself to sweet and savory dishes.

Breakfast :
Strawberries and Cream Overnight Oats – This recipe makes one jar, so multiply it by the number of servings you need. We like to add fresh blueberries, because, why not?

Dinner:

French Onion Soup – An old favorite; served with crusty, gluten-free Brazilian Cheese Bread

French Onion Soup

  • Servings: 4-6
  • Difficulty: Easy

I’ve had this recipe for so long, that I can’t remember where I found it! I substitute gluten-free all-purpose flour for the wheat flour. The key to this rich soup is in caramelizing the onions until they are a deep, golden color. It’s worth every minute in flavor. Serve with crusty bread or sandwiches on the side. We like Brazilian cheese bread or gluten free baguette.

Ingredients

  • 8 brown onions, sliced
  • 1 oz. butter
  • 1 T. olive oil
  • 2 T. thyme leaves
  • 2 T. plain, all-purpose flour (I use gluten free)
  • 2 T. brandy
  • 2 T. dijon mustard
  • 8 cups beef stock
  • 2 cups water

Directions

  1. Place the onions, butter, oil and thyme in a large saucepan over medium heat, cover and cook for 35 minutes, stirring occasionally, until soft and golden.
  2. Add the flour and cook, stirring for 3 minutes.
  3. Add the brandy and cook, stirring for 1 minute. Add the mustard, stock and water and allow to simmer for 15 minutes. Ladle the soup into bowls and serve.

Aztecan Quinoa Salad – New Recipe! My quinoa has a longer cooking time than the recipe, so I cooked it according to the package directions, cooled and fluffed it with a fork. You’ll need about three cups of cooked quinoa. The flavor profile is similar to our favorite Greek Salad.

Teriyaki Salmon – Here’s an easy, sheet pan meal! I substitute gluten free tamari for the soy sauce. Cook until the salmon flakes easily and the veggies are tender-crisp.

Mediterranean Pasta Salad – So satisfying! Red lentil penne holds up well in this salad, but any sturdy noodle will work. Don’t forget the feta for that creamy, salty goodness!

Snack:
Fresh fruit, veggies and hummus and popcorn are the order of the day.

Treat:
Pina Colada Green Smoothie – We sampled this refreshing drink and prepped a pack for the freezer. Mark generally does not care for green smoothies, but he rated this one a 10!

Real Food Menu for Week of 3.9.2020

I’ve got three new recipes for you this week and two of them are slam-dunks and the third one, well, you be the judge! Mark and I agreed that we could happily eat the broccoli and red cabbage salad and the bruschetta chicken casserole once a week.

We’re engaging in a little kitchen compromise: Pancakes for him and salmon for me. Give a little, take a little. That’s what makes a marriage work, right?

Breakfast:
Paleo Pancakes – We make these ahead and freeze in single layers on a baking tray. When frozen solid, transfer them into a freezer bag. Take out just what you need each day, and pop them into the toaster to warm through. A sprinkle of chocolate chips into the batter doesn’t hurt!

Lunch:
Baked Sweet Potatoes with Garlic Sauteed Kale and Goat Cheese – New Recipe! Honestly, we were unsure if we would like these. Even a few bites in. Still unsure. They’re very different from our go-to lunches, but we both decided these are keepers.

Dinner:

Turkey Meatball Zoodle Soup – Hello, old favorite! I’m loving wide zoodles made using a vegetable peeler instead of the spiralizer. We’ll see how those work in this soup.

Salmon in Roasted Pepper Sauce – Simple and satisfying. We love this meal. Serve over brown or cauliflower rice.

Broccoli and Red Cabbage Salad with Tangy Peanut Butter Dressing – New Recipe! This one felt way out of our comfort zones due to the dressing, but we both rated it a 10! Make a double batch of the dressing because you will want to pour it on everything. Any extra shredded cabbage is delicious as a side salad the next night, with leftover dressing and a sprinkle of toasted cashews on top.

Bruschetta Chicken Casserole – New Recipe, savory and delicious! The beautiful flavors of bruschetta without those pesky carbs. I can’t wait until we have fresh basil from the garden for this goodie.

Snack: We’ve been loving the gouda snacking cheese from Aldi. Popcorn, veggies, hummus, fruit. Rinse, repeat.

Real Food Menu for Week of 3.2.2020

Are you better at eating real food when you keep healthy snacks on hand? For us, the key to cutting down on junk food has been simply this: Don’t have it in the house. Revolutionary, I know. There are very few cravings worth changing out of pajamas and leaving the house for. Thank God we don’t have grocery (or pizza!) delivery service out here in the country.

Having said that, sometimes you just get a hankerin’ for something a little sweet or a salty, crunchy snack. That’s why we add snacks and treats to our menus. I’m more than happy to munch on fresh veggies, hummus and parmesan chips if we have them ready to go when a craving hits.

Breakfast:
Homemade Granola – New Recipe! We doubled the cinnamon because we’re maniacs that way and added a sprinkle of nutmeg. Mark likes his granola with coconut milk and banana slices, I like mine with Greek yogurt and fresh berries.

Lunch:
Weeknight Taco Soup – An old favorite, lightened up by substituting ground turkey for the beef. This tasty soup is great for meal prep because it keeps well in the fridge for a few days, or in the freezer for several weeks.

Dinner:

Cherry Tomato White Bean Salad – New Recipe! Can you say sensational, savory, and satisfying salad three times fast? You’re gonna need to. This one’s a dandy!

Creamy Roasted Cauliflower Soup – What she lacks in visual appeal, she makes up for in flavor. Hubs loves this one.

Stuffed Peppers with Ground Beef and Cheese – As per the Mediterranean Diet, we’re using ground turkey instead of ground beef. And since I’m not doing keto, I add a little cooked brown rice to the mixture. I bake these on a Silpat and don’t bother with the butter. These little crowd-pleasers freeze well.

Pickety Bits – This is the easiest dinner ever, and a great opportunity to clean out the fridge. There are no rules here. You know that half-eaten jar of pickles languishing in the fridge door? Use it up! Include a selection of fruits, fresh and pickled veggies, olives, meats, cheeses, nuts, crackers, dips and spreads. Dinner is served!

Snack:
Parmesan Chips – Crunchy, salty and delicious! I scale this recipe to make 6 servings, scoop with a cookie scoop and bake on a silpat. These pair well with soups and/or Netflix binges.

Real Food Menu for Week of 2.17.2020

Cheers to a new week of eating real food! If you are new to Arthurized Home, welcome and thank you for taking the time to read here. My intent for these menus is to provide inspiration to try new dishes while staying within the parameters of clean eating. I define that as eating foods made in nature, not in a factory. My husband and I have a high tolerance for eating the same dishes repeatedly, (see: breakfast and lunch) so this prevents us from getting stuck in a rut. Here’s what’s cooking this week:

Breakfast:
Apple Pie Overnight Oats – New! We almost always double the cinnamon in recipes, and this one is no exception. Toss a little nutmeg in there, too. We topped these babies with chopped apples and pecan pieces.

Lunch:
Simple Pumpkin Soup – Easy and delicious! If you can dice an onion and open a few cans, you’ll have lunch or dinner on the table quickly. We’re have this with a side of our favorite Convert Kale Salad. I made a batch of toasted pepitas to top our pumpkin soup and some extras for snacking.

Simple Pumpkin Soup

  • Servings: 4 servings
  • Difficulty: Easy

Gluten-free, dairy-free and delicious, comfort food

Ingredients

  • ½ c. onion, diced
  • 2 T. olive oil
  • 1 (15 oz.) can pumpkin puree
  • 1 tsp. salt
  • 1 T. maple syrup
  • ¼ tsp. nutmeg
  • pinch of cayenne (or to taste)
  • ¼ tsp. ground pepper
  • 2.5 cups chicken broth (or vegetable broth for vegetarian)
  • 1 (13.5 oz.) can coconut milk
  • Garnish with pepitas, if desired

Directions

  1. Dice the onions and gently brown with olive oil in a large saute pan.
  2. Add pumpkin puree, salt, maple syrup, nutmeg cayenne and ground pepper.
  3. Slowly add chicken broth and coconut milk. Heat through, but do not bring to a boil. Garnish as desired and serve.

Keto Philly Cheese Steak Skillet Dinner – I’m not really a steak lover, but I could eat this one once a week. So good!

Weeknight Tandoori Chicken – New! I wasn’t sure what to expect with this dish. Would it be too spicy? Would hubs hate it? Not to worry, we both enjoyed it. Although, I felt it was a titch too greasy using thighs. The next time I make it, I’ll use chicken breasts. The sauce was tasty enough to eat over the spinach and rice, minus the chicken.

Spicy Toasted Pepitas

  • Servings: 4 snack size servings
  • Difficulty: Easy

Great for snacking or sprinkle on soups and salads.

Ingredients

  • 1 heaping c. raw pepitas
  • 1 tsp. olive oil
  • 1 tsp. sugar (or granulated sweetener of choice)
  • 1/2 tsp. salt
  • pinch of cayenne (or to taste)

Directions

  1. Drizzle olive oil into a heavy pan over medium/low heat.
  2. Add pepitas, sugar, salt and cayenne.
  3. While stirring constantly, toast until pepitas are medium brown in color.

Real Food Menu for Week of 2.10.2020

We had a busy little weekend with Night to Shine on Friday, followed by a six mile jaunt to the star on Mill Mountain Saturday morning. Saturday afternoon found us puttering around the house, and we wrapped up Arthur Birthday Season on Sunday with a nice lunch for our nephew.

Have you been to a Weaver Street Market? My boss recently discovered this gem in his travels and has been raving about their food bar. He’s now planning his trips so he can eat there. I’ve not visited one yet, but the recipes on their blog caught my eye, so we’re sampling a couple of them this week.

Breakfast:
BLT Breakfast Bake – While we’re not doing Paleo or Whole 30, this protein-packed dish is a great way to start the day! We’ll use half a pack of bacon in this recipe and the rest in the broccoli salad. We buy Hormel Natural or the Never Any uncured hickory bacon from Aldi.

Apple Cider Glazed Salmon – New! I don’t have Lusty Monk mustard on hand (although that name is hilarious!) so I’m using another spicy, stone ground mustard.

Creamy Coconut Lentil Curry – Yum! We add 1/2 tsp. of garam masala and 1/2 tsp. of curry powder, for a little extra flavor.

Lean Bean Meatballs with Greens n’ Rice – New! This dinner was a pleasant surprise. We made it using ground turkey instead of ground chicken thighs. I thought Mark wouldn’t care for it because he’s not a fan of spice, and the stone ground mustard is pretty hot. He loved it, and rated it a “10”! This meal is going into the regular dinner rotation.

We’re knee-deep in Arthur Birthday Season and had a super fun weekend of birthday prep and visiting with family. Pa Kettle has suddenly decided to be coy about his age, so he’s just telling folks that he is “forty-four more or less”.

With a busy weekend in the rear-view mirror and an even busier week ahead, we’re going back to the basics with several stand-by recipes. I’m excited to try the new recipe for Chipotle Chicken Sweet Potatoes.

Real Food Dips for the Super Bowl

I’ll be the first to admit that I don’t know a thing about football. Truly. First down, blah, blah, offside, yada, yada. After twenty five years of marriage, I still don’t understand the game and it’s not for Mr. Arthurized Home’s lack of explanation. Bless him.

I can still enjoy the pageantry of the Super Bowl, though right? All the pre-game hoopla, tasty snacks and funny commercials. Now that I think of it, the commercials have been pretty lackluster the past few years. Love it, anyway. What better chance to spend an evening with friends and share some delicious eats?

Since you’re gonna need snacks, they might as well be tasty and healthy. Here are some (mostly) real food dips and spreads to make your Super Bowl get-together epic. All of these recipes are found here, I’ve detailed the changes that I made where applicable.

Honey Mustard Dip – Serve with fresh veggies and pretzels. This one is super quick, five minutes and you’re done!

Ranch Greek Yogurt Dip – Go a little easy on the garlic, if you’re not a fan. I used fresh dill and about 1/2 teaspoon of salt. Serve with fresh veggies.

Buffalo Chicken Dip – So good! I think the 1/4 cup of hot sauce is perfect, add more if you love heat and don’t need those taste buds. This dip is great with celery sticks or as a spread for crackers.

Southwestern Black Bean Dip – I used a red bell pepper for that pop of color, and doubled the chili powder and lime juice. Serve with cucumber slices or tortilla chips. We like Late July or Simple Truth Organic, but any clean brand of chips will do the job.

Apple Cottage Cheese – I enjoy a good apple and cheese combo, but Mark wasn’t a fan of this one until it was blended smooth. Now he loves it. I doubled the cinnamon at his request.

Whether you’re a rabid fan or casual watcher of “game ball” as our niece called it when she was little, I hope your weekend is filled with friends, fun and oh yeah, football!

Real Food Menu for Week of 1.26.2020

Ever since we deep-sixed our microwave, we’ve done a lot of our cooking in this toaster/convection oven. Because this little dude is more energy efficient than our full size oven, we’ve realized $20+ monthly savings on our power bill. It’s large enough to bake a 12″ pizza, and doesn’t heat up the kitchen like the full-sized oven does. I guess that’s not really a bonus this time of year, but we appreciate that benefit during warmer months.

No Sugar Chocolate Chip Cookie Dough Dip – This is one of those 10% treats. Minus the chocolate chips, this recipe is processed sugar-free. We use these stevia sweetened chocolate chips. Hubs eats his with gluten free cookies, I’m having mine with apple slices. We sampled this dip with gluten free pretzels, and that’s a tasty combo as well.

Real Food Menu for Week of 01.12.2020

One of my goals for the new year is to reduce food waste (and hopefully food costs) by doing a better job of meal planning. Wasting produce is a huge pet peeve of mine. I suppose composting it gives it a second life, but it’s not what I intended.

We received this compost bin at Christmas and I just love it. We previously kept our kitchen scraps in a bowl and emptied it every day. Now we can get away with emptying every few days because the filter eliminates any odors. Yay!

Breakfast:
Blueberry and Raspberry Baked Oatmeal – This recipe is an old favorite. Perfect for using up a few bananas that are heading into banana bread territory. We like it with a little coconut milk on top.

Lunch:
Slow Cooker Cabbage Soup – New Recipe! Tastes like a cabbage roll without all that work. The recipe says it yields 12 servings. Um. Maybe if you’re feeding tiny people, or consider a cup of soup a serving? This makes 8 nice bowls of soup.

Dinner:

Creamy Roasted Cauliflower Soup – New Recipe! – Very likely the most monochromatic meal we’ve ever had, but tasty nonetheless. We’re having this with Brazilian cheese bread on the side.

Mediterranean Chicken with Sun-dried Tomatoes, Artichokes and Capers – New Recipe! UPDATE: This meal was not only visually unappealing, it had a sharp acidity which neither of us enjoyed. And we don’t shy away from acidity around here.

Pickety Bits – Unfamiliar? It’s a charcuterie board, a grazing board, or whatever the trendy name for it is today. I prefer ‘pickety bits’. Essentially, you just arrange your favorite snacks on a serving board or platter and call it dinner. My kind of cooking. This is best made for a low-key evening; great for game night.

Turkey Herb Stuffing Style Riced Cauliflower – This isn’t a new recipe, I just forgot to take pictures of it! We’ll throw some turkey cutlets in the crock pot to serve with this delicious side.

Rinse and repeat (we never tire of this).

Chocolate Chip Chickpea Blondies – Here’s a fun fact about Mr. Arthurized Home: He hates chickpeas. But he LOVES these little babies. We like them with these chocolate chips.
