Real Food Menu for Week of 3.29.2021

Saturday I started the long overdue task of painting the porch floor. With about 12 hours of rain in the forecast, I was racing against the weather. We chose a deep, moody blue that looked for all the world like navy. In the store, at least. At home, it looked like “Oh hey, come on in. Welcome to daycare!”

(Those little brown seeds are from the cedar tree next to the porch. They. Are. Everywhere.)

Once the torrential rain ended, I went back to the store to have the paint retinted. The ladies at the paint counter explained that it’s easier to go darker than lighter, so that’s what we did, adding green and a touch of black to that awful crayon blue. In the afternoon the wind picked up and blew seeds and blossoms off the trees and onto the porch. Mark was constantly sweeping ahead of my paint roller.

The paint is wet in this picture; it dries a little darker. I’m much happier with the result. And yes, that orange sock is mine. I left my shoes on the sidewalk so I could paint my way off the porch and go inside through the back door.

Snacks: Bananas, apples, popcorn and since we’re in Blue Ridge training season, Larabars.

Treat: The strawberries in the grocery store are looking tempting this week. We like to dip them in Lily’s dark chocolate. I add about a teaspoon of coconut oil to 1/2 cup chocolate chips while melting them in a double boiler. If you don’t have a double boiler, simply boil about an inch of water in a saucepan underneath a tempered glass bowl. Make sure that the boiling water does not touch the bowl above. Dip the strawberries and sprinkle with unsweetened coconut if desired.

Real Food Menu for Week of 7.20.2020

When we bought our house 17 years ago, we had nine cherry trees on our land. We met our neighbor, Granny Iris when she came over to ask permission to pick some cherries. She said it was an annual tradition with the prior owners. She and her late husband would back their truck up under the trees and stand in the bed to pick cherries. Because there is a ten acre field between our properties, I asked how she knew the cherries were ripe. She replied “I wait for the birds to start dropping cherry pits in my driveway”. LOL!

Anyway, it’s cherry season in Virginia and I’m happy to sample a new carrot cherry salad recipe this week:

UPDATE: I found the salad needs double the tahini and lemon juice. It was a little dry as leftovers.

I found a maroon and orange salad for all you Hokie fans! Now I just need one in navy and orange. Ha ha! This one is a split decision, as Mark doesn’t care for tahini. He said “I love the carrots and the cherries.” Pretty sure he was just being polite. Check it out and tell me what you think.

Meal Prep for Week of 8.25.2019

The garden produce is slowing down a little, but we’re still up to our eyeballs in fresh herbs. The herb garden has become my happy place. (Well, in addition to Sunset Beach, the greenway, any ol’ clearance rack and, and, and…!) I absolutely love strolling out there to snip something fresh to add to our meals. I’ve got four new recipes for you this week, including a few vegetarian options:

Breakfast:
Keto Coconut Porridge – New Recipe! This porridge has an almost savory, mild, coconut flavor; which we enjoy. It’s quick and easy to prepare. However, we’re pounding through one can of coconut milk per day, so that adds up over the course of a week. We’ll likely reserve this one for occasional breakfasts going forward.
Recipes from Diet Doctor can be scaled to the number of servings needed. Don’t scale the salt in this recipe. Ask me how I know that.

Lunch:
Turkey, Bacon and Swiss on a Lettuce Bun – Slice “cheeks” from a head of iceberg lettuce to make the bun. I like my sandwich with spicy dijon mustard.

Oh well, I happen to love parsley and don’t think a half cup is too much for this recipe. I also love garlic, and this made the house smell like a pizzeria while it was baking. Broiling it for a few minutes with a little extra parmesan on top is always a good idea.

Cumulus Spiced Eggs – Super quick dinner! You can have this meal on the table in twenty minutes, start to finish. The eggs are the start of this show, so I recommend pastured eggs if available.

Real Food Meal Prep for Week of 4.14.19

My husband decided that his first full marathon should be America’s toughest road race, the Blue Ridge Marathon with its 7,430 feet of elevation gain/loss. I’m very proud to say that he successfully completed it, so we’re taking it easy on meal prep today. We’ve planned a few tried and true meals this week.

Breakfast:
Berry Smoothies – Frozen berries (we like strawberries and blueberries), coconut milk, a banana for sweetness, a small handful of baby spinach and/or a half an avocado. Add ice cubes if needed and blend. If you like a sweeter smoothie, add honey to taste.

Lunch:
Chicken Pineapple Curry – This is an easy favorite that we’ve made for several years now. It’s creamy and mild, but you could certainly add some heat if you like. Use one can of coconut milk if you prefer a thicker sauce. We usually serve this over cauliflower rice, or brown rice.

Dinner:
Bowl of Doom – Don’t let the name deter you, there is nothing ominous about this breakfast hash. Simple and satisfying, this recipe feeds two and you can arm-wrestle over the leftovers for lunch the next day. Or fry a couple more eggs, add a veggie side and you’ve got a nice dinner for four. I give the sweet potatoes a 1/4″ dice; and use either ground beef or Jimmy Dean Natural sausage, depending on what’s on hand. If using sausage, I do not add salt.

Shepherd’s Pie
Beef and Vegetable Filling:
1 lb. ground beef
1 T. coconut oil
1/2 c. diced onions, optional
3 – 4 large carrots, peeled and diced
1/2 bag of frozen peas, thawed
12 oz. tomato sauce
1 t. garlic powder
salt and pepper to taste
1/2 c. cheddar cheese, grated – for topping

In a large pan over medium heat, thoroughly brown the ground beef. Remove beef from the pan and set aside. Melt the coconut oil, then saute the onion and carrots until tender. Add the beef, spices and tomato sauce. Mix well, then fold in the peas.

Mashed Potatoes – Two real food options:
Bob Evans Natural Mashed Potatoes are made with the same ingredients you would use at home; Potatoes, Milk, Butter and Salt.
OR
Homemade:
8 medium russet potatoes, peeled and cubed
1/2 c. plain sour cream
8 T. unsalted butter
1 c. milk
salt and pepper to taste
Add the cubed potatoes to a large pot of boiling water and cook until fork tender. Drain the water and return the potatoes to the pot. Add the sour cream, butter, milk, salt and pepper. Mash with a potato masher to desired consistency. Add more milk if needed.

Spread the beef mixture into a buttered 9″ x 9″ casserole dish, and spoon the mashed potatoes over to cover. Bake at 350° for an hour, covered. Uncover, sprinkle cheddar cheese on top and broil for two minutes or until cheese is bubbly. Serve.

This dish can be assembled up to a day ahead of time, refrigerated and baked just before serving.

Cumulus Spiced Eggs – Such a simple and tasty dinner! We tried this recipe for the first time last week; my husband loved it and suggested that we put it on the menu this week. This comes together so quickly! I had dinner on the table in under 20 minutes, start to finish. I used two teaspoons of coriander, a jar of organic marinara sauce and added a smidgen of crushed red pepper flakes. I knew that trying to sneak goat’s cheese past my husband would be a step too far, so I used shredded cheddar on top.
