Real Food Menu for Week of 8.24.2020

Well, here is the sum total of my weekend’s work. 😉 I ventured out into yesterday afternoon’s rain and harvested a metric crapton of basil, which turned into three batches of this pesto for the freezer. Mine is a little dark because I combined both genovese and purple basil. I ran out of walnuts so I threw a few pecans into the mix. It’s a tasty little number.

Here is our menu for the week:

Mark’s Breakfast:
Mediterranean Cauliflower Rice Quiche – We left the feta out and sprinkled black olives on half of the quiche. And seriously, how cute is this plate our nephew painted when he was four?!

Mark’s Lunch:
Greek Chicken and Rice Bowls – One word: Yum! Great for meal prep, because all of the ingredients keep well in the fridge up to four days.

Lemony Cucumber and Tomato Tuna Salad – A perennial favorite. I still haven’t converted Mark to Team Avocado, so we sub English cucumbers for the avocado.

Easy Grilled Chicken Thighs – New! Level up everyday chicken with this delicious marinade. We substituted low-sodium, gluten free tamari for the soy sauce.

Thai Veggie Noodle Salad – Double or triple the recipe if serving a crowd. Don’t save it for leftovers, it’s best eaten fresh!

Baked Teriyaki Salmon – New! This preservative free sauce tastes just like restaurant teriyaki. We used low sodium tamari and Bob’s Red Mill gluten free flour to thicken.

Snack:
Along with the usual watermelon, popcorn, apples, bananas and oranges, we’re snacking on black bean hummus with cucumber slices. I love Ina’s hummus and sometimes substitute black beans for the chickpeas in this recipe. Cucumber slices make low-calorie, low-carb ‘crackers’ for dips and spreads.

Treat:
Chocolate Dipped Strawberries – We’re keeping it simple this week with fresh strawberries dipped in melted Lily’s dark chocolate chips. I add about a teaspoon of coconut oil to 1/2 cup chocolate chips while melting them in a double boiler. If you don’t have a double boiler, simply boil about an inch of water in a saucepan underneath a tempered glass bowl. Make sure that the boiling water does not touch the bowl above. Dip the strawberries and sprinkle with unsweetened coconut if desired.

Real Food Menu for Week of 2.10.2020

We had a busy little weekend with Night to Shine on Friday, followed by a six mile jaunt to the star on Mill Mountain Saturday morning. Saturday afternoon found us puttering around the house, and we wrapped up Arthur Birthday Season on Sunday with a nice lunch for our nephew.

Have you been to a Weaver Street Market? My boss recently discovered this gem in his travels and has been raving about their food bar. He’s now planning his trips so he can eat there. I’ve not visited one yet, but the recipes on their blog caught my eye, so we’re sampling a couple of them this week.

Breakfast:
BLT Breakfast Bake – While we’re not doing Paleo or Whole 30, this protein-packed dish is a great way to start the day! We’ll use half a pack of bacon in this recipe and the rest in the broccoli salad. We buy Hormel Natural or the Never Any uncured hickory bacon from Aldi.

Lunch:
Paleo Egg Roll In A Bowl – Nope, still not Paleo, but we love this real food twist on an egg roll. Prepare as is for vegetarian, or add a protein. We like the chicken option. Fresh dianthus blooms are optional!

Dinner:

Apple Cider Glazed Salmon – New! I don’t have Lusty Monk mustard on hand (although that name is hilarious!) so I’m using another spicy, stone ground mustard.

Creamy Coconut Lentil Curry – Yum! We add 1/2 tsp. of garam masala and 1/2 tsp. of curry powder, for a little extra flavor.

Lean Bean Meatballs with Greens n’ Rice – New! This dinner was a pleasant surprise. We made it using ground turkey instead of ground chicken thighs. I thought Mark wouldn’t care for it because he’s not a fan of spice, and the stone ground mustard is pretty hot. He loved it, and rated it a “10”! This meal is going into the regular dinner rotation.

Best Ever Broccoli Salad – I wasn’t sure how I would feel about a warm broccoli salad, but this recipe has become a cool weather favorite.

Snacks:
We’re having carrots and cukes with hummus (Aldi’s organic red pepper hummus is a fav), popcorn, grapes, and bananas.

Treat:
Chocolate Dipped Strawberries – We’ll have them on Valentine’s Day with our heart pizza. I like to decorate these using unsweetened, shredded coconut.

Real Food Menu for Week of 9.8.2019

Birthday Month has officially started! Mark and I both have September birthdays so we decided to celebrate all month long. Actually, we kicked off the partying in August (why limit it to one month?!) with a family lunch at Wildflour, and then continued the celebration last weekend in Pittsburgh. My sister made beautiful and delicious keto Death by Chocolate Cake and Coconut Cream Custards.

Breakfast:
Almond Flour Biscuit with Tomato – We’re still working those garden tomatoes and this is one of the simplest ways to enjoy them!
