Real Food Menu for Week of 7.13.2020

Since I’ve been on the Mediterranean diet, I’ve been in a bit of a fruit and nuts rut where snacks are concerned. I’ve recently found za’atar spice, and this one is a game-changer! I want to sprinkle this Middle Eastern seasoning onto nearly everything. Delicious on fish and chicken, it would be equally at home in place of Italian seasoning in salads and savory side dishes. (Say that three times fast!) I found za’atar locally at Kroger. See how we’re seasoning and snacking with it below.

Breakfast:
PBJ Overnight Oats – An old standby, and perfect for hot (already!) summer mornings.

Lunch:
Convert Kale Salad – We mixed up a double batch of this favorite salad for Mark to enjoy at lunch. It’s been so hot here that a cool plate of salad and a sliver of watermelon are all he really wants mid-day.

Dinner:

Marinated Three Bean Salad – New Recipe! – Here’s a Mediterranean twist on the traditional three bean salad. If the dressing is too tart for your liking, add a touch of honey. Just a teaspoon should do.

Middle Eastern Chicken Kebabs – Oh my word! Sprinkle some za’atar on these babies! When we’re cooking for a crowd, we use bamboo skewers, but when it’s just the two of us, we use stainless.

Grilled Peach Quinoa Salad with Homemade Balsamic Vinaigrette – New Recipe! The unusual flavor combos in this dish surprised us. I never would have paired peaches and kalamata olives together, but it works beautifully! Make a little extra dressing; it might just become a new favorite.

Bowl of Doom – The name sounds ominous, but this dish is filled with all good things. Use whatever ground meat you have on hand, or go meatless for a vegetarian option. Packed with protein, it’s delicious any time of the day.

Snacks:
Watermelon, Cucumber slices with hummus, Za’atar Snack – New! Take dipping bread in olive oil one step further with this flavorful snack. There’s no real recipe here, just dip crusty bread in good olive oil and then lightly dip in za’atar spice and eat.

Treat:
Avocado, Coconut and Sweet Potato Brownies – New Recipe – This one is a bit of a swing and a miss, but I thought I would share it anyway. While the flavor was good, the texture was just a bit…off. These remind me of that time I made a batch of fudge that just never quite set up. YMMV.

Real Food Menu for Week of 3.16.2020

With our cupboards looking a little Mother Hubbardy, we went to Kroger on Saturday for our weekly rations. While I wouldn’t say that social distancing was in full effect, shoppers seemed focused on the task at hand and the mood was a little somber.

Large sections of the store were wiped out, with signs all around stating limits on key items. Despite the signs, a man in the checkout line in front of us took the opportunity to berate the cashier telling him he couldn’t buy that cart full of toilet paper (I don’t understand this obsession!). He swore he didn’t see those enormous signs posted everywhere.

At Fresh Market, the manager thanked me for not being angry when she checked their stock and reported they were out of tuna. When she followed instructions from corporate to limit the number of people touching the coffee dispensers by pulling the free sample size cups, customers yelled at her.

With friends and loved ones who are in the high-risk categories, I certainly understand the fear of this pandemic. But I think with a little extra patience, kindness and common sense, we’ll get through this COVID-19 mess just fine.

Now onto this week’s menu:

Breakfast:
BLT Breakfast Bake – Mr. Arthur is happy to welcome bacon back to the breakfast table.

Lunch:
Hearty Stuffed Bell Pepper Soup – A year after finding this recipe, we still love it. We double the recipe to make enough for our lunches and a little extra for Pa Kettle’s freezer.

Dinner:

Bowl of Doom – We haven’t had this favorite in awhile. I’m lightening it up a little with ground turkey.

Green Curry of Broccoli Soup – She’s not gonna win a beauty contest any time soon, but this little number is creamy and delicious! Top with finely shredded parmesan and toasted pepitas.

Fiesta Honey and Lime Kale Salad – New Recipe! We prepped this one in the morning to give the dressing time to soften the kale. This is a nice salad for meal prep as it keeps for a few days in the fridge.

Chicken and Green Bean Stir Fry – New Recipe! This was our first time trying coconut aminos, we normally substitute gluten-free tamari in Asian inspired dishes. For extra flavor when serving, sprinkle a little over top. Mr. Arthurized Home wants you to reduce the cayenne by half, while I think this recipe has just the right amount of heat. You be the judge!

Snack:
Superhero Muffins – If you haven’t tried these yet, I highly recommend them! They really are a meal in a muffin. Because they freeze beautifully, we’re making a double batch and filling the freezer.

Treat:
Stupidly Easy Banana Bread With only six ingredients and no processed sugar, this lightly sweet loaf is great for breakfast as well as a treat.

If you need a lil’ sweetness on your banana bread, try this maple cream cheese spread. So good, it’s dangerous! I decrease the recipe by half and add a teaspoon of cinnamon and a pinch of nutmeg.

For dairy-free, whip some chilled coconut cream. If the mixture is too thick to spread easily, add in a tablespoon or two of milk or coconut milk.

Real Food Meal Prep for Week of 4.14.19

My husband decided that his first full marathon should be America’s toughest road race, the Blue Ridge Marathon with its 7,430 feet of elevation gain/loss. I’m very proud to say that he successfully completed it, so we’re taking it easy on meal prep today. We’ve planned a few tried and true meals this week.

Breakfast:
Berry Smoothies – Frozen berries (we like strawberries and blueberries), coconut milk, a banana for sweetness, a small handful of baby spinach and/or a half an avocado. Add ice cubes if needed and blend. If you like a sweeter smoothie, add honey to taste.

Lunch:
Chicken Pineapple Curry – This is an easy favorite that we’ve made for several years now. It’s creamy and mild, but you could certainly add some heat if you like. Use one can of coconut milk if you prefer a thicker sauce. We usually serve this over cauliflower rice, or brown rice.

Dinner:
Bowl of Doom – Don’t let the name deter you, there is nothing ominous about this breakfast hash. Simple and satisfying, this recipe feeds two and you can arm-wrestle over the leftovers for lunch the next day. Or fry a couple more eggs, add a veggie side and you’ve got a nice dinner for four. I give the sweet potatoes a 1/4″ dice; and use either ground beef or Jimmy Dean Natural sausage, depending on what’s on hand. If using sausage, I do not add salt.

Shepherd’s Pie
Beef and Vegetable Filling:
1 lb. ground beef
1 T. coconut oil
1/2 c. diced onions, optional
3 – 4 large carrots, peeled and diced
1/2 bag of frozen peas, thawed
12 oz. tomato sauce
1 t. garlic powder
salt and pepper to taste
1/2 c. cheddar cheese, grated – for topping

In a large pan over medium heat, thoroughly brown the ground beef. Remove beef from the pan and set aside. Melt the coconut oil, then saute the onion and carrots until tender. Add the beef, spices and tomato sauce. Mix well, then fold in the peas.

Mashed Potatoes – Two real food options:
Bob Evans Natural Mashed Potatoes are made with the same ingredients you would use at home; Potatoes, Milk, Butter and Salt.
OR
Homemade:
8 medium russet potatoes, peeled and cubed
1/2 c. plain sour cream
8 T. unsalted butter
1 c. milk
salt and pepper to taste
Add the cubed potatoes to a large pot of boiling water and cook until fork tender. Drain the water and return the potatoes to the pot. Add the sour cream, butter, milk, salt and pepper. Mash with a potato masher to desired consistency. Add more milk if needed.

Spread the beef mixture into a buttered 9″ x 9″ casserole dish, and spoon the mashed potatoes over to cover. Bake at 350° for an hour, covered. Uncover, sprinkle cheddar cheese on top and broil for two minutes or until cheese is bubbly. Serve.

This dish can be assembled up to a day ahead of time, refrigerated and baked just before serving.

Cumulus Spiced Eggs – Such a simple and tasty dinner! We tried this recipe for the first time last week; my husband loved it and suggested that we put it on the menu this week. This comes together so quickly! I had dinner on the table in under 20 minutes, start to finish. I used two teaspoons of coriander, a jar of organic marinara sauce and added a smidgen of crushed red pepper flakes. I knew that trying to sneak goat’s cheese past my husband would be a step too far, so I used shredded cheddar on top.
