Real Food Menu for Week of 9.21.2020

As the temperature shifts to cooler days and nights (40° yesterday morning! Do we live at the Artic Circle now?!), we’re transitioning from all the salads of summer to warm comfort-food dinners.

Here’s what’s heating up the kitchen this week:

Mark’s Breakfast:
Blueberry and Raspberry Baked Oatmeal – An old favorite. Use your favorite berries or whatever you have on hand. You really can’t go wrong with this one. Frozen berries work just as well as fresh.

Mark’s Lunch:
Greek Meatball Mezze Bowls – New Recipe! Reminiscent of my favorite dinner at Zoe’s Kitchen, this dish is a little time consuming, but so very tasty. If not using packaged quinoa, cook it while the meatballs are baking. Meal prep once, and have lunch all week long.

Dinner:

Middle Eastern Chicken and Chickpea Stew – New Recipe! This savory and hearty stew is delicious as is, or serve over brown or cauliflower rice.

Baked Garlic Parmesan Salmon – Not the prettiest dish, but so tasty! I bought several packs of parmesan for making pesto. When I went to harvest the basil, I discovered it covered with black spots. Maybe from our recent rains? This dish is another good way to use up some of that excess parm.

Forty-Clove Chicken Filice – Take some help from the grocery store on this one, and buy a package of peeled garlic cloves. Ain’t nobody got time for peeling forty cloves of garlic! Don’t be afraid of all that garlic; baking just makes them sweeter. You won’t repel vampires.

Southwestern Squash Casserole – Delish, with just a little kick! We use Bob’s Red Mill g-free 1 to 1 baking flour to thicken.

Snack:
Fig and Ricotta Toast – New Recipe! I found fresh figs at Earth Fare about the same time I stumbled across this recipe. This hearty snack would make a simple breakfast or lunch. Look for ricotta with just three ingredients: milk, vinegar and salt. I use Rio Briati brand. Try it without that extra sprinkle of salt on top.

Keto No Bake Cookies – These little goodies are similar in flavor to preacher cookies, minus that wallop of sugar. I use monkfruit to sweeten.

Real Food Menu for Week of 6.8.2020

Have you ever upended your entire house for no good reason? We did just that this weekend in a fit of decluttering. We moved furniture around in every room of our home except for the kitchen and bath. It’s well worth it, in the extra space and functionality that we gained, but man, I’m whooped.

Here is this week’s menu:

Breakfast:
Apple Pie Overnight Oats – Mark is loving the breakfast oats. We use Aldi’s unsweetened natural applesauce in this recipe.

Lunch:
Paleo Broccoli Salad with Bacon – New! Love that this one has *just enough* mayo without being gloppy. The apple cider vinegar adds a little tang to that dressing.

Dinner:

Chicken Sausage, Kale and Red Potato Soup – Big ol’ bowl of comfort food for a cool evening later in the week.

Pizza Baked Chicken – Add whatever pizza toppings you like to this dish. Mr. Arthur is a pepperoni guy, so that’s what we make.

Cauliflower Rice Tabbouleh – One dish I really miss since going gluten-free is tabbouleh. This recipe scratches that g-free itch. If I’m pressed for time, I use frozen, riced cauliflower. Since we don’t have a microwave, I saute it on the stove top for a few minutes, ’til softened.

Snacks: Watermelon, bananas, apples and peanut butter, popcorn.

Treat:
Ripe Strawberries and Freshly Whipped Cream – Sometimes simple is best! A sprinkle of Lily’s chocolate chips doesn’t hurt anything.

Real Food Menu for Week of 9.22.2019

I know what you’re thinking. “Wow! That’s a load of chicken for one week.” Yup. Mostly because I peered into the freezer and found six(!) packages of frozen chicken. So, here we go, Chicken Week. Let’s do this thang!

Breakfast:
Almond Flour Pancakes with Chocolate Chips – These are mini chocolate chips and we use them sparingly. One bag goes a long way when you’re using a few tablespoons per recipe.

Lunch:
Keto Taco Salads – I don’t have a recipe for the taco meat, I just cook it thoroughly with a diced onion and loads of taco seasoning. I packaged the taco meat into ramekins for reheating in the toaster oven at work. To assemble the bowls add toppings to a bed of lettuce. I used this taco seasoning recipe:

Keto Sweet Chili Chicken Thighs – New Recipe! I reduced the heat and the sweetener here: 1/3 c. of monkfruit sweetener and medium heat on the stove top. Yes, this looks burned, but I promise it’s not!

Snacks:
Chili Lime Cucumber – I know this sounds weird, but this snack is so refreshing. Simply slice an English cucumber into rounds, season liberally with chili powder and squeeze fresh lime juice over it. A sprinkle of sea salt is optional.

Dessert:
Keto Lava Cake – New Recipe! So rich and fudgey! Mark has wanted to try baking these for some time now. Lava cakes are perfect for dinner guests because you can prepare the batter ahead of time, refrigerate it in the ramekins and just pop them in the oven to bake, about 20 minutes before serving.
