Real Food Menu for Week of 5.25.2020
A friend pointed out to me that you really can’t have Memorial Day weekend without a big ol’ cheeseburger, so we’re taking that under advisement and firing up the grill today. My gluten-free, real food, Mediterranean Diet version will be turkey cheeseburgers on lettuce buns with a side of grilled corn on the cob. To make the lettuce buns, slice ‘cheeks’ off a head of iceberg lettuce. Pro tip: Slice them thinner than you think you should; they don’t compress like a good ol’ conventional hamburger bun.
For my American readers, take a moment today to reflect on the sacrifices of those who have lost their lives for the freedoms that we enjoy.

Breakfast:
Breakfast Egg Muffins with Ham – I use spinach, roasted red pepper strips (jarred, I’m not a maniac!) and mozzarella cheese.

Lunch:
15 Minute Skillet Chicken Fajitas – New Recipe! I like to prep brown rice on the weekend to have on hand for quick dinners like this one. If you’re not a lover of spicy foods, I recommend starting with 1/2 tsp. and increase the cayenne to your liking from there. Two teaspoons of cayenne might just burn your taste buds off entirely.

Turkey Burgers on Lettuce Buns – Classic warm weather holiday weekend food…with a g-free, low carb twist. No recipe to follow, just combine ground turkey with a little salt and pepper and grill to perfection. Serve on lettuce buns with your favorite toppings.

Instant Pot Chicken Tikka Masala – New Recipe! – Since I haven’t yet joined the cult of Instant Pot, I’m glad this recipe has stove top directions for us dinosaurs. This dish is not too spicy, but you can kick it up a notch if you like.

Lemony Avocado and Tomato Tuna Salad – Mark’s not on Team Avocado, so we sub in English cucumbers for that. It’s every bit as delightful.

One Pan Honey Garlic Sausage and Veggies – Yum! We use the Never Any! brand of nitrate free Italian chicken sausage from Aldi. In other news, Mark tried asparagus for the first time in a long time, and didn’t hate it! Which is a really great thing because we just planted two massive rows of it in the garden.

Snacks:
We’re mostly noshing on fruit these days; watermelons are plentiful and cheap. Also bananas, apples and berries. And popcorn. Always popcorn.
Paleo Lemon Blueberry Scones – New Recipe! These are so simple and delicious. The brightness of the lemon plays Best Supporting Actress to those sweet blueberries. Great combo. As with most preservative-free, real food treats, store these babies in the fridge or freezer.
