Real Food Menu for Week of 2.24.2020

Now that we’re in the thick of Blue Ridge Training Season, my week nights are a little busier than normal. Which means that simple meals we can throw together quickly are the order of the day. The breakfast cookies are a healthy grab-and-go-because-you-hit-snooze-one-too-many-times option. Crock Pot Italian Chicken Soup practically makes itself! Dump everything into the crock pot, cook on low all day, shred the chicken and you’re done. For a sweet treat, the lemon fruit dip whips up in minutes; serve with your favorite fruits for dipping, or drizzle over a fruit salad. Simple and flavorful!

Breakfast:

Lunch:
Crock Pot Italian Chicken Soup – This soup is soup-er (heh) customizable. Load it up with your favorite vegetables! When using broccoli, add it in the final hour of cooking so it doesn’t get mushy.

Orange and Cashew Chicken Stir Fry – New Recipe! Every bit as tasty as the restaurant version! We substitute gluten-free tamari for the soy sauce, brown rice for the jasmine and cayenne for the Korean chili flakes.

Snack:
Roasted Red Pepper Hummus – New Recipe! I usually buy Aldi’s organic version, but I decided to try making it at home using jarred red peppers. Guess what? It’s fantastic! I added three cloves of garlic, but I would go with two next time. It overwhelmed the red peppers just slightly.
