Real Food Menu for Week of 1.19.2020

Have I ever told you about the time we threw an entire batch of tzatziki out? I was following a recipe by a very famous cook that called for “2 tablespoons plus 1 teaspoon kosher salt”. Maybe she meant to say three teaspoons divided? There was nothing we could do to save that salty mess!

Anywho. We’ll try the tzatziki again because apparently, we’re off to the sunny Mediterranean this week, if only in our imaginations!

Pumpkin Spice Overnight Oats – Back by popular demand! No really, Hubby demanded. Okay, so he asked politely. Whatevs.

Hearty Stuffed Bell Pepper Soup – A warm bowl of this soup makes a satisfying lunch.

Mediterranean Salmon and Zucchini Noodles

15 Minute Cowboy Butter Chicken and Zucchini Noodles

Mediterranean Pasta Salad – New Recipe! This makes 6-8 hearty portions; or fix this vat o’ vegetarian goodness for your next party.

About as clean a pasta as I could find with only one ingredient; red lentils

Italian Lentil Soup – New Recipe! I’m subbing kale for the collard greens.

Snacks: Fresh veggies with Mark’s favorite tzatziki sauce.

Baked Cinnamon Apples – New Recipe! I used slightly less maple syrup than the recipe called for. This baked perfectly in a cast iron skillet.
